Pad Thai (ผัดไทย)
ผัดไท
Pad Thai (Fried noodles Thai Style) For 1 portion
Preparation time 10 minutes
Ingredients
Rice noodles 1 handful
Chive cut chive into 1 inch 3 Chives
Diced firm tofu 15 dices
Chicken or Prawn 50 grams
Egg 1 egg
Chopped garlic 5-10 cloves
Dry- Shrimps 1 tsp.
Oil 3 tbsp.
Seasonings
Fish sauce 1 tbsp. .
Oyster sauce 1 tbsp.
Sugar 1-2 tsp.
Dark soya sauce ½ -1 tsp.
Tamarind sauce 1 tbsp.
Water 5 tbsp.
Method: cook time 5 minutes
1. In the wok, heat the oil for 30 seconds. Then, add firm tofu and stir until it’s golden.
2. Add chopped garlic and stir for 30 seconds. Then, add chicken or prawns and stir till thoroughly cooked.
3. Break the egg into the wok, let it sit for 30 seconds and scramble the egg.
4. Sliced everything up on the side of the wok. Let the empty space in the bottom.
5. Mix the sauce and water into the bottom and then add rice noodles. Continue stirring by the corner of spatula in one direction until the noodles become softer.
6. Add bean sprouts, chives and dry shrimps. Keep stirring for 1 minute.
7. Serve.
Tips: you can add ground peanuts and chilies powder at the same time when you cook till 6.

Ginger Galangal Thai Ginger : How different | Asia Scenic Thai Cooking School Chiang Mai Thailand
How different between Ginger and Galangal (Thai Ginger)
They both are rhizome spicy. Ginger is quite hot, use for tea or stir fried in Thai Cooking. Thai Ginger or Galangal is quite sweet, use for Tom Yum soup. Coconut milk soup and also the curry paste.
If you can not find galangal, you can not use ginger substitute because they both are totally different flavour.

Thai Food in Chiang Mai Cooking Class & Grandparents Last Day
Hello!! Hey guys! So, my mom and I went to a Thai cooking class here in Chiang Mai, Thailand. We first went to the local market to learn about some of the ingredients we'd be using and then had a walk around the Galangal Cooking School's garden. We made pad thai, papaya salad, soups, and even some mango sticky rice. Yummy! It was really fun to do and to taste all our success. The next day we headed to the mall for a last meal before my parents took off for the states. Warning for my reaction to the world's nastiest fruit towards the end, lol. Can't wait to see you soon!!

Here we are digging for fresh galangal root in our garden. Can you say Galangal? It’s not just one of my favorite ingredients it’s also one of my favorite words! Galangal!
We have a lot of fun making hundreds of short videos similar to this during our class time. Not only do we make movies during our class tour, we take a few photos as well. we have been taking photos of each and every class since our first cooking class. Can you imagine how much media we have created! Not to mention the mountains of Pad Thai! Oceans of Thai Curry! Jungles of Papaya Salad! Making some Thai curry
Thai Secret Cooking School: offers half day and full day classes focusing on local and traditional Thai cuisine. The school is located in PhaPai Village just 20 minutes from downtown Chiang Mai. We pick you up at your hotel in the morning and visit our favorite local market to select some of our key ingredients, then we deliver you to our school, welcoming you with an ice cold refreshment and local snack. Next we are off for a quick tour of the surrounding rice paddies and our organic garden, along the way you will learn some fun facts while harvesting some novel yummies.

Chefs Duangporn 'Bo' Songvisava and Dylan 'Lan' Jones take us on a 1 a.m. visit to Khlong Toei Market, Bangkok's largest fresh market. They then take us back to their restaurant, Bo.lan, which was named in San Pellegrino’s Asia’s 50 Best Restaurants in 2017. Here they show us how to make Young Jackfruit Relish. The jackfruit is boiled for an hour and pounded with dried sheep fish, shallot, garlic, sour tomatoes, dried shrimp paste and galangal, then stir-fried with ground pork. This is served with fresh vegetables and fried pork rind.

Thai Pork Belly Curry Recipe (Gaeng Hung Lay) | Thai Recipes แกงฮังเล
Gaeng Hung Lay is one of the most iconic dishes of Northern Thailand, and arguably one of the tastiest! Pork belly and pork ribs are slowly stewed in a WHOLE bunch of herbs and spices. The result is tender fatty pieces of pork that has been entirely permeated by the rich and aromatic sauce. It is a dish to impress, and though it takes time, most of the process is hands-off!
This dish came to Northern Thailand via Myanmar, which in turn has a lot of Indian influences on their cuisine. This is why there is a lot of spices in this recipe, and you can use Indian garam masala for it as well!

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her playtime in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
