다음은 볼로냐로 행했다. 볼로냐는 에밀리아 로마냐주의 주도다. 로마시대 건축물이 아직 남아 있어 운치를 자아낸다. 나는 도심으로 향했다. 네투노 분수는 교황의 명령으로 16세기에 조성되었다고 한다. 제일 하단엔 바다의 요정 세이렌, 제일 위엔 바다의 신 넵투누스가 자리하고 있다. 분수엔 많은 관광객의 발길이 끊이지 않는다. 물론 볼로냐 시민들의 약속장소이자 쉼터이기도 하다. 마지오레 광장에 있는 이 성당은 1390년부터 270년 동안 공사를 했지만 미완성으로 끝나 절반은 벽돌, 절반은 대리석인 독특한 외관을 갖게 되었다. 볼로냐 시청사는 15세기에 건립된 것인데 볼로냐 출신의 교황 그레고리 13세와 성모상을 조각해 예술미를 더해준다. 볼로냐는 이탈리아에서 미식의 수도로 불린다. 도심 뒷골목에 자리한 이 집은 맛집으로 소문난 곳이다. 가장 인기 있는 메뉴는 라구 소스 파스타다. 우선 생면을 직접 밀어서 탈리아텔레 파스타를 만드는 것이 이색적이었다. 이렇게 하면 라구 소스가 면에 더 잘 스며든다고 한다. 당근, 양파 등 채소를 넣고 다진 돼지고기와 소고기를 함께 넣어 볶아준다. 여기에 토마토 페이스트와 와인을 첨가해 약한 불에 2시간 정도 끓여주면 라구 소스가 완성된다. 면과 라구 소스를 잘 섞어서 파르미지아노 레지아노를 뿌려주면 요리가 완성된다. “우리 요리가 세계적으로 유명한 이유는 이렇게 풍성하고 정직하며 풍미가 살아있기 때문이죠. 탈리아텔레 알 라구는 에밀리아로마냐 지역뿐 아니라 전 이탈리아 미식계의 꽃입니다.” 저기 멀리 볼로냐를 상징하는 아시넬리탑이 우뚝 서 있다. 1119년 아시넬리 가문에서 건립한 이 탑은 1.3m 기울어져 있는데 입장을 기다리는 관광객들 줄이 길게 늘어서 있다. 통로는 한 명씩 겨우 들어갈 수 있었는데 정상까지는 사백아흔여덟(498)계단을 올라가야 한다. 35도의 무더위에 지쳐 쉬어갈 수밖에 없었다. 공기구멍으로 시원한 바람이 들어와 겨우 숨통이 트였다. 아래쪽을 내려다보니 아찔하기까지 하다. 드디어 정상에 도착했다. 시원한 바람과 함께 볼로냐시의 전경이 눈앞에 펼쳐졌다. 12~3세기, 권력과 부를 과시하기 위해 세워졌다는 탑은 약 백여든(180)개나 되었는데 이제 스무(20)개만 남았다. 볼로냐대학교는 세계에서 가장 오래된 종합대학이다. 이탈리아를 대표하는 지성의 산실이다. “볼로냐대학교는 서양에서 가장 오래된 대학입니다. 1088년에 위대한 법학자들이 설립한 교육기관이며 유럽 전역에서 학생들을 불러 모았습니다. 설립 초기에는 학생들이 대학을 이끌었고 총장도 실제로 학생이었고요. 이것이 우리 대학의 모델이 된 셈이죠.” 건물 내부로 들어가 보았다. 오래된 도서관이 무척이나 잘 보존되어 있었다. 여기서 책과 씨름했을 학생들이 눈에 선하다. 왠지 이곳에선 나도 절로 공부가 될 것만 같았다. 미식의 고장 에밀리아로마냐에 세계에서 가장 큰 음식 테마파크가 있다. 이곳은 에밀리아로마냐와 이탈리아를 대표하는 음식을 모두 모아놓았다. 피자, 프로슈토, 리소토 등 종류별로 매장이 마련돼 있다. 원하는 요리를 즉석에서 만들어주는데 파스타, 육류 등 입맛대로 메뉴를 고를 수 있다. 그래서, 이곳은 미식가들의 디즈니랜드라고 불리기도 한다. “아주 단순한 발상에서 시작된 곳인데요. 이탈리아, 특별히 그중에 에밀리아로마냐에는 맛있는 음식이 정말 많은데 여행객들이 어떻게 이 모든 것을 다 맛볼 수 있겠습니까? 그것을 가능하게 만드는 곳이 바로 이곳 피코입니다.” 관광객이 많을 뿐만 아니라 이 지역 시민들도 자주 찾는다고 한다. “피코에 오는 것을 좋아하는 이유는 흥미로운 공간이고 편한 분위기 속에서 음식을 즐길 수 있기 때문이에요. 친구들과 점심시간을 레크리에이션 시간처럼 보낼 수 있게 해주거든요. 정신없이 밥만 먹고 일어서는 느낌이 아니고요.” 이탈리아산 식재료도 판매되고 있어 이탈리아 음식을 좋아하는 이들은 꼭 들러볼만하다.

