Wigle Organic Rye Whiskey Review #121
scotchtestdummies.com
We make this traditional Pennsylvania Monongahela Rye Whiskey from local, organic grains that we mill on-site. We then distill in small batches in our traditional copper pot still to preserve the robust, spicy character of the rye grains. With this Whiskey, we work to restore the whiskey tradition to Western Pennsylvania, birthplace of American Rye Whiskey. Wigle was awarded the Best Craft Rye Whiskey in the US by the American Craft Spirits Association.
Each batch is barreled in small 10 and 15 gallon charred oak casks for over a year before it is hand bottled. No two batches are the same, as they each reflect the evolving terroir of Western Pennsylvania from year to year as well as the perspective of distiller at the time it was crafted.
This Rye, available only through our website and at our Distillery and Barrelhouse in Pittsburgh, is a notch higher in proof than the Wigle Rye carried in stores throughout the Mid-Atlantic.
Notes of vanilla, maple, brown sugar and cherry.
Perfect for Rye lovers and Scotch drinkers ready to see what American pot stills can produce.

It allows us to get immediate feedback on what we're making, it also allows us to make small batches and allow people to taste the whiskey and determine if we want to run with a different product so in our view it's a complete win-win for both consumers and for us.

We're making a wheat whiskey. As of a few years ago you really couldn't find that in the mass market. Now small craft distilleries are using that as one of the principal components in whiskey. that's a sweeter, more mild whiskey.

Distillery bringing moonshine to Jefferson Co.
Original Air Date: 3/26/14
By: WJAC Web Staff
BROOKVILLE, Pa. -- Moonshine enthusiasts in west-central Pennsylvania will have a new place to pick up a bottle or two or their hooch as a new distillery has opened in Jefferson County.
Blackbird Distillery in Brookville held their grand opening Wednesday. The location offers nine varieties of moonshine, all made on the second floor of the shop.
David and Jennifer Black opened the business after two years of planning and coordination. The distillery uses locally grown corn and honey from the Finger Lakes region in New York. Each batch is handcrafted daily.
We are a small batch, single run distillery, using just the hearts of the run to process our shine, David said. We craft our shine right from the grains to the bottles right here in Brookville, and use a corn whiskey recipe with the addition of honey to make our shine quite unique.
The distillery meets all legal requirements and has a liquor license, making it one of a few locations in the United States to hand-make everything.
We make it all by hand, every last drop, Jennifer said. Some distilleries have it shipped. That's a different license, [and] ours we make it right here from start to finish with the grains, even the labeling.
The Blacks said they plan to offer additional varieties of moonshine in the future.
We have to put down the alcohol content. It could be 102 proof, it could be 86 proof, depending on the batch because we make it every single day, Jennifer said.
The distillery, at 93 Blackout Alley, just north of Brookville, is opened Wednesdays through Sundays from 11 a.m. to 7 p.m.
