[Hansik of The Day] Korean traditional home meal (평범한 일상, 밥상)
Ordinary daily life
There's a saying that Koreans live off the strength of rice.
People greet each other by asking if they've eaten. Meals are more than just a way to fill an empty stomach — the carefully set table at each meal represents the culture of Korean life, and the Korean spirit.
Icheon, Gyeonggi Province, is an area famous for its rice. The tables here are packed with rice, soup, and various side dishes. In the past, kings were served with dishes made with ingredients from all over the country, and the tables here resemble the royal meals. Why do Koreans lay all the dishes on the table at once?
Since long ago, Koreans have been cooking with local specialty products. In Yang-gu, Gangwon-do Province, the specialty is siraegi, a food ingredient made by drying radish leaves in winter. In the past, Koreans would turn to siraegi to keep them full in hard times. Today it is a versatile ingredient used to make rice, soups, and side dishes.
Today, we explore the Korean table, reflecting Korea's past and present and consistent in its significance for Koreans from all walks of life.

한국인은 밥심으로 산다는 말이 있다.
인사 또한 밥 한번 먹어요. 라고 말할 만큼 한국은 밥을 한 끼 식사 그 이상의 것으로 생각한다. 매 끼니 마주하는 밥상은 지극히 평범해 보이지만 그 안에는 한국의 의식주 문화와 정서가 고스란히 녹아있는 것이다.
경기도 이천, 이곳은 예부터 밥맛이 좋아 왕에게 진상될 만큼 쌀이 유명한 지역이다.
이곳에서는 밥과 국을 비롯해 여러 가지 반찬이 가득 차려진 밥상을 볼 수 있다.
옛날, 한국의 임금 또한 전국 팔도에서 진상된 최고의 식재료로 만든 수라상을 받았는데, 여기에서도 한 상 가득 차린 밥상을 볼 수 있다. 그렇다면 한식은 왜 음식을 한꺼번에 차려놓고 먹는 것일까?
전국 팔도에는 다양한 특산품이 생산되는데 오래전부터 조상들은 각 지역의 특산품과 기후조건을 활용해 다양한 음식을 만들어 먹었다. 강원도 양구는 해안분지로 이곳에서는 무 이파리를 말린 시래기라는 식재료가 있다. 시래기는 먹을 것이 없던 과거, 겨우내 끼니를 해결해주었던 식재료였지만 오늘날에는 시래기를 넣어 만든 밥부터 국, 반찬까지 다양하게 활용한 웰빙 음식으로 재조명받고 있다.

A taste of luxury: Hansik fine dining in Seoul with spectacular views
Korea is one of the countries that have the world’s best food, but the food’s elevation to fine dining is relatively new.
And one of its pioneer Bicena, located at the 81st floor of the Lotte World Tower, the highest building in Korea, uses traditional Hansik methods fused with international elements, giving birth to the concept of Korean fine dining with contemporary flair.
Bicena features Michelin starred authentic Korean cuisine, now with the panorama of Seoul’s downtown skyline as a backdrop. A traditional yet modern atmosphere and plating, meticulously prepared with the chef’s discerning touch, further reflect Bicena’s philosophy to elevate Hansik to suit the taste of a global fine dining audience.

Seoul shines fresh spotlight on Korean cuisine with Hansik Week events

Beginning this Friday, Seoul is putting a fresh spotlight on Hansik, or Korean cuisine.
If you′re in Korea this weekend, there′s a series of gastronomic events hosted by celebrity chefs that will change how you look at Korean cooking.
Our Park Ji-won reports.
Judy Joo is a famous Korean-American chef who has her own TV show in the U.S. and her own restaurant in the U.K.
She used to work as an investment banker, but said she couldn′t resist the charms of cooking, especially Korean cuisine.
Growing up Korean, I′ve always grown up with the flavors of Korea. So it was natural thing for me to gravitate towards Korean food when I chose to go into cooking, and also it′s such an undiscovered cuisine still, I love the flavor, it′s very truthful and honest, there′s no pretension.
Joo is an honorary ambassador of Korean cuisine along with star chef Leo Kang,.. who hosts a famous cooking show here in Korea.
Both celebrity chefs are participating in a series of events as part of the first Hansik Week,... launched to promote Korean cuisine.
At an event for a group of ambassadors′ wives, Kang demonstrated a simple dish from traditional Korean royal court cuisine using ripe red persimmons and bamboo shoots.
Very healthy, and good flavors.
It was delicious, everything here. And it was very well-done.
Korean cuisine uses natural, organic ingredients, and is very close to nature in form and flavor. The Korean food of today is more salty and spicy, but traditional Korean food is very healthy.
The week′s events are hosted by the Korean Food Foundation and aim to give Koreans and foreigners alike a taste of Korean cuisine.
A variety of events, including a cooking competition and a cooking demonstration, will continue until Saturday at the Namsan Hanok Village in central Seoul.

