So far, on my big Vietnamese street food journey from north to south, we've had Vietnamese street food in Hanoi, Vietnamese street food in Hue, and now we have made it to Danang. After this, we are going to go for a full on Vietnamese street food tour in Saigon (Ho Chi Minh City)!

HOI AN OLD TOWN, VIETNAM
Canary yellow houses draped in bougainvillea, rickety wooden shops aglow with red silk lanterns, rippling green fields of rice, baskets laden with silver fish: Hội An is a city of Vietnam, on the coast of the East Sea in the South Central Coast region of Vietnam. It is located in Quảng Nam Province and is home to approximately 120,000 inhabitants. Hoi An is redolent of a bygone era, or the 17th and 18th centuries, to be exact. The town features a mix of Vietnamese, Chinese, Japanese and European architecture, and its continued cultural pulse is part of the reason why Hoi An was declared a UNESCO World Heritage Site in 1999. It’s also why tourists come here in droves.
THING TO DEE AND SEE IN HOI AN:
1. Old Town Heritage Ticket - Hoi An is a UNESCO World Heritage listed town so to enter the old town you must now buy a 120,000 VND (about US$6.00) ticket. Each ticket is valid for 10 days. Ticket allows you to choose 5 sights from a list, including historical houses, Japanese covered bridge, family temples, and some craft centers. 85% of the proceeds are to be reinvested in the old town, the money paying for renovations, upkeep, staff and the families that open their ancient houses for viewing.
2. Tailoring Shop – Hoi An is known for tailoring but there is enticing ready-made wear as well. Nothing declares that you’ve been to Vietnam more than pun-tastic, inside-joke T-shirts sporting “Pho-king”, “iPho” or “Pho Metal Jacket”. Load up on Dong, as there are plenty of things that will catch your eyes when it comes to shopping in Hoi An. How can you resist a tailored shiny zoot suit, shoes and bags? Hoi An has everything you never knew you wanted.
3. Cua Dai Beach – Though Hoi An doesn't really market itself as a beach getaway, there are some pleasant stretches of sand located just a hop away. Hoi An's main beach is Cua Dai, located at the end of predictably named Cua Dai Road. Some of the beach is given over to high-end resorts, but the public section is given over to high-end resorts, but the public section is the first part you see where the road meets the beach.
4. My Son Temple – (40kms from town). ½ day by bus to/from; full day going by bus out there, then returning by boat and stopping at a few pottery and art villages (if you aren’t too fussed with shopping in Hoi An, this is a great option).
5. Boat trips - Hoi An provides ample opportunities to get out onto the water. Enjoying some of the town’s many river ways is a must – hire a boat, go for a paddle or take a tour that incorporates the life aquatic.
6. Half Day Cycling Trip – If you limit yourself to Hoi An’s historic town and the beach, you’re missing out. The town’s Thu Bon River has a vast network of islands and islets perfect for two-wheel exploration.

9. Hoi An Central Market - bustling Hoi An Central Market is certainly worth a look for its authentic slice of Vietnamese life. The market is busy throughout the day with locals bargaining hard alongside tourists so it’s best to arrive first thing in the morning. The negotiating over fish usually starts around 7am as the fishermen drop their catch off and the market vendors and local buyers dive in to get the best fish. Be warned that it can get very messy, nevertheless it's certainly a sight not to be missed.

Hi family! Alright...so this overnight train ride to Hanoi was not the most pleasant for me; however, it is still a great way to travel Vietnam. Here are some things I'd recommend you doing if you are considering taking the sleeper train:
-DO bring food & snacks! No food cart rolled around during the entire 16 hour train ride. I kept trying to listen for the wheeling of the cart and even left my door open around dinner time. There was nothing. There was water and hot water though :) Cup o noodles team!
-DO bring jacket, scarf, or sarong that you can wear. It gets COLD at night especially as we get closer North. You can even lay them down if you're afraid of unclean bedsheets.
-DO check the door & lights in your room when you arrive in case there's some kind of malfunction. You may be able to ask the train staff (who come around sometimes) to switch to another one.
-DON'T talk super loudly and be mindful of other passengers in the room. A man ended up taking the berth next to me at 12am and was talking on the phone for a whole hour :/
-DON'T buy your tickets online if you can just get it at the station a few days earlier or even a day earlier! I met a couple of travellers who just showed up that day and booked. It is always cheaper way cheaper at the train station. OR ask your hotel staff to help you book it. Don't go to a tour agency - they'll charge you lots. I was traveling during TET so had no choice but to secure it online. If you're on last resort - check out 12go.asia (the site I use for train & ferry travel in Southeast Asia).
If you don't want to take a sleeper train but still want to experience it, take the Vietnam railway train from Hue to Danang or Danang to Hue. It is a 2.5 hour train ride with breathtaking views of Vietnam's coastline! You can just get a regular seat, no sleeper needed.
While this train ride didn't go so well for me, I know the experience is different for everyone. Take it or not, it's up to you :)! It IS way better than the overnight busses - or so I heard.

