As craft beer market grows, so do wild flavors
(29 May 2019) LEADIN:
Anyone for steak and onion Kolsch? Or a macaroni and cheese pale ale?
Brewers have always experimented, but in the US craft beers are now being offered in a variety of weird flavours such as bacon and egg, double toasted marshmellow and strawberry French toast.
STORYLINE:
The craft beer competition is getting crazy.
Over 7,000 US brewers are battling for their share of the nearly $30 billion USD craft beer industry.
Last year the U.S. had 7,346 craft brewers, up 93% from 2014, according to the Brewers Association, an industry trade group. Craft beer sales rose 7% to $27.6 billion last year, about one-fourth of the total U.S. beer market.
And brewers are constantly coming up with new recipes with unique ingredients to stand out from the crowd.
I think it's exciting, says Beth Wathen, the co-owner of San Francisco's City Beer Store.
I think anytime that you add creative elements to a much-loved beverage like beer, it's fun.
From breakfast beers to dessert beers, many new brews are innovative, others are odd and some sound kind of gross.
Wynkoop Brewing Company in Denver uses grilled buffalo testicles in its Rocky Mountain Oyster Stout.
It's pretty popular, we get a lot of travelers from all over that have heard about it and would like to try it, says head brewer, John Sims.

A steak and onion kolsch.
You can definitely taste the onion. You get a little of that Worcestershire sauce in the back, says taster Andrew Martin.
And a brew made with sushi.
It's shockingly good, actually. It's got a hint of ginger, wasabi and little bit of lemongrass, says taster Leah Whittler.
One brewer, who made a chipotle pepper beer for the festival, says experimentation is important. But the bottom line for longevity is... it has to taste good.
It's got to make you want another one, says Hal McConnellogue from Drake's Brewing Company in San Leandro, California.
If it doesn't, then it's just gimmicky and you're going to be out of the spotlight pretty fast with that.
In this competitive beer landscape, consumers can decide what stays and what goes by putting their money where their mouth is... literally in the case of this beer. It's made with real bits of dollar bills.