The Michelin Guide has been a guidebook for gastronomic restaurants for over a century, and having your name or your restaurant's name on this guide signifies global recognition as it awards stars for excellence to a selected few establishments.
The Michelin Guide Seoul 2017 has recently announced some excellent restaurants and hotels, and the restaurants La Yeon and Gaon were awarded three stars.
What's similar about the two restaurants is that they serve traditional Hansik, Korean cuisine, which foreign visitors can enjoy.
Gaon is a restaurant which isn't that well-known amongst the public.
The INNERview sits down with Gaon's executive chef Kim Byoung-jin to learn about his principles, his life, and his desire to globalize Hansik.
He dabbled in Chinese and western cuisine, and has been a Korean cuisine chef for 13 years. He concentrates on using seasonal vegetables and in re-creating the natural environment of the ingredients.
The essence of Hansik is to show the native flavor of Korean ingredients, and to draw out the multiple flavors hidden within them.

Miyazawa Sae, a second generation member of AKB48 and a Japanese TV personality and musical actress, visits Korea in order to introduce a special tour.
In the Seoul Episode, she teams up with Korean boy band GreatGuys member Dongwhi. The two travel around the landmarks of Seoul popular with Japanese tourists, and bond while sharing stories about their respective careers as artists.
Sae approaches the Korean viewers with her own unique appeal that made her such a superstar in Japan.
In Episodes 3 and 4, she meets Hyunjun of Korean band IZ, which is mainly based in Japan, and travels around Gangwon-do Province with him. Compared to Dongwhi of Episodes 1 and 2, who had charmed Miyazawa Sae with his gentle and polite
personality, Hyunjun presents himself to be dashing and masculine, proving himself to be a sure win with Japanese female viewers.

She ultimately feels an affection for Korea greater than what she felt for any other country.

I expressed my love for Korea through this video by showing Korea from A to Z. Of course Korea has a lot more to offer besides from what I'm showing in my video. Michelin Guide Seoul brings recognition of Korean food on the international stage

If you want a memorable meal out, you might want to pick up a copy of the famous Michelin Restaurant Guide.
Those guides offer the opinions of food professionals on everything from weeknight dinner to a meal of a lifetime. Just last month, the guide announced its picks for the first-ever Seoul edition.
And, we're no short of three whole stars, all in Korean cuisine.
Critics stress that the listing is not the be-all, end-all of the culinary delights that Korea has to offer. Setting the table to gie us a taste of what Michelin stars mean: Our News Feature tonight with Kwon JAngho
This unassuming restaurant in the heart of Seoul has been attracting Korean and international customers alike for the past 17 years, specializing in a traditional Korean crab dish.
Last month, it was one of the first in the country to be awarded a prestigious Michelin Star.
This is the restaurant's signature dish -- ganjanggejang . It's soy sauce marinated fresh crab made from a special family recipe. And it's this special recipe which the owner reckons landed them in the world's leading restaurant guide book.
Since then even more customers have been flooding in than usual, seemingly unable to get enough of the fresh morsels of crab.
It tastes so good. It's almost creamy, and it feels like heaven in my mouth.
I think it's really very delicious. We always hear about Korean food is a little bit spicy, I think the spicy here is not so over.
I know that ganjanggejang takes a lot of work to prepare, and it's really not easy to make it taste this good. I definitely think this is a very good restaurant deserving of its Michelin star.
Owner and head chef Han Yeong-yong said he had been caught completely off guard by the designation.
He said he had no idea the Michelin inspectors had visited and he was only told that he was on the shortlist shortly before the announcement.
Unlike many of the other restaurants on the list, we are very traditional and I'm still curious about how we were judged. They still haven't really told us. Personally, I think it's our soy sauce that won them over. Other places might be able to get crabs as good as ours, but they can't replicate our sauce.
The Michelin Guide, created by the French-tire manufacturer of the same name, has been reviewing restaurants for over a hundred years.
Its strict and secretive judging format means it's normal for the restaurants not to know when the Michelin inspectors have visited, as they visit anonymously over a period of months.
The inspectors consider a number of criteria such as ingredients, taste, value and consistency.
The restaurants can be then awarded one to three stars, with one star for a very good restaurant and three for one that's worth a special journey.
In this inaugural Seoul edition, 24 restaurants were awarded stars, including two that were awarded three stars.
Gaon is one of the two to receive this highest honor, and joins an exclusive club of only 111 restaurants around the world.
The restaurant serves traditional Korean cuisine but with modern asthetics, and the guide praises their meticulously-prepared dishes, made with fresh seasonal ingredients helping to promote a better understanding of Korean food.
We want to take Korean cuisine apart and put it back together again... so we can simplify it and get to the essence of Korean food. Through that, we want more people to enjoy Korean food. And because of that, I feel even more responsibility to get it right.
The Michelin Guide is available for 28 cities and countries, but having now come to Korea for the first time, the local culinary community had been excited about the prospect of having Korean cuisine recognised on an international platform.
But there has been some criticism that many of the choices come at too high a price point, and are not representative of local tastes.
Critics stress that the Michelin Guide is just that -- a guide -- and there is much more to explore in the realm of Korean food.

ALL YOU CAN EAT Korean Buffet
Today I give you a tour of an all-you-can-eat Korean buffet in Seoul! Nature Kitchen has multiple locations. I've been to the one in Hongdae twice and wanted to try out a new spot for this video. About minute's walk from Gyodae Station, Nature Kitchen serves many types of Korean food such as bibimbap, kimchi, gimmari, tteokbokki, yugwa and more! International fare includes Vietnamese noodles, Thai crab curry and French fries. This is the 3rd video we filmed that day, so I opted on eating moderately rather than consume 50,000 won worth of food. Watch the video to see the munchies unfold :)
