On Monday, May 15, Chef's Roll teamed up with Patagonia Mussel to host In The Kitchen, a day of community for chefs, at Brooklyn Girl Eatery in San Diego.
A beautiful spread of produce was provided by Produce Services of Los Angeles and we enjoyed some great Chilean wines and craft beer from Duck Foot, while savoring mussel dishes by local chefs, including chefs Phillip Esteban of Consortium Holdings, Rob Ruiz of The Land Water & Water Company, Aarti Sanghavi of The Hake, Brian Redzikowski of Kettner Exchange, Rachel Snyder of Concept two.seven.eight and Jeff Bonilla.
Chef's Plate 3: Avocado Madness
Chef’s Plate, the ultimate traveling cooking competition, returned to San Diego on April 6th, 2015 at Kitchen 4140. It was a head-to-head cooking competition between the finalists of our Avocados From Mexico sponsored Avocado Madness. Chef’s Roll started with 64 specially selected chefs from across the United States to compete over a period of 5 weeks. Each week, the number of chefs was trimmed down in half until the Final Four remained. After a month of submitting avocado-inspired recipes from ceviches, sandwiches, to desserts, Chef’s Roll had their Final Four chefs: Ricardo Heredia of San Diego, Louis Robinson of Florida, Admir Alibasic of New York City, and Dorian Southall of Los Angeles. After much deliberation and emphasis on creativity, originality, and presentation, the Chef’s Roll judging panel chose Chef Ricardo Heredia and Chef Dorian Southall to advance to the Chef’s Plate 3 finals complete with a LIVE audience and celebrated judging panel. These two chefs had just earned their invitation to compete for $10,000 cash, a professional knife set from Gunter Wilhelm Cutlery, as well as an automatic entry to the World Food Championships for $100,000.
Chef Heredia and Chef Southall created a 3 course avocado-inspired menu for an invite-only audience of 70 including southern California’s top chefs and culinary press. The judging panel included famed Baja Chef Javier Plascencia who recently appeared as a guest judge on ABC’s The Taste with Anthony Bourdain, award-winning Chef Katherine Humphus of Kat’s Kitchen Collective, food critic Troy Johnson of San Diego Magazine and The Food Network, San Diego’s most trusted fishmonger Tommy Gomes of Catalina Offshore Products, and Chef Mark Garcia from Avocados From Mexico. The night was hosted by Chef Andrew Spurgin with Snake Oil Cocktail kicking off the spirited night with an avocado-inspired cocktail.
In a very tight race, Ricardo Heredia was crowned both “People’s Choice” and overall champion of Avocado Madness and Chef’s Plate 3. He took home $10,000 cash, a Golden Ticket to compete in the World Food Championships for $100,000 in Kissimmee, FL, and a bottle of Angels Envy bourbon to celebrate. Chef Southall received a full set of Gunter Wilhelm cookware and knives.
Driver Defends Flying Through Streets in Tricked Out VW Bug
A hooked-up Volkswagen Bug with 35-inch wheels flew over hills, sped down residential streets and drove up embankments. The driver careened through neighborhoods and parking lots on a quiet morning in San Diego. Blake Wilkey claims he took all necessary precautions when he got behind the wheel. We scanned the streets making sure there was no one out and about doing yard work or kids out, he said. He got slapped with 26 violations including reckless driving and conspiring to commit a crime.
Eating the original Caesar Salad | Restaurante Caesar's in Tijuana, BCN, Mexico
The salad's creation is generally attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States.[2] Cardini was living in San Diego but he was also working in Tijuana where he avoided the restrictions of Prohibition.[3] His daughter Rosa (1928–2003) recounted that her father invented the salad when a Fourth of July 1924 rush depleted the kitchen's supplies. Cardini made do with what he had, adding the dramatic flair of the table-side tossing by the chef.[4] A number of Cardini's staff have said that they invented the dish.[5][6]
The Hotel Caesar's and Caesar's restaurant are still operating on Avenida Revolución in Tijuana today.
Julia Child said that she had eaten a Caesar salad at Cardini's restaurant when she was a child in the 1920s.

Marketplace's iguana taste test
Marketplace reporter Jed Kim did a story about the rising market for iguana meat as the animal's population soars in places like the Cayman Islands, so he decided to cook iguana meat – for journalism, of course. Check out Jed's story on marketplace.org.
Jed Kim’s Korean barbecue style iguana recipe:
1 lb. boneless iguana meat
1 onion, chopped
4 cloves of garlic, minced
½ cup soy sauce
¼ cup honey
2 tablespoons of gochujang (Korean hot pepper paste)
2 tablespoons sesame oil
Dash of ground black pepper
Rinse and dry iguana meat. Combine soy sauce, honey, gochujang, black pepper, and sesame oil. Add in garlic, onion and iguana meat and mix until all are coated. Refrigerate overnight. Cook on a foil-covered grill until the meat turns white. Internal temperature should reach 145 degrees. Note: meat will continue to cook even after removing from heat.
Serve to unsuspecting coworkers.

