Glory of Venice: Then and Now - The Bellini Cocktail
The name Bellini will be familiar not only to art historians but also to any bartender. The bellini, a cocktail made of puréed peaches and prosecco, an Italian sparkling wine, was invented in 1948 by Giuseppe Cipriani, the founder of Harry’s Bar in Venice. The rosy hue of the concoction reminded Cipriani of the beautiful gradient color palette often employed by Giovanni Bellini in his paintings, several of which are on view at NCMA (Glory of Venice: Renaissance Paintings 1470-1520, March 4 - June 18, 2017), and became a favorite of celebrity patrons of Harry’s Bar such as Ernest Hemingway, Orson Welles, and Truman Capote. In this video, Cameron Stutts, lead bartender at Gravy in downtown Raleigh, shows us how to make the perfect bellini.

Classic Bellini
A fresh peach purée and Prosecco sparkling wine are served ice cold in this smooth and festive cocktail. Lynne had her first taste of a bellini on a trip to Venice. It's believed the drink was created there in 1948 at Harry's Bar, a place frequented by Ernest Hemingway. We trust Papa knew where to drink. This refreshing beverage goes down pretty easy, so close your eyes, sip slowly and imagine yourself on the banks of the Grand Canal.
Serves 4
INGREDIENTS
8 ripe, juicy peaches, peeled, puréed & chilled
¼ cup cup simple syrup (equal parts sugar dissolved in hot water), chilled
1 bottle prosecco (Italian sparkling wine), chilled
HOW-TO
Chill bottle of prosecco
- Remove skins from peaches. Very ripe peaches should peel easily by taking a section of the skin with a paring knife and peeling the skin downward. If peaches are not ripe, score them and blanche them in boiling water for a minute until skins start to peel back.
- Cube peaches (removing and discarding pits), place in a blender and purée until smooth. If desired, pass through strainer to remove bits, or leave as-is for texture
- Place purée in a bowl and refrigerate until very cold
- To make simple syrup, stir sugar into hot water to dissolve. Chill until very cold
- Combine purée and ¼ cup simple syrup and ladle a scant ¼ -⅓ cup of mixture into champagne flutes. Top with prosecco (These proportions can be adjusted to your liking)
Note: If peaches are not yet at the peak of ripeness when purchased, place in a paper bag for 2-3 days to speed the ripening process

How to Make The bellini - Best Drink Recipes
A Bellini cocktail is a mixture of Prosecco sparkling wine and peach purée or nectar. This cocktail originated in Venice, Italy.
The Bellini was invented sometime between 1934 and 1948[1][2][3] by Giuseppe Cipriani, founder of Harry's Bar in Venice, Italy. He named the drink the Bellini because its unique pink color reminded him of the toga of a saint in a painting by 15th-century Venetian artist Giovanni Bellini.[4]
The drink started as a seasonal specialty at Harry's Bar, a favorite haunt of Ernest Hemingway, Sinclair Lewis and Orson Welles.[4] Later, it also became popular at the bar's New York counterpart. After an entrepreneurial Frenchman set up a business to ship fresh white peach pureé to both locations, it was a year-round favorite.[1]
The Bellini is an IBA Official Cocktail. They also suggest a Puccini, replacing the peach puree with an equal amount of mandarin juice, a Rossini, which uses strawberry puree or a Tintoretto which is made with pomegranate juice.

Episode 7 Justin Darnes illustrates the best way to make the classic Venetian cocktail the Bellini first made at Harry's Bar in Venice, Italy opened in 1931 by bartender Giuseppe Cipriani.
Harry's Bar is not only the home of the Bellini but is also where the famous thinly sliced raw meat Carpaccio was 1st served.
RECIPE
1 x can of peaches (in Natural syrup)
1 bottle of your favourite sparkling wine (Prosecco is traditional)
METHOD
add the whole contents of the peach can to a blender and blend until smooth
add about 1-1.5oz puree to a large glass and stir in sparkling wine (usually 1part puree-5parts wine)
transfer to a champagne flute or wine glass and enjoy.
