This Bak Kwa is On (Charcoal) Fire
Bak kwa, or 肉干 (rou gan), is a salty-sweet dried meat snack similar to pork jerky. The meat snack is cooked over charcoal fire so that when the oil from the meat drips into the charcoal, it produces that smoky fragrance. Bak kwa was brought to Singapore by Chinese immigrants, and has since seeded itself as a must-have snack during Lunar New Year.

Singapore Barbecue: Bakkwa
Bakkwa is immensely popular in Singapore and Malaysia where it is usually eaten during Chinese New Year. When Chinese immigrants brought this delicacy over to Singapore and Malaysia, it began to take on local characteristics. A notable example lies in the preparation of bakkwa, where the meat once still being air-dried is instead grilled over charcoal. This imparts a smokier flavour to the meat. The Singaporean and Malaysian versions of bakkwa are also sweeter than its mainland China counterpart with many different variations adapted to suit the local palette such as chilli bakkwa. -taken from bakkwa's wikipedia page:

- Here's a store in Singapore's Chinatown selling one of our local snacks called bakkwa, a Chinese salty-sweet dried meat product similar to jerky, made in the form of flat thin sheets. You've gotta try it!