We explore the amazing Northern Italian city of Bologna, the capital of the Emilia-Romagna region.
We start the day at the Giardini Margherita and then walk up to the church San Michele in Bosco to find the best views over the city.
After that we head back down to the main part of town making our way through the city’s famous porticos (covered walkways) to the main square Plaza Maggiore where we check out the outside of the amazing church Basilica di San Petronio.
Later we got some serious exercise by climbing the Asinelli tower (the smaller, leaning tower next to it is Tower Garisenda. It is 97 metres high and took about 10 minutes to get to the top, the views were beautiful but it was very crowded!
Lastly we go find the small canals in Bologna, and in particular the small peaking window the gives you a glimpse of the canals (La Piccola Venezia).

Bologna:
Often left aside on travel plans in favour of more famous Italian cities, such as Rome, Venice and Milan, Bologna has plenty to offer tourists, from amazing traditional Italian food and art.
Bologna is a historical city, with around 380,000 inhabitants. Although it is well known by Italians, it is less so among foreign visitors. Little English is spoken by its residents. It is the capital and largest city of Emilia-Romagna (a region in northern Italy). Bologna is famed for having the oldest university in the Western world, a lively student population, exquisite food, typical brick terracotta-roofed architecture and porticos, theatre and nightlife.
Bologna is famous for its cuisine (la cucina Bolognese). It is also viewed as a progressive and well administered city. It is considered second only to Venice in beauty by many Italians
Emilia Romagna Region:
Emilia Romagna lies between the River Po to its north and the Apennine Mountains (to its south). It is one of the most fertile and productive regions of Italy, thanks to the mitigating effect that the Adriatic Sea has on the coastal climate.
The diversity between the mountains and sea offers visitors to Emilia Romagna breathtaking views, in addition to beauty for both the eyes and spirit, with a mixture of the earthy colors, the aromas and the fresh sea air. Giardini Margherita:
Giardini Margherita is the largest and certainly the most popular city park. It was designed by the Piedmontese Sambuy to provide Bologna with an ample green and public place as in other Italian and European cities. It was opened in 1879 with the name of “Passeggio Regina Margherita” ( as a tribute to the wife of King Umberto I).
San Michele in Bosco:
San Michele in Bosco is a religious complex in Bologna, central Italy, including the church with the same name and the annexed Olivetan monastery. The latter was acquired in 1955 by the municipality of Bologna, to house an orthopedic center named the Rizzoli Orthopedic Institute (l'Istituto Ortopedico Rizzoli).
Plaza Maggiore:
Piazza Maggiore is located in the very centre of Bologna. In the past, the square underwent many changes and was embellished with important buildings: the Basilica di San Petronio, Palazzo dei Notai, Palazzo d'Accursio, Palazzo del Podestà and Palazzo dei Bianchi.
Basilica di San Petronio:
Named in honour of Bologna patron saint Petronio - 8th bishop of the city from 431 to 450, the Basilica is the most imposing (a length of 132m, a width of 66m, a height of 47m) and important church in Bologna.

