I began my meat career in 2004 working part time at The University of Florida Meat Processing facility. My part time duties included cleaning the floors and washing the processing areas. I never knew what this would lead to. As I became more interested in the field, I continued to schedule my class work around the peak processing times at the facility. Working with two great people at the University of Florida broadened my knowledge of the meat field and they helped me in my endeavor to become a butcher. We would take animals all the way from slaughter to the retail case and the knowledge I gained from this experience helped me get to where I am today. I ended up completing a masters degree in meat science from the University of Florida and have been managing a small meat processing facility in South West Georgia for 2 years now. I am currently the manager of a small meat processing facility in South West Georgia. We are currently processing 100 Grass Fed Cattle per week and shipping beef from Miami Florida to Landover Maryland up the eastern Seaboard. I have been given the great opportunity to run the largest on farm processing facility in the United States. We raise our own cattle here in a humane and sustainable manner. We control the herd from birth to slaughter and are proud to say that our processing facility is a zero waste facility. We use an anerobic digester to turn the waste from the processing plant into organic fertilizer in which we apply back onto the land. Our farm is also the largest certified organic farm in the state of Ga, spanning over 1200 acres of land.
shop: Living in rural South West Georgia, butcher shops are hard to come by. I do however enjoy visiting a Whole Foods when I get a chance just to browse their meat case. I must also say that my favorite would have to be White Oak Pastures Grass Fed Beef right here in Bluffton GA.

One family, one farm, 150 years: A full circle from humane and sustainable farming, to industrialized and commoditized farming, and back again.
Will Harris runs White Oak Pastures, the Georgia farm his family has operated since 1866 (five generations). Under his leadership, the farm has returned to an environmentally sustainable and high animal welfare farming system.
After receiving an animal science degree from UGA, Harris returned home and began to implement a number of sustainable farming practices. Today his cattle, sheep, hogs, goats and poultry are rotated through White Oak Pastures in the Serengeti Plains rotational grazing model. The farm now utilizes solar panels and its beef, goat and lamb are grass-fed. White Oaks also holds the distinction of being the only farm in the U.S. to have both a red meat plant and poultry processing that have been approved by the USDA.

NRCS Chief Tours Georgia Farms
The State of Georgia played host to a special visitor recently, as the chief of the Natural Resources Conservation Service (NRCS), Matt Lohr, spent the day with USDA and NRCS employees. Lohr got to go on a farm tour where he saw everything from row crop operations to a dairy facility.
