Fun Hoi An Cooking Class and Farming in Tra Que Village

We decided to take a Hoi An cooking class while exploring the local food in Central Vietnam to better understand Vietnamese cuisine.
This Hoi An cooking class with Tra Que Minty Garden combined a farming tour in Tra Que Village located a couple miles from Hoi An.
And a fun cooking experience with Chef Danny in the kitchen.
On the first part of this Hoi An cooking class video, you can discover the Tra Que village and how we learned to plant spinach using seaweed as a fertilizer.
Then we moved to Chef Danny’s kitchen where we made:
Fish in banana leaf - Char grilled red snapper with tumeric in banana leaf
Beef Bo La Lot - grilled beef wrapped in betel leaves
Tam Huu - Three friends rolls with prawns, pork, coriander, mint

Vietnamese Countryside Tour & Vietnamese Meal at Tra Que Herb Village Water Wheel Hoi An, Vietnam
We've thoroughly enjoyed spending most of our days exploring Ancient Hoi An; however, when we had a chance to bike out to the Vietnamese countryside to visit Tra Que Village for dinner at restaurant noted for its water wheel, we couldn't pass on the opportunity. One of the main highlights of being based in Hoi An are all of the nearby attractions and places worth visiting, such as farmland, small communities and several beaches. Tra Que is a quaint little village situated only 2 kilometers from the Ancient part of Hoi An city. It is famed for producing rich soil praised for its abilities to grow fresh herbs. Many tourists end up staying overnight in this village to experience the lifestyle of a rural farming community.

Given that it was a decent distance from our guest house, we decided to hop on our bicycles and head over to the community before sunset. As we pedaled along, we noticed the transition from commercial areas to farmland was very abrupt and we marveled at the Vietnamese farmers wearing conical hats tending their crops. Finally, after getting lost a few times, we pulled up to Tra Que Herb Village Water Wheel restaurant.
Walking down a path that was in between crops we eventually approached the large water wheel noticing its rustic charms.
Before we sat down to eat traditional Vietnamese cuisine we had the opportunity to actually operate the large water wheel by climbing up a set of stairs, sitting down and pedaling with our feet. It was such a thrill getting to actually set the behemoth rustic wheel in motion.
The meal itself featured some of our favorite dishes including Vietnamese country pancakes and papaya salad along with a new dish we'd never tried before - three friends.
The service was excellent as our hosts we both gracious and ever welcoming. We kicked ourselves for not coming here sooner because we certainly would have frequented this restaurant on more than one occasion.
The meal itself was a knockout; it was literally the best food we've had since arriving in Vietnam.
What made the dishes so appealing were the fresh ingredients being used from the farm along with excellent cooking technique which included very scant use of cooking oil.
Every bite was packed with an explosion of flavors and we appreciated that all of the ingredients were fresh from the organic garden. This is how food ought to prepared everywhere.
After finishing the generous portions offered to us, we bicycled back into Hoi An while experiencing a gorgeous sunset. Overall, this was an experience we'll never forget and if we're back in Hoi An again we plan on making it a part of our daily routine. Thus, we highly recommend you check out the countryside area of Tra Que:

COOKING CLASS - TRA QUE HERB VILLAGE
Tra que village is famous for very fresh vegetables and vietnamese herbs.Most of tropical vegetables cam grow well at Tra Que and their flavor and taste are so distinctive that they can never be mistaken for products of the same kind from other loacalities.You will have a chance to learn how to make tasty traditional dishes from vegetable.
1. Program tour :
08:00 AM local guide pick up you at the hotel's lobby. Take a bike to the downtown, stop by Hoi An's colorful central market. Here you will have the opportunity to interact with the local sellers and learn about the ingredients to be used in the cooking lesson later. So make sure your camera is handy.
10:00 bike to Tra Que vegetable village. Welcome drink for rest and walk through the vegetable gardens where local farmers work on their fields using the traditional methods of hundreds of years ago, no electrical machinery here.
11:00 Work together with the chef. Learn the traditional ways of preparing and cooking Vietnamese food. After the lesson, enjoy what you have cooked.

Tra Que is a small village located 2 km north-east of Hoi An Ancient Town. The village has existed for at least 300 years. It is located between Tra Que algae pond and the De Vong River, with special conditions producing rich soil, and ideal for growing fresh herbs.
Tra Que is not just a brand name for the village’s fragrant and high quality herbs, but it is also an attractive destination for tourists staying in Hoi An. The village is named after the sweet scented herbs that are used in the everyday meals of Hoi An people, such as mint, coriander and basil. A tour of the organic vegetable and herb gardens can include some time working in the fields if you like (wearing local farmer's clothes!), watering and hoeing vegetable beds, or merely enjoying the peace and tranquility and marvelling at the glorious sunsets.

Hoian on a squeaky bike, having a conversation with my 3 year old little messyfish who is in a bike seat in the back. You can also hear the big tour group and see them in the herb gardens. I love this area of Hoi An. Its the Tre Que Herb Village. Its mostly very peaceful and seven. I even looked for a place to rent there so I could live right in amongst it.

This road is a small narrow dirt track between Le Thanh Tong and Hai Ba Trung. Its a magical way to ride to the Tre Que herb garden village. Its quiet, and Ive seen water birds, snails and buffalo, along with farmers and the occasional motorbike.

