As far as nightlife goes, Beijing can party with the best of the big
international metropoles. So it’s kind of a big deal to emerge in the top the echelon of the mixology lounge scene as Jane and Hooch has.
Owner Warren Pang (a cocktail superstar in his own right) has slung a lot
of perfectly balanced cocktails to earn the position of top bar in town
several years running. Rather than getting fancy with complicated mixology, Warren and his staff focus on getting the classics right with high quality ingredients that don’t mask the taste of the base.
The inspiration for the bar’s décor and general ambience is a unique mix of
Melbourne warmth (Pang hails from Australia) and prohibition era cool. It’s a departure from the flashy on the outside, little substance on the inside style of many other Beijing bars. The focus is simple – good drinks, great service and an upbeat, comfortable vibe – and the crowd is special – sophisticated, tasteful and one that is ex-pat friendly without being an ex-pat bar. Not to mention, the atmosphere lends itself well to warm rendezvous and the downstairs is non-smoking, which is always a welcomed change of pace in Beijing.

Koreans have their Soju, the Japanese their Sake and the Chinese have their Baijiu. If you’ve never drank or even heard of the latter, you’re not alone and may be shocked to find that it’s actually the most sold drink in the world. Primarily consumed by older generations, Baijiu is starting to make its way beyond the boardrooms and drawing rooms of China to the western world.
Capital Spirits claims the distinction of being the world’s first bar dedicated to Baijiu and other hard to find craft liquors. They act as Baijiu historians and educators determined to introduce a new generation to the national drink. And it’s not an easy task given Baijiu’s love it or hate it reputation. Baijiu’s alcohol proof ranges from 40% on the low end to 100% or more – enough to slay seasoned drinkers – so the serving vessel of choice is a petite shot glass.
But if anyone’s going to get Baijiu newbies to learn to love its fire, it’s Capital Spirits. Its Baijiu cocktails are produced by an award winning bartender/mixologist and the timid are invited to sample small sips of baijiu as part of a tasting flight to ease into the practice. Highlights include a snake-infused version from Guangdong, a drink that may serve as more of a bragging point than a repeat order. For the less adventurous, the bar also offers several Baijiu-based cocktails, including a Baijiu sour and a Crab Island Iced Tea, as well as craft liquor and beer.
Even if you’re not convinced that Baijiu’s your drink, Capital Spirits is still worth a visit for its lively, convivial atmosphere and friendly service. And who knows, with its high alcohol concentration, you just may end up wearing Baijiu goggles and falling in love during this indigenous experience.

Mixology elevated to a science at Beijing’s high-rise cocktail bar, Botany.
Not your typical speakeasy, Botany is hidden in an apartment complex and accessible only by friend referrals for appointments directly with the owner and bartender Frankie Zou. What sets Botany apart from other cocktail bars? Everything besides the alcohol – juices, syrups, bitters, garnishes, snacks - is grown and prepared in house. The signature cocktails include the Tokyo Bay – a Japanese green tea-based beverage served with Absolut vodka, Japanese rice, green tea, nori tincture, passion fruit and a shiso leaf chili shred garnish; the Black Truffle Martini – made with Roma bitters, tropical fruit, Captain Morgan’s dark fum, freshly toasted hot spice garnish and black truffle; and the Amortentia – a well-balanced concoction of floral and fruity flavors topped with toasted sesame seeds. In addition to some of the best cocktails in Beijing, Botany provides an intimate environment for guests to appreciate the level of thought, consideration and service that comes directly from Frankie. Not to mention, he usually treats guests to at least a couple surprises during their visit.

Adventures of the Evening: Old Town Central's Top Bars
After a whole day of slurping noodles and cramming dumplings in your face—and, hey, if you did something active, good on you—it’s time for a cocktail. Ok, maybe two. Ugh, fine, you’re going to have between three and five, but it’s only because there are so many incredible spots here, and you had a long day. Secretive speakeasies and skyline views are the name of the game in Old Town, where you’ll find Stockton— a combination of a hunting lodge, dungeon, and world-class whiskey speakeasy, complete with a cigar room and dotted with dark leather couches for maximum lounge-ability. It would be a bad move to skip the Brass Monkey, Stockton’s signature drink made with HM The King Scotch and compressed citrus. But first, you have to find the place (clue: it’s down a dark alleyway and there’s a single lightbulb that tips off the secret doorway). For another, elusive Old Town experience, check out 001. If you can find the black-door and brass bell (and we mean “if”), you’ll find one of the best prohibition style speakeasies in town. Green leather armchairs and plush booths line this basement bar where there are still serious drinks to be drank - we like the dark and stormy. And if you’re trying to feel like you’re in your richest friend’s most aspirational Instagram photo, Sevva is the absolute pinnacle of luxurious drinking.
