Eric, who was born and raised in Michigan, learned about farming from his Ukrainian grandfather, Dedushka Shevchenko, who raised rabbits for food and taught his grandson the best diet to feed rabbits for the best-tasting meat and how to properly clean and age rabbit meat the old-fashioned way, without the benefit of a freezer or refrigerator. His love and care for the animals in his charge and passion for growing and eating other fresh, mostly homegrown foods, were passed down to Eric, who grew up with a love for animals of all kinds.

THE LAST DAYS OF THE ADVENTURE | Kraków, Poland | Travel Vlog
Towards the end of our 3+ week trip of intensive travel I ran out of both energy and memory card space, but here is what I filmed of our adventures in Kraków, Poland. We ate pierogi, visited the Schindler'S Factory museum and wandered the streets of the beautiful old town.
Ps: This was filmed this summer - I am currently in Russia for a wintery trip and University gathering these next few days!

Along with Easter, Christmas is one of the most important periods on the Christian calendar, and is often closely connected to other holidays at this time of year, such as Advent, the Feast of the Immaculate Conception, St Nicholas Day, St. Stephen's Day, New Year's, and the Feast of the Epiphany.

HOW TO MAKE VEGAN PEROGIES
How to make vegan perogies!!
INGREDIENTS:
2 large white onions
2 large white potatoes
3 cups all-purpose flour
1 cup water
1/4 cup oil (olive or any neutral tasting oil)
1 cup of mixed greens (frozen, chopped)
1/4 cup soy milk
Nutritional yeast (2-5 tbsp)
Garlic powder (1 tbsp)
INSTRUCTIONS:
1. Chop up 1.5-2 large onions and put them in a pan with a lid. Add a bit of liquid (olive oil, vinegar, or water...I used olive oil) and cook on low heat for 1 hour, stirring every 10 mins or so.
2. Mix 3 cups of flour with 1 cup of water and 1/4 cup of olive oil, adding liquid slowly as you knead. Once you have a ball of dough, put it in a bowl and cover it with a tea towel to let it rest for 1 hour (while the onions cook).
3. In the meantime, chop up 2 white potatoes and put them in a pot of boiling water. Cook for 15-20 minutes until soft.
4. Strain potatoes and put them back in the pot. Mash them with 1/4 cup soy milk, then add nutritional yeast and garlic powder (you can use real garlic if you love garlicky stuff). Flavour it how you want!
5. Add mixed greens to the filling (optional). If you have frozen greens like I did, microwave them before adding. if you have fresh greens, just toss them in.
6. Add caramelized onions to the filling.
7. Make the pierogies! Add the filling to little dough circles.
8. Boil until they float to cook, or put in the freezer to eat later.