MY INSPIRATION | Vuong Anh's Cooking Journey
Ha Giang, the northernmost province of Vietnam.
Deep inside the rocky mountain ranges of Dong Van district.
There are small villages of H’Mong ethnic minority.
Alongside with the breathtaking scenery is the isolation with the world.
We traveled very far to reach the villages. Mountains and mountains of rock. The roads get narrower every turn. Until there are no roads anymore.
My purpose for this journey goes beyond the local food and exciting experience. I was looking for emotions and inspiration.
Sometimes, a simple moment can inspire you for the rest of your life, and this is mine. This is the most memorable meal I have ever cooked. I know that this is just a meal that put a simple smile on their cute little faces, but for me, it’s a huge inspiration.

Since 2011, the community-based tourism project in Yen Duc village has been operated launching the first product, Yen Duc village day trip, and folk song performance. This short trip was designed for tourists back from Halong Bay to discover the village in some hours and enjoy homemade Vietnamese cooking meals in the village. In the following years, more product and service has been introduced: water puppet show and overnight tour.
In 2012, the authentic Viet House accommodation has been built, tourists visiting village had another experience to stay overnight in village, the Viet House is a traditional style house in rural area of Vietnam with comfortable spacious room, surrounded by garden, rice fields and local community, which had changed the Yen Duc village tour to become accessible for longer stay and more unique experience for tourists.
In 2015, homestay service has been added, visitors now can experience the village life with locals, eat, participate in farming and stay as a local in their home. The homestay is truly a nice experience to observe the village life and interact with locals.

Eating Cao Lau and White Rose Special Vietnamese Cuisine found only in Hoi An, Vietnam
For lunch we headed over to a popular Vietnamese restaurant (Mermaid) in Hoi An, Vietnam to try eating two very unique and local delicacies - Cao Lau (Noodles, pork and greens in a gravy sauce) and White Rose (shrimp dumplings sprinkled with roasted garlic). Both of these dishes are said to have originated from Hoi An - a city know for its culinary delights and cultural attractions.
Urban Legend has it that the unique taste of the Cao Lau comes from an unknown water source (from a Cham well) just outside of the city limits. One of the most tantalizing features of this dish has to do with its udon style thick wheat noodles and five spice caramelized broth that accentuates the taste of the chewy pork and fresh greens.

On the other hand, White rose is safeguarded as a secret recipe held by only one family in Hoi An.
These delicious shrimp dumplings are made out of translucent white dough that is shaped to look like a rose and garnished by flakes of garlic and served with a sweet chili dipping sauce.
Known locally as Banh Bao Vac, the name 'white rose' was apparently given by the French. When examining the Vietnamese dish closely it's easy to see how they came up with the name as the outer section certainly could resemble flower petals.
The stories of the secret well and highly guarded recipes certainly adds an element of allure to both dishes. How accurate either of these claims actually are is something I don't personally know. What matters is that I found both dishes to be absolutely delicious and I ended up eating them both several times while staying in Hoi An.
Overall, we really enjoyed this meal which came close to $5 USD (100,000 Vietnamese Dong). When in Hoi An be sure to enjoy trying White Rose and Cao Lau:
Cao lầu is a regional Vietnamese dish made with noodles, pork, and greens and is only found in the town of Hội An, in the Quang Nam Province of central Vietnam. Its unique taste is rumoured to be contributed by the water from an undisclosed ancient Cham well just outside of the town. This rumour is promulgated in a popular guide book and has become something of an urban legend. It is likely that the origin of Cao Lau in Hoi An goes back to the town's history as a trading port. Prior to the Chinese establishment in Hoi An, in the 17th century, the town was also a centre of Japanese trading activity. The famous Hoi An bridge also dates to this period. Cao Lau noodles are clearly derived from Japanese soba noodles. Although there are some who claim that they are Chinese wheat noodles, they are not made of wheat and have a different texture.
White Rose or banh vac in Vietnamese is a dumpling stuffed with shrimp and spices and then steamed in a shrimp broth. The resulting taste is delicate and just a little bit sweet, the dumplings are topped with fried onions giving it a little crunch and saltiness. A foreign tourist coined the name White Rose when he visited Hoi An and enjoyed the dumpling. Restaurant owners liked this name and decided to adopt it. After that, the dumpling started to appear in restaurants under the name White Rose rather than banh vac.
White Rose dumplings are a a specialty of Hoi An and we have not found them anywhere else. It is said that if visitors have not eaten White Rose dumplings they have not yet enjoyed the taste of the ancient town:

I went to my girlfriend's house in Hai Phong for 3 days to experience Tết, which is the Vietnamese Lunar New Year.
I ate some really good homecooked traditional Vietnamese food, got a little tipsy off homemade alcohol, and even tried strong Vietnamese tobacco which tasted terrible!
