Chicago is the 2nd most visited city in the US, with 58 million domestic and international visitors in 2018, behind New York City's approximate 65 million visitors. Chicago is the third most populous city in the United States. With an estimated population of 2,705,994 (2018), it is the most populous city in the Midwest. Chicago is the principal city of the Chicago metropolitan area, often referred to as Chicagoland, and the county seat of Cook County, the second most populous county in the United States. The metropolitan area, at nearly 10 million people, is the third-largest in the United States.
Located on the shores of freshwater Lake Michigan, Chicago was incorporated as a city in 1837 near a portage between the Great Lakes and the Mississippi River watershed and grew rapidly in the mid-19th century. After the Chicago Fire of 1871, which left more than 100,000 homeless, the city made a concerted effort to rebuild. The construction boom accelerated population growth throughout the following decades, and by 1900 Chicago was the fifth largest city in the world. Chicago made noted contributions to urban planning and zoning standards, including new construction styles (including the Chicago School of architecture), the development of the City Beautiful Movement, and the steel-framed skyscraper.
Chicago is an international hub for finance, culture, commerce, industry, technology, telecommunications, and transportation. It is the site of the creation of the first standardized futures contracts at the Chicago Board of Trade, which today is the largest and most diverse derivatives market globally, generating 20% of all volume in commodities and financial futures. O'Hare International Airport is one of the busiest airports in the world, and the region also has the largest number of U.S. highways and greatest amount of railroad freight. In 2012, Chicago was listed as an alpha global city by the Globalization and World Cities Research Network, and it ranked seventh in the entire world in the 2017 Global Cities Index. The Chicago area has one of the highest gross domestic products (GDP) in the world, generating $680 billion in 2017. In addition, the city has one of the world's most diversified and balanced economies, not being dependent on any one industry, with no single industry employing more than 14% of the workforce.
The city ranked first place in the 2018 Time Out City Life Index, a global quality of life survey of 15,000 people in 32 cities. The city is also home to several fortune 500 companies, the most notable being, Allstate, Boeing, Exelon, McDonald's, Quaker Oats, and United Airlines Holdings. Landmarks in the city include Millennium Park, Navy Pier, the Magnificent Mile, the Art Institute of Chicago, Museum Campus, the Willis (Sears) Tower, Grant Park (Chicago), the Museum of Science and Industry, and Lincoln Park Zoo. Chicago's culture includes the visual arts, literature, film, theater, comedy (especially improvisational comedy), food, and music, particularly jazz, blues, soul, hip-hop, gospel, and electronic dance music including house music. Of the area's many colleges and universities, the University of Chicago, Northwestern University, and the University of Illinois at Chicago are classified as highest research doctoral universities. Chicago has professional sports teams in each of the major professional leagues, including two Major League Baseball teams.

With dazzling Times Square views overlooking Broadway and 42nd Street from an enviable fourth-floor corner perch in the heart of Manhattan, Charlie Palmer at The Knick brings together two of the most iconic names in hospitality. Inspired by the rich history of The Knickerbocker, a 1906 landmarked New York City treasure recently reopened as Times Square’s premier luxury lifestyle hotel, Chef Palmer adds new twists to his acclaimed cuisine to create the Hotel’s signature Honest American Cuisine in an open action kitchen. An elegant use of glass, marble and lighting plays off sheer chainmetal drapes to create semi-private spaces throughout the room, enhancing an understated ‘see-and-be-seen’ vibe.
Guided by Chef Palmer’s passion for market-driven ingredients, menus draw upon the local bounty of the Hudson Valley and North Atlantic with selections ranging from Scotch Quail Eggs with Pop Corn Shoots, Dijon and Pancetta Aioli to The Knick Burger, a dry-aged custom blend patty topped with short ribs and Irish cheddar. Things to do in Nevada Travel Guide | USA Road Trip 2017 Video Transcript:
Our trip began in Las Vegas, but having already been there before, we wasted no time on the Strip. After a short night’s rest, we grabbed a hearty breakfast, hopped in our rental car, and hit the road for our first stop of the day: Lake Mead.
Hoover Dam is one of the most visited attractions in Nevada with as many as 1 million people taking the tour every year, and even more driving across the dam.
Fun fact: there is enough concrete in Hoover Dam to build a 4 foot wide sidewalk around the Earth at the Equator. That’s a whole lot of concrete!
Kayaking in Black Canyon was the highlight of the day. We lucked out with blue skies, calm waters, and the scenery was pretty spectacular - especially once we entered the canyon.
Halfway up stream we took a break from kayaking and went on a short hike.
We also stopped at the Emerald Cave, which gets it’s name from the bright emerald green colour reflected in the water.
We had an hour’s journey to reach the Valley of Fire that morning, and it was a very leisurely drive down some scenic stretches of road. We knew we were getting closer to the park when we noticed the landscape colours started becoming more saturated.
Once we entered Valley of Fire State Park, the fun began. This park is known for its rock formations, panoramic vistas, and hiking trails, so there was no shortage of things to see and do.
Back on the road, we hit our first stop on the ET Highway: ET Fresh Jerky! This is an alien-themed shop selling everything from martian soda to alien sunglasses, so we used this as an opportunity to load up on snacks.
After stopping for photos at the ET Highway marker which is covered in stickers, we journeyed on to the Alien Research Centre, which is pretty hard to miss considering they have a giant metal alien standing guard on a hill.
Out front, we spotted a UFO-towing pick-up truck and a green alien welcoming earthlings, while inside we were surrounded by Area 51 warning signs and all sorts of alien-themed souvenirs.
And then it was time to turn around, drive back to Vegas, and fly back home,.
A surprise addition to our Nevada travel guide was visiting Red Rock Canyon, which is just a 20-minute drive from the Vegas Strip.
Our final thoughts? There are way more things to do in Nevada than just Las Vegas and we’re glad we got to experience a mix of nature and quirky attractions on this mini USA road trip! If you have any other suggestions of cool things to see and do around the state, feel free to leave your recommendations in the comments below.