#Vietnamese #cuisine encompasses the #foods and beverages of #Vietnam, and features a combination of five fundamental tastes (Vietnamese: ngũ vị) in the overall meal. Each Vietnamese dish has a distinctive flavor which reflects one or more of these elements. Common ingredients include fish sauce, shrimp paste, soy sauce, rice, fresh herbs, fruit and vegetables. Vietnamese recipes use lemongrass, ginger, mint, Vietnamese mint, long coriander, Saigon cinnamon, bird's eye chili, lime, and Thai basil leaves. Traditional Vietnamese cooking is greatly admired for its fresh ingredients, minimal use of dairy and oil, complementary textures, and reliance on herbs and vegetables. With the balance between fresh herbs and meats and a selective use of spices to reach a fine taste, Vietnamese food is considered one of the healthiest cuisines worldwide.
In the Nguyễn dynasty, the 50 best chefs all over the kingdom were selected for the Thượng Thiện board to serve the king. There are three meals per day, 12 dishes at breakfast and 66 dishes for lunch and dinner (including 50 main dishes and 16 sweets). An essential dish is bird's nest soup (tổ yến). Others are: shark fin (vi cá), abalone (bào ngư), deer's tendon (gân nai), bears' hands (tay gấu), rhinoceros' skin (da tê giác), etc. Water must come from Hàm Long well, Báo Quốc pagoda, Cam Lồ well near Thúy Vân mountain's bottom or from the source of the Hương River. Rice is the de variety from the An Cựu imperial rice field. Phước Tích clay pots for cooking rice were used one time only. Except for Thượng Thiện board members, and of course the cooks, no one was allowed to have any contact with cooked dishes. The dishes then are given to eunuchs before passing to the king's wives, and at last, being offered to the king. The king enjoyed meals (ngự thiện) alone in comfortable, music-filled space.

Phở - A noodle soup with a rich, clear broth made from a long boiling of meat and spices. There are many varieties of phở made with different meats (most commonly beef or chicken) along with beef meatballs. Phở is typically served in bowls with spring onion, (in phở tai) slices of semi-cooked beef (to be cooked by the boiling hot broth), and broth. In the South, vegetables and various herbs are also added.
Bánh mì - Vietnamese baguette or French bread traditionally with pâté, Vietnamese mayonnaise, cold cuts, jalapeños, pickled daikon, pickled carrot, and cucumber slices. While traditional cold cuts include ham, head cheese, and Vietnamese bologna, it is common to see varieties of stuffing such as eggs, canned sardines, shredded pork, fried tofu, and grilled meats. Sandwiches are often garnished with coriander leaves and black pepper.
Cà phê sữa đá - Strong iced coffee, most often served with sweetened condensed milk at the bottom of the cup to be stirred in. The beverage is very popular among the Vietnamese.
Gỏi cuốn - Also known as Vietnamese fresh rolls, or summer rolls. They are rice paper rolls that often include shrimp, herbs, pork, rice vermicelli and other ingredients wrapped up and dipped in nước chấm or peanut sauce. Spring rolls almost constitute an entire category of Vietnamese foods, as there are numerous different kinds of spring rolls with different ingredients in them.
Chả giò - A kind of spring roll (sometimes referred to as egg roll) -- deep-fried flour rolls filled with pork, yam, crab, shrimp, rice vermicelli, mushrooms (wood ear variety) and other ingredients. The spring roll goes by many names - as many people actually use (falsely) the word spring roll while referring to the fresh transparent rice paper rolls (discussed below as Summer Rolls), where the rice paper is dipped into water to soften and then rolled up with various ingredients. Traditionally these rolls are made with a rice paper wrapper but in recent years Vietnamese chefs outside of Vietnam have changed the recipe to use a wheat-flour-based wrapper.
Cơm tấm - In general, grilled pork (either ribs or shredded) plus bì (thinly shredded pork mixed with cooked and thinly shredded pork skin plus fried ground rice) over com tam (broken rice in Vietnamese) and sweet and sour fish sauce. Other types of meat, prepared in various ways, may be served with the broken rice. One can have barbecued beef, pork, or chicken served with the broken rice. The rice and meat are served with various greens and pickled vegetables, along with a prawn paste cake (chả tôm), steamed egg (trứng hấp) and grilled prawns.
Bánh bèo - A central Vietnamese dish consisting of tiny round rice flour pancakes, each served in a similarly shaped dish. They are topped with minced shrimp and other ingredients such as chives, fried shallots, and pork rinds. Eaten with nước chấm.
Bánh xèo - A type of crêpe made out of rice flour with turmeric, shrimps with shells on, slivers of fatty pork, sliced onions, and sometimes button mushrooms, fried in one or two teaspoons of oil, usually coconut oil, which is the most popular oil used in Vietnam. It is eaten with lettuce and various local herbs and dipped in Nước chấm or sweet fermented peanut butter sauce. Rice papers are sometimes used as wrappers to contain banh xeo and the accompanying vegetables.
Bún bò Huế - Spicy beef noodle soup originated from the royal city of Huế in Central Vietnam. Beef bones, fermented shrimp paste, lemongrass, and driedchilies give the broth its distinctive flavors. Often served with mint leaves, bean sprouts, and lime wedges.
