It takes 10 lbs of milk to make 1lb of cheese!
Here is an overview of the process.
Ripening- the solidification of milk by means of a starter cutler.
Renneting- the addition of an enzyme called rennet which causes coagulation of the milk protein into cheese curd.
Cutting - The uniform breaking up of a curd mass to facilitate the release of whey which is trapped in the curd mass
Cooking - The heating of the cut curd which forces moister out of the curd causing it to firm up.
Draining - The removal of whey by means of a gravity drain in the cheese vat
Salting - The addition of specialty grade salt to season, help in drying and preservation of the cheese
Pressing - The removal of whey by means of a mechanical press
Drying - The air drying of cheese allowing bacteria to develop the flavor and protective rind
Waxing - Air tight sealing of the cheese in melted wax to protect the cheese during aging.
Aging - The resting period in which the flavor and charterer of the cheese develops .

Harvest Host Camping at Radical Wine Company
15% Off Harvest Hosts:
On this Airstream Life vLog, we leave the Saucony Brewery after a pretty quiet night and head to one more Harvest Host. That is 3 Harvest Host nights in a row! This time we are staying at Radical Wine Company in Lehighton PA.
Radical Wine Company considers itself an urban winery. They don't grow their own grapes, instead, they buy from the best producers in different areas of the country to blend up some amazing wines. But that's not what makes them so cool.
Almost every single bottle they sell donates back to local animal shelters. Many have pictures of their own dogs on the labels & Radical Wine Company's logo has a dog paw print in it! Here we got to mix two of our favorite things. Wine & Dogs!
After a delicious tasting where we got to meet some awesome other RV campers randomly (hi guys!) we headed back to the Airstream for the night. While the winery is along a semi-major road it was pretty quiet once the sun went down.
The next morning we hung out for a while and did some work, even though the internet here was not the best before packing up and heading to a state park for more adventuring! So stay tuned.

Two Waterfalls & Cider to Start NY Off Right
On this Airstream Life vLog, we leave our awesome Harvest Host in Pennsylvania and cross the border into NY. We are staying for 10 days at Robert H Treman State Park outside of Ithaca. The park only has a few camping sites with 30amp and they are not the biggest so it made it interesting getting setup. Unfortunately, Courtney set up the camera but didn't press record so you missed Steve's amazing backing in job...but you get the idea. After our first night, it was time to start exploring the area.
One of the main reasons we chose to come to the Fingerlakes for multiple weeks on this trip is the number of waterfalls in the area. There are so many! We'll be doing a guided waterfall tour coming up but for today we went to two pretty accessible ones on our own. The first stop was Buttermilk Falls where we got to climb the steps up to the top. This cascading waterfall was gorgeous and full of white water, hence the name Buttermilk Falls.
The next stop on our mini tour was Taughannock Falls. This waterfall is a 215 straight drop making it taller than Niagara Falls by 30 stories! We first stopped at the overlook before realizing we were running out of time. So we took a quick break from the waterfalls to have an amazing cider tasting and cheese plate at the Finger Lakes Cider House. Delicious and the whole place reminded us of a local farm!
Finally, we made it back to Taughannock Falls and did the 2 miles round trip easy hike along the creek to the base of the falls. Wow! Totally worth it!
We have a lot more waterfalls, wine, beer, and delicious food to come...so stay tuned!

Harvest Host Stay in Paso Robles, Wine Tasting and the Beautiful Music of Jon Stephen!
Knowing that campgrounds can be overflowing on a holiday weekend, we chose to take advantage of our membership with Harvest Hosts and winery camp instead! Join us on our three night and two day recent tasting trip to Paso Robles.

The highlight of this trip? Meeting and listening to Jon Stephen ~ an extremely talented musician we happened upon at Barr Estate Winery! We lucked out ~ a great bottle of wine, a picnic and a few hours of listening to his amazing music. Jon has a zest for life, a passion for beautiful music and shares his joy of life in his music! AND he gave me the incredible permission to use and share his music in this video!
And what did we learn from this? Be spontaneous, alter your plans, stop, listen and jump at the chance to have an experience such as our amazing afternoon with Jon!
Enjoy his music:

Harvest Host Camping at A Stroka Gene Us Alpaca Farm
Get 15% Off Harvest Hosts:
On this Airstream Life vLog, we leave Louisiana (yay!) and head into Mississippi for the first time. We only have one night in the state in between two long travel days so we decide to stay at an Alpaca Farm that is part of the Harvest Host program.
As you guys know we have been trying to have all our one-night overnights be at Harvest Hosts. Why? A number of reasons. First, they are fun! It's always an adventure. We meet awesome people and always learn new things. Why stay at a boring campground when we can have an adventure enroute?
Secondly, it's free! Or at least we have already paid for the membership. We do always pay for something at the host location which is expected with the Harvest Host program but we look at it as a free night stay and some fun souvenirs!
Anyway, this was a new Harvest Host experience for us. We got to feed alpacas, llamas, and donkeys! We saw so many dogs, cats, chickens, guinea hens and more. Our neighbors for the night were so cool and actually really quiet (that was one concern we had with being on a farm).
The gift shop was full of amazing fiber, yarn, knitted and crocheted goods, mittens, hats, stuffed animals, soaps, herbs, essential oils and more!
The only downfall was the Verizon signal was pretty slow...but for one night it was totally worth it. So if you are in the area we highly recommend stopping in and if you are a Harvest Host member consider spending a night.
In the next video, we have one more travel day before reaching the RVE Summit but things don't go as planned...so stay tuned!
