In the 13th century, a Japanese priest returned from a trip to China and settled in the small, coastal town of Yuasa in Japan’s Wakayama Prefecture. He brought with him several new skills that he had learned from the Chinese, including a process for making miso (a soybean paste). The liquid byproduct of this miso-making process was eventually adopted by the people of Yuasa as a condiment of its own—giving birth to what we know today as soy sauce.

Japanese shoyu, or soy sauce, was traditionally brewed in vats over two years in a process that dates back to the 7th century. Over the past 60 years, global demand gave way to industrialization, and today less than one percent of shoyu is produced in the old way. But on the island of Shōdoshima, Yasuo Yamamoto ferments soy beans traditionally in bamboo barrels similar to the ones his family has built for the past 150 years. And while it takes four times longer than the modern way to produce, the results are undeniably delicious. Let's have a taste.

The new year is bringing new anime that fans across the world will love. Are you ready for a series about historical warlords in the bodies of modern pet dogs? How about the story of a girl who realizes she's the villain in a video game? All this and more are in store for 2020.
Junji Ito is horror manga's undisputed king. If anything from his vast library of work can be considered his magnum opus, however, it is Uzumaki: the slow, sordid chronicle of one small town's descent into madness.
The story encompasses everything from cannibalistic body horror to isolation-induced psychosis. Ito's always had a gift for balancing absurdism with horror, but Uzumaki takes it further than ever before.
Uzumaki has been adapted before, most notably as a series of video games and a 2000 live-action movie. Nothing, however, has managed to equal its source material in sheer intensity, until now.
In partnership with Adult Swim, Production I.G. has produced a four-episode adaptation that will air concurrently in Japan and the United States. Ito's densely-inked style is a massive challenge to animate, but teaser trailers reveal uniquely detailed visuals that should intrigue newbies and seasoned fans alike. Just make sure you watch this one with the lights on.
It might have taken five years longer than expected, but at last, the finale of the Rebuild of Evangelion series has a premiere date. These films have always been unique: Though they're most widely known as a retelling of the original Neon Genesis Evangelion anime series, they've grown steadily different from the source material with each installment. Entirely new characters have taken center stage, old characters have been woven into the narrative far earlier than in the original series, and a completely different ending is promised to close out the series.
If the previous films are anything to go by, 3.0+1.0 will be an innovative presentation of everything that makes Evangelion the anime touchstone it is, from dazzling animation to a clear-eyed look at trauma on the precipice of adulthood. “The Fire of Rice Sheaves” is a real story about a hero (Goryo Hamaguchi) who saved the lives of villagers by setting his precious rice sheaves on fire to show people the way to escape from the tsunami that followed the Ansei Nankai Earthquake, which struck the village on November 5, 1854.
Goryo also helped the village recover, using his own money to finance the construction of a huge earth levee with the idea of protecting the community from tsunamis for the next hundred generations.
The story of “The Fire of Rice Sheaves” has been introduced in textbooks in Japanese schools. It has also been recognized around the world and became the origin of “World Tsunami Awareness Day.”
The Town of Hirogawa in Wakayama Prefecture has been working to protect the levee and introducing Goryo Hamaguchi’s achievements and his message to the world to prepare for tsunami disasters.
The town recently opened the “Inamura-no-Hi no Yakata,” the Hamaguchi Goryo Archives and Tsunami Educational Center, using state-of-the-art displays on tsunami preparedness and has started “The Fire of Rice Sheaves Festival,” in addition to its annual Tsunami Festival.
The Town of Hirogawa has been welcoming a great number of the guests from around the world.

The State of Japanese Animation in a Post-Miyazaki World: Directors to Watch
When legendary director Hayao Miyazaki announced his retirement from Studio Ghibli recently, the world of Japanese anime was in mourning. In the vacuum left by the famed director, known for masterpieces like Spirited Away and My Neighbor Totoro, an opportunity has emerged for new talent to take center stage.
Japan Society sat down with scriptwriter Dai Sato and animator/producer Justin Leach to discuss some of the directors to be on the lookout for in the coming years to fill the void left by Miyazaki's retirement.

Dai and Justin are both members of Japan Society’s Innovators Network.

Shirahama, located in Wakayama Prefecture, is a traditional hot spring (onsen) town with a long history. In the past, emperors such as Saimei, Tenji, Jito and Monmu have visited Shirahama onsen (hot spring). And with its close proximity to Osaka, Shirahama Onsen (hot spring) resort is one of the 3 biggest onsen resorts in Japan. Its rivals are Beppu in Kyushu and Atami along the Izu Peninsula.
With the onsen industry being an important part of the town’s history and commerce, it is no wonder visitors can find an Onsen Shiryokan (museum) here. The museum focuses on Japanese hot springs, with displays to explain the science and history of the onsen. The museum is housed in a modern, wooden building with numerous educational exhibits. Unfortunately, the explanations are limited to Japanese only, making it difficult for non-Japanese speakers to understand the displays.

[SYNOPSIS]
Yakiniku Dragon is a story about a Korean family running a grilled tripe restaurant at a village near Kansai airport in Japan when Expo '70 was held. The story is based on an original play written by Chong Wishing, a Korean director and script writer living in Japan. Yakiniku Dragon, a play made in collaboratin between the Seoul Arts Center and the New National Theatre Tokyo, has been performed in Korea and Japan receiving multiple awards since 2008. Yakiniku Dragon conveys vigorous life of Zainichi villagers sharing common trauma as they argue, reconcile, love and break up. Through the impressive story of characters intensively affecting each other, individual yet conventional sense of life is expressed on screen. Harmony between Korean actors Kim Sangho and Lee Jeong-eun and Japanese actors Maki Yoko and Inoue Mao is wonderful.

Wakayama Prefecture is located to the south of Osaka. The capital of the prefecture is Wakayama City.
Wakayama Prefecture has many places for visitors to enjoy and explore. The best known tourist attraction is Mount Koya (Koyasan), the headquarters of Shingon Buddhism. Visitors who wish to experience an overnight stay at a temple can experience one here.
In addition to the overnight stay at the temple, visitors approach Koyasan to explore the Kumano Kodo, an ancient network of trials used by pilgrims to visit temples. The Kumano Sanzan, Kumano Hongu Taisha, Kumano Hayatama Taisha and the Kumano Nachi Taisha are also well visited in this area.
In addition to these spiritual experiences, visitors also come to Wakayama to enjoy the hot springs this region boasts. The Shirahama area is one of the top three onsen (hot springs) resort areas in Japan. Numerous onsen, including one of the oldest onsen in Japan, Saki-no-Yu, is in this area. Shirahama is also famous for its white sandy beach and famous rock formations, including Engetsu Island.
Children will be delighted to visit Adventure World with all its animals and rides. This park is famous for their twin pandas, and visitors will enjoy learning more about our Chinese animal friends here. In addition to the cuddly pandas, visitors can enjoy an African Safari, dolphin and other sea life show. There is a “feel” interaction area as well.