Background:

Working while they wait, migrants seek jobs at border
(7 Dec 2018) Facing the possibility of a months-long wait in Tijuana before even having an opportunity to request asylum in the United States, Central American migrants who have traveled in caravans are now looking for work in Tijuana.
Those who don't plan on seeking asylum in the U.S. have already applied for, and in some cases received, permits to work in Mexico.
Some 6,000 mgirants have made their way to the U.S. border last month.
They are camped in Tijuana, where they could remain for months with a wait list of already 3,000 names of people who submitted claims to US officials before the caravan arrived.
US authorities process fewer than 100 requests a day at the San Diego crossing, the nation's busiest.
Mexican authorities have encouraged all of the migrants to regularize their status in Mexico and seek work.
The hope is that jobs will help them put down roots in Mexico rather than crossing the U.S. border.
In most cases the migrants are relieved to have something that takes them away from the shelter where the hours pass slowly and puts a little money in their pockets.
Nelson David Landaverde, a 21-year-old from Copan, Honduras said he was out looking for something to eat for his 16-month old son when someone approached him and asked if he wanted to work at a car wash.
He didn't think twice.
He and his pregnant wife had already put their names on an informal list to apply for asylum in the U.S., but in the meantime he wanted to earn money to make their lives a little more comfortable in Tijuana.
For now he is making about 75 cents plus tips per car and washing as many as 10 cars on a good day, potentially putting him ahead of Mexico's minimum wage which is less than $5 a day.
Alexander Castillo, a 38-year-old from Jinotega, Nicaragua, is selling cigarettes and snacks from his tent in the migrant shelter.
He says he is afraid of working illegally and is waiting for his Mexican work permit to arrive before he starts looking for work in a kitchen or a driver.
Luis Rodolfo Enriquez Martinez, Director of the National Employment Service in Baja California has said they have identified thousands of jobs that the migrants could apply for.
Martinez said over two thousand migrants have already been put directly in touch with employers.
Once migrants get their Mexican work permits, they could begin working legally.

Kevin Cooper (The Chino Hills Killer) - Crime Documentary
Kevin Cooper (born 1958) is a death row inmate currently held in California's San Quentin Prison. Cooper was convicted of four killings that occurred in the Chino Hills area of California in 1983.
Cooper's habeas corpus petitions have been denied. The evidence in the case has been reviewed during the original trial, by the California Supreme Court, by the United States District Court,, and by the Ninth Circuit Court of Appeals. The United States Court of Appeals for the Ninth Circuit stated in 2007 that As the district court, and all state courts, have repeatedly found, evidence of Cooper's guilt was overwhelming. The tests that he asked for to show his innocence 'once and for all' show nothing of the sort.

Supply and Demand: One reason the value of an antique Italian violin is so dear is because there are so few of them left, and they are no longer being made. Simple economics dictates that when there is a demand but little supply, value increases.
The Quality: Musicians have long believed that the antique Italian violins are superior to other violins in quality and sound. It’s believed that cooler temperatures from the 1200s to the mid 1800s contributed to a denser tree bark, making the wood that was used in constructing these instruments of a higher quality and offering a better acoustic.
They’re Fashionable: Owning an old Italian is a status symbol in the world of music, thus increasing its legend, value and price.
The Condition and History of the Instrument: Any of these violins are between 100-300 years old, making it an historical icon as well as an instrument. If the instrument is also in excellent condition, the value increases.

ROB LANDES is an award-winning violinist who started playing the violin at 3 years in Orem, Utah. Born to a large musical family, Rob gave his first solo recital at 10 years old, performed in the Hollywood Bowl in Los Angeles on the Disney Channel with the Disney Young Musicians Symphony Orchestra, and founded a piano trio that performed actively throughout his teenage years. Rob has won first prize at numerous music competitions and has soloed with the Utah Symphony, Utah Valley Symphony, San Diego Chamber Orchestra, BYU Philharmonic, and BYU Chamber Orchestra. As a first violinist of the BYU Chamber Orchestra, Rob performed in more than twenty cities throughout central and southern Europe, and as concertmaster of the orchestra, gave a concert to a sold-out audience in New York’s Carnegie Hall.
