Torre Lupara is located just 3 minutes away from the A1 motorway exit of Capua and it also operates as Fattoria Didattica offering the opportunity for tourists to be guided on a tour that shows and illustrates one of the most important chains of our territory: agriculture, buffalo and mozzarella PDO(Protected Designation of Origin).
Torre Lupara is a small quarter of Pastorano village, where the Iemma family, originally from Salerno, moved their buffalo company in 1945. Since then, they created a reality, which is now present on the territory as a closed and controlled short chain: agricultural and zootechnical firms produce forage crops for buffalo and the industrial dairy transforms their milk into buffalo mozzarella.
The agriculture and animal husbandry of Iemma group pay particular attention to:
the quality and preservation of the forage produced in their farms,
animal welfare by providing buffaloes parklands and swimming pools,
the herd's health with veterinary and zootechnical daily tests.
The mechanized milking rooms and the data collected since 1950 are extremely useful for the research and for buffalo genealogy of the milk buffalo.
Casearia Lupara's dairy farm exclusively works fresh buffalo milk from the PDO area. The quality of their product is guaranteed by over 4000 annual checks carried out by national and international governmental agencies as well as in-house laboratory analyzes.
Lupara mozzarella is distributed in Italy and around the world: from 2000 besides fresh buffalo mozzarella, the company produces frozen mozzarella as well.
In 2006, the Iemma Group inaugurated the new dairy, made in compliance with European and International standards on milk processing plants.
A guided Tour farm, breeding and cheese factory includes the following:
• Entrance in a farm where wearing appropriate protections for shoes and patches, visitors can watch the bottle-feeding process of young calves. It is possible to visit water buffalos’ pools in green fields. The visitor will be told about water buffalos, life in a farm, the importance of technology in the milking room and how Torre Lupara monitors the whole producing chain from the lands where fodder is grown to herd’s manning until the transformation phase from milk into mozzarella cheese. Visitors will be told about methods and strategies adopted to make the farm eco-compatible and how citizen can contribute – through recycling – to help safe guarding and protecting the land if seen as a resource and fundamental element for life.
• Visit to the cheese factory and view the various phases of milk transformation into cheese ( 9.00 – 10.00 am), after 10,30 a.m. you can see the industry with guided visit, but the production could be ended.
• At the end of the tour, visitors will receive a “Certificate of Participation” and a colourful and instructive souvenir .
Torre Lupara is open throughout the year. We recommend visits from March to October.
We also suggest to wear comfortable shoes (visitors will be provided with appropriate shoe-protections). Do not forget hat and camera..
The visit last 2 - 3 hours.
