In the 13th century, a Japanese priest returned from a trip to China and settled in the small, coastal town of Yuasa in Japan’s Wakayama Prefecture. He brought with him several new skills that he had learned from the Chinese, including a process for making miso (a soybean paste). The liquid byproduct of this miso-making process was eventually adopted by the people of Yuasa as a condiment of its own—giving birth to what we know today as soy sauce.

Yuasa (湯浅町, Yuasa-chō) is a town located in Arida District, Wakayama Prefecture, Japan.
As of 2016, the town has an estimated population of 11,960 and a density of 580 persons per km². The total area is 20.80 km².
There are four elementary schools, one junior high school, and one senior high school.
Yuasa is famous for soy sauce as well as whitebait fish, known as shirasu.

Five Generations of Making Soy Sauce the Traditional Way
Japanese shoyu, or soy sauce, was traditionally brewed in vats over two years in a process that dates back to the 7th century. Over the past 60 years, global demand gave way to industrialization, and today less than one percent of shoyu is produced in the old way. But on the island of Shōdoshima, Yasuo Yamamoto ferments soy beans traditionally in bamboo barrels similar to the ones his family has built for the past 150 years. And while it takes four times longer than the modern way to produce, the results are undeniably delicious. Let's have a taste.

Kadocho Soy Sauce Factory - Wakayama - 湯浅醤油の角長 - 4K Ultra HD
Essential to Japanese cuisine, shoyu, or soy sauce originated from the city of Yuasa in Wakayama. Legend has it that in the 13th century, the Zen Buddhist monk Shinichi Kakushin discovered the wonders of soy sauce totally by accident while making kinzanji miso, a type of bean paste. Thanks to its fresh water with natural minerals, Yuasa was later chosen as the ideal place to manufacture said discovery into Shinichi Kakushin today known as soy sauce.
Back in the 17th century, Yuasa had up to 90 different factories solely designed to produce soy sauce. Today however only one factory remains the Kadocho Soy Sauce Factory. Founded in 1841, Kadocho uses the exact same Yoshino cedar barrels and the same labor-intensive process to create the soy sauce like in the 17th century. The Kadocho Soy Sauce Factory is not only one of the last real soy sauce factories but also a living museum that only a privileged few are allowed to visit during a limited period of time each day.
Being one of the last of a long line of Masters, Kadocho is one of Japan’s most respected soy sauce manufacturers with clients all over Japan. They purchase their products for personal or professional use in some of Japan most famous restaurants!
