Pintxos Crawl with Michelin Star Chefs: MUNCHIES Guide to the Basque Country (Episode 5)
MUNCHIES is back in San Sebastian for a Michelin-starred chef blowout in the final installment of our Guide to the Basque Country. We’ll get a look inside the kitchen of the legendary Martín Berasategui, godfather of Basque nouvelle cuisine and holder of seven Michelin stars total in restaurants across the world.
Finally, a trip to the Basque Country wouldn’t be complete without a night out getting pissed on Txakoli wine and stuffing your face with pintxos. And while she gets wasted, Irene is rolling deep with three more Michelin-starred chefs: Dani López, Gorka Txapartegi, and Joxe Mari Arbelaitz.

???? ABOUT THIS VID! ????
⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯
I'd long heard about the incredible experience of spending an evening at a Basque cider house. So, while in the Basque Country city San Sebastian with my Devour Tours colleagues Lauren and Cyra, we decided to leave all the amazing San Sebastian pintxo bars and head to the nearby town of Astigarraga and visit Zapiain, one of the famous Basque cider houses, for an evening of all-you-can-drink freshly fermented cider, incredible food (including the most amazing T-bone steak) and great company.
Cider has been made for centuries in northern Spain, and the style of cider is very different from the sweet, fizzy stuff you might be used to. This is bitter, fresh and totally addictive. Plus, it pairs amazingly with the big, rustic flavours served in the north of España.
For your information, the full meal at Zapiain (five courses plus all the cider you can handle) is €35.

⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯⋯
Hola! I’m James Blick. Spain is my passion! It’s food, it s culture, its history and its people. And I get a massive kick out of sharing everything I’ve learned with visitors to this country. My mission? To help you have a true, rich and delicious experience in Spain!
I’m from New Zealand and have been living in Madrid since 2011 (which my Spanish wife, Yolanda). I’m a co-founder of Devour Tours, where we offer award-winning food & culture tours in Spain’s most delicious destinations. I’ve been featured on the BBC, CBS and Channel 4 talking about Spain and its food and I’ve also written for The Guardian, Sunday Times, El País and others about Spain as a culinary destination. And finally, I make these videos - because it causes me a lot of pain to think that people are in Spain and having a less-than-authentic experience!
Thank you for watching my videos. I’d love it if you’d comment on them. Tell me what you like, don’t like and what you want to see more of! And give it a thumbs up if you enjoyed it, and share it with your friends who are heading to Spain. It all helps others find my videos!

Tradition Meets Molecular Gastronomy: MUNCHIES Guide to the Basque Country (Episode 1)
In the Munchies Guide to the Basque Country, host Irene Peralta explores the culinary offerings of one of the world’s greatest food destinations. With over 40 Michelin-starred restaurants serving a population the size of Bucharest, the passion for gastronomy here is tangible. They’re as proud here of their home cooks as they are of their celebrity chefs, and MUNCHIES is here to discover Basque cuisine in all its strange and delicious forms—from crystallized fish scales to hake chin jelly, it promises to be a real treat.
In Episode 1, “Old and New,” Irene starts with a traditional feast at one of San Sebastian’s most historic gastronomic societies: Txokos, a Basque institution for hundreds of years. Then she zooms into the 21st century to meet gastronaut Eneko Atxa, three-star-Michelin chef-patron of ultra-sustainable restaurant Azurmendi, visiting his Willy-Wonka-style lab, kitchen, and greenhouse.

Wine Society: Spain and Rioja Tasting
The Wine Society holds 150 tastings and events throughout the country every year. Society events take several forms, ranging from informal, walk-around affairs to tutored tastings, gastronomic dinners, Saturday morning workshops and monthly lunches at Stevenage. The emphasis of these events is on fun and enjoyment, whilst providing an opportunity to expand your wine knowledge.
The Urbina family has four generations under their helm as vineyard owners in Rioja. They own around 75 hectares, all in the heart of the renowned subregion of Rioja Alta which is known to produce grapes with fine structure and elegance. The vineyards, mostly planted to tempranillo, are located around the village of Cuzcurrita which is at the north-west point of Rioja and therefore at the limit of vine production. Here the climate is influenced by the cooler Atlantic weather systems which results in a longer, more gradual ripening period and grapes that tend to show freshness, structure and intensity. The magic of this area is that it makes wines that are amongst somo the longest lived in Rioja.
The Political Bistro - Cuisine of the Basque Country
Tonight we dine on the cuisine of the Basque country. This area, straddling the Franco-Spanish border, is fiercely independent, with the Basque people identifying themselves more as Basque than as French or Spanish.
Salmon Medallions
Medallon de Salmon
The food is also wonderful and Basque country's principal city, San Sebastian, boasts one of the highest number of Michelin-starred restaurants.
Jamon Iberico
Jamon Iberico
Between bites of El Caviar Ruso, Medallon de Salmon, Jamon Iberico and Brownie con Helado de Canela, we will be discussing this day in history, Basque distance-runner Ivan Fernandez Anaya, and the chuckleheads at UC Irvine.

Our guest is Roger Valdez of Smart Growth Seattle, who will fill us in on how onerous building regulations within the city have led to overly inflated land and building costs.
Our playlist features Basque artists and composers, including French-born Basque Maurice Ravel's wonderful Bolero.
Eating the Devil’s Finger: MUNCHIES Guide to the Basque Country (Episode 2)
In the second, seafood-themed episode of the MUNCHIES Guide to the Basque Country, Irene has the unusual privilege of eating the animal with the largest penis relative to body size: the goose barnacle, or Devil’s Finger. She’ll get over her fear of prawns in time to chomp on a live one, and is rewarded with a taste of the best turbot in the world at Michelin-starred grill restaurant Elkano.
