I have finally developed the dish deserving of the name Hot Thai Chicken! This recipe has been simmering in my mind for a long time, and when I finally tested it out, it absolutely blew me away. The perfect mix of sweet, tart, spicy, sticky, crispy and tender...this sweet chili lime sauce would be good even on fried tofu or fish. This one is a must-try!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her playtime in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes. We've made it to the final day of our bike packing adventure! We are so close to the finish, however everything is going wrong. On top of it all we have to summit the highest mountain in Thailand, Doi Inthanon! Will we lose our temper and not make it to the end? Or will we push on and finish in time?