Located just west of the Loop, Province is former Nacional 27 chef and culinary veteran Randy Zweiban's first restaurant. This restaurant is a farm-to-table driven Contemporary American restaurant with dishes such as their smoked pork belly sandwich and the signature ten-hour braised lamb. But his Spanish and South American influences are still seen in dishes throughout the extensive menu, such as Becker Lane pork, black beans, rice & orange mojo. The layout of the menu is confusing as the dishes are separated into six different categories but regardless of whether you choose small, big or bigger dishes, the results will be delicious. And, naturally, the friendly staff is there to help you navigate the courses.

Chef Ryan McCaskey, Kendall College Alumnus- Class of 1996
A native of Saigon, Vietnam and raised in the northwest suburbs of Chicago, McCaskey discovered his passion for cooking at an early age. As a youngster, he would watch his grandmother recreate handed-down recipes, helping her out as he could, and his interest was piqued. He began experimenting and by age 14, McCaskey was the family cook. Lucky to have traveled extensively throughout his childhood, McCaskey was exposed to many different cultures and flavors, and to this day employs a multi-cultural approach in the kitchen.
Realizing at a young age he wanted to work professionally as a cook, as a high school junior he was one of nine pilot students to attend the Harper College Culinary Arts program. He next attended the School of the Culinary Arts at Kendall College (Evanston, IL), and while at school, worked at the three-star Greenery (Barrington, IL) and subsequently, at the acclaimed Tuttaposto under Tony Mantuano, working various stations in the kitchen. McCaskey had the foresight to learn all stations, both savory and sweet , as he knew these skills would serve him one day when he ran his own kitchen. He then accepted a position as sous chef and pastry chef – at age 19 – at Goose Cove Lodge in Maine, lauded by The New York Times as one of the best restaurants in the state. Still a student, he spent his summers cooking seasonal, regional cuisine and finished his schooling in the off-season. After graduating (1996), McCaskey moved to Wisconsin, accepting a position as Chef de Cuisine and Pastry Chef at the Black Locust (Fish Creek). While at the helm, the restaurant was named one of the top three restaurants in the state by the Milwaukee Journal. Ryan then opted to return to Chicago, working as chef de cuisine at Vivere and then at the acclaimed Rushmore, where he returned to his contemporary American roots. When Rushmore closed unexpectedly (due to a fire), McCaskey took some time off, then broadened his kitchen skills staging at the four-star Trio under Grant Achatz and TRU under Rick Tramonto, as well as working at Les Deux Gras, Rhapsody, and Allen’s. He next worked as Executive Chef at the Moroccan Tizi Melloul, where he garnered national media exposure. When Rushmore reopened, McCaskey returned – this time as Executive Chef – where he continued to hone his craft. In 2007, McCaskey was offered the position as Executive Chef at the four-star Courtright’s (Willow Springs, IL). In 2010, McCaskey began plans for Acadia, fulfilling a lifelong dream of opening his own restaurant.
McCaskey has a diverse skill set and broad experience, and cites some of the greats – Trotter, Tramonto, Portale, Achatz and Keller – as influencers, as well as Henry Adaniya, owner of Trio and a consummate host. Seeing a guest have a great experience, providing them a culinary memory, is what drives McCaskey to strive to provide the best he possibly can. McCaskey describes his style as “Simultaneously contemporary and classic. The first half of my career was rooted in classical cuisine, technique-driven, the fundamentals. Recently, my focus shifted to sublety, layering flavors and using contemporary techniques. But one doesn’t overshadow the other – they work in harmony, balancing out one another.” McCaskey lives in the South Loop neighborhood, just up the street from Acadia.

Foie Gras & the Ethics of Force-Feeding: The Politics of Food
In 2012, the State of California successfully banned foie gras, citing animal welfare and health concerns. Though that ban was just recently overturned, the debate continues to rage on from both sides.
In this episode of The Politics of Food, chef and food writer Dave Arnold speaks to the ban's key political players, including the Chairman of the California Democratic Party, to understand how insider politics determines what we can and cannot eat. From a foie gras speakeasy to the world of animal-rights activists, Dave visits both sides of the issue and discovers why there’s so much controversy surrounding this popular delicacy.