다음 행선지는 파르마다. 파르마는 예로부터 교통의 중심지이자 농업, 상업의 중심지였다.파르마 대성당은 12세기 초 축성되었는데 벽화로 유명하다.안으로 들어서자 온 벽면과 천장이 그림으로 화려하게 장식돼 있어 황홀하기까지 했다. 그림 수가 많아 놀라고 화려한 색감이 아직 살아 있어 또 한 번 놀랐다. 성당 제단 부분은 더 화려했다. 천장의 십자가 문양이 화려함을 더했다. 천장 돔 부분에 이 성당에서 가장 유명한 그림이 있다. 성모와 천사들의 승천 모습을 그린 작품인데 마치 하늘로 빨려 올라가는 느낌을 주는 걸작이다. 이 작품은 12세기 목조각 작품으로 역시 걸작으로 알려져 있다. 바로 프로슈토다. “프로슈토 디 파르마는 이탈리아 음식을 대표하는 가장 전형적인 제품 중 하나라고 할 수 있습니다. 천년이 넘은 전통을 지닌 제품이고요 매우 자연적이고 100% 이탈리아산 고기와 소금 이 두 가지 재료로만 만들어졌습니다.” 프로슈토는 돼지 넓적다리에 소금을 절여 최소 1년 반 이상 숙성시켜야 제맛을 낸다고 한다. “나무통에 남아 있는 와인의 효모 군은 프로슈토가 자연적으로 만들어내는 효모 군과 섞여서 환상적인 풍미를 만들어내는 것이죠.” 어떤 맛일지 정말 궁금했다. 오랜 숙성시간에서 배어나오는 향과 짭조름하면서도 부드럽고 담백한 맛이 독특했다. 지벨로 지역에 위치한 이 식당에선 돼지를 이용한 또 다른 전통 식품이 만들어지고 있었다. 바로 쿨라텔로다. “저는 프랑스 남부에서 요리를 해요. 오늘은 주문해둔 쿨라텔로를 가지러 여길 왔죠. 이건 세계적으로 유명하죠. 특히 이곳의 특별한 제품이고 전 세계에 매우 영향력이 있죠.“ 숙성실로 들어서자 수천 개의 쿨라텔로가 매달려 있었다. “우선 쿨라텔로는 돼지 넓적다리의 앞부분을 말하는데요. 먼저 껍질을 벗기고 다음으로 뼈를 제거합니다. 그리고 일주일 정도 절이는데요, 역시 지역 특산품인 스파클링 레드와인, 마늘, 소금, 후추를 넣고 고기를 재워둡니다. 그런 다음 돼지 방광 안에 밀봉합니다. 그때부터 최소 1년에서 3년 반 정도 기간의 아주 긴 숙성이 시작됩니다.“ 안개가 자주 끼고 습한 이 지역의 기후가 쿨라텔로 숙성에 최적의 조건을 제공한다고 한다. 최소 1년 이상 숙성돼야 제맛을 낸다고 한다. 쿨라텔로는 어떤 맛일까? 숙성된 고기에서 배어나오는 향과 함께 조금 짭짤하면서도 쫀득한 맛이 일품이었다. “이 놀라운 제품의 향과 맛이 향상되어 결국에 이 지역이 성장하는 데 도움을 주고 있습니다. 이 지역은 매우 독보적이고 세월이 지나도록 아직 자연이 그대로 많이 남아 있어요.” 이 쿨라텔로를 구입하려면 최소 1년 전 주문해야 한다는데 세계 곳곳에서 미리 주문한 쿨라텔로에는 저렇게 푯말을 걸어 구분한다고 한다. 파르마 옆에 위치한 레지오 에밀리아. 레지오 에밀리아는 작은 도시지만 붉은 지붕이 아름다운 정감이 가는 도시다. 조용하고 편안한 분위기였다. 이곳은 프람폴리니 광장이다. 오전 9시부터 오후 2시까지는 시장이 선다. 주로 생활용품과 옷가지가 주류를 이룬다. 멋쟁이인 이탈리아 사람들이 10유로, 5유로짜리 옷을 고르는 모습이 무척 의외였다. “다른 곳에서 볼 수 없는 물건은 아니지만 아무래도 더 저렴하기 때문에 사게 되는 것 같아요. 단지 가격이 싸다는 게 이유죠.” 검소함이 몸에 밴 거 같았다. 이 지역의 특산품은 치즈다. 이들이 줄을 서서 기다리는 이유는 파르미지아노 레지아노 치즈를 사기 위해서다. 공장 안으로 들어서자 여러 청동 가마솥에서 치즈를 만들고 있었다. 시시때때로 우유 데우는 온도와 회전속도를 조절하며 최적의 조건을 유지해야 양질의 치즈를 생산할 수 있다고 한다. “일상적으로 해오는 일이지만 신경을 많이 써야 합니다. 이것은 살아있는 제품이기 때문에 원재료를 다뤄야 하고 그 원재료는 매일 똑같지가 않습니다. 그렇기 때문에 매일 해야 하는 일들이 있어요.“ 제조법은 1000년 전 베네딕트 수도사들이 만들기 시작한 데서 유래했다고 한다. 파르마 지역과 레지오 에밀리아 지역이 원조 논쟁을 벌인 끝에 파르미지아노 레지아노라는 긴 이름이 붙게 되었다고 한다. 굳은 치즈는 숙성창고에서 2~3년의 숙성기간을 거친다. 망치로 두드렸을 때 나는 소리로 품질을 판별한다고 한다. “망치로 두드렸을 때 꽉 찬 소리, 그리고 일정한 소리가 나야 합니다. 쉽게 말해 이상한 소리가 나면 안 되고 똑같은 소리가 나야 하죠. 두드렸을 때 나는 소리가 전부 똑같아야 해요. 처음부터 끝까지요.” 파르미지아노 레지아노 치즈는 어떤 맛일까? 24개월, 36개월 된 치즈를 시식해 보았다. “입천장에 닿을 때 굉장히 부드럽고 우유와 건초 풍미뿐만 아니라 말린 과일 고기수프 향도 느낄 수 있습니다. 열대과일 맛도 나는 것 같네요.” 치즈에서 우러나는 농축된 맛이 입안을 맴돌았다. 파르미지아노 레지아노는 에밀리아로마냐의 전통 요리에 빠져서는 안 될 존재다. 작은 만두처럼 생긴 이것은 카펠레토라고 하는데 파르미지아노 레지아노와 잘 어울린다고 한다. “24개월 숙성된 파르미지아노 레지아노 치즈입니다. 끓이면서 저어줍니다.” 익힌 카펠레토에 파르미지아노 레지아노를 뿌려주고 여기다 끓인 우유, 치즈를 휘핑기에 넣어 만든 파르미지아노 무스를 얹어주자 카펠레토 레지아노가 완성되었다. 이건 에르바초네라는 전통요리인데 역시 파르미지아노 레지아노가 베이스로 들어간다.

We’re taking you on a whirlwind tour of Venice in winter visiting the famed Floating City. Join us as we show you the best things to see, do and eat in Venice.
The Vaporetto is Venice’s water bus service. The standard ticket is 7.50 Euros and valid for 60 minutes, the 1 day pass is 20 Euros and valid for 24 hours.
The most visited attraction in Venice: Piazza San Marco where there is quite a bit to see and do around the square beginning with St Mark’s Basilica.
St Mark’s Campanile, a tall brick bell tower was once used by approaching ships as a beacon to guide them home where you get great views of the city.
Then you have the Doge’s Palace, which was the residence of the Doge of Venice, the ruler of the former Republic of Venice built in the Venetian Gothic style.
Don't forget the Bridge of SIghs, whose name refers to the sighs of prisoners who would get their last glimpse of Venice as they were led from Doge's Palace to their cells.
Across to the other side of the Grand Canal, you have the Basilica of Saint Mary of Health and the Galleria dell’Accademia in case you’re in the mood for art.
A restaurant we really enjoyed La Zucca - a place where all the dishes are made with pumpkin! The Rialto Market specializes in produce and fresh seafood for self-catering.
Let’s talk about island hopping in Venice:
Founded in the 5th century, Torcello is even older than Venice and was the original settlement in the Venetian Lagoon with lots of walking paths, nature and Byzantine mosaics.
Burano is known for its lace work and brightly coloured homes with plenty of restaurants, cafes and shops to browse.
Mazzorbo island sits next to Burano and is connected by a bridge while being known for its vineyards and orchards.
Murano is renowned for its glass production dating back to 1291 when the glassmakers in Venice were forced to relocate by the Venetian government.
Lido is an 11-kilometre sandbar island that shelters the lagoon from the Adriatic Sea with beaches, lots of seaside homes, and this is also where the Venice Film Festival takes place.
A restaurant we liked in Venice is Osteria Mocenigo specializing in local cuisine. Try the “Sarde in saor” - a typical Venetian dish made with sardines.
While your vaporetto pass is valid ride the canals at night and watch the Floating City come to life.
