How to Make Hong Kong Milk Tea
Hong Kong Milk Tea is the most ubiquitous drink of choice in the bustling south China metropolis and one of the most famous milk teas anywhere.
There is the classic British milk tea, the Teh Tarik and the Chai but for my taste, Hong Kong milk tea is up there with all of them and whenever I am in Hong Kong I have to get myself a cup.
But how can you make Hong Kong Milk tea without a trip over there? In this video, we go through the history of Hong Kong Milk tea and we try to create the perfect recipe for making it at home easily.
To make Hong Kong Fling Milk Tea you will need:
A bright, brisk and acidic chopped Ceylon Loose Leaf Tea
Optional: Empress Oolong (
Optional: Fire Phoenix (
Optional: Jujube Red Dates
Evaporated Milk
Optional: Egg Shell
Saucepan
Jug
To make an iced Hong Kong Milk Tea:
Make the hot tea as in this video but before adding milk, freeze in ice cube holders. When you are ready for an iced milk tea, load up a glass with iced-tea cubes and strain over a small amount of hot tea (or boiling water) – enough to melt most of the iced-tea cubes. Stir well and add more iced-tea cubes if necessary. Add milk (usually with some extra condensed milk for sweetness).

Hong Kong is a remarkable place. It is the gateway to China, with one foot in the East and one in the West, while at the same time being completely unique. It is the epicenter of Asian trade, an economically- and technologically-advanced city where business moves at a blistering pace amidst the graceful plodding of an ancient culture. Nowhere is this more obvious than in Hong Kong's teahouses, called 茶楼, where locals seek respite from the thrum of the city, spending leisurely hours enjoying dish after dish of the snack-sized delicacies known as dim sum 点心. Surrounded by the sing-song chatter of the Cantonese language and the clattering of tiny plates, patrons quench their thirst and cleanse their palates with hot cups of thick, dark, strongly-brewed Pu Er tea. Originally from Yunnan, this tea has become an indispensable part of life in Hong Kong, where locals have developed their own style of processing and aging this fermented tea. This robust and refreshing brew is the centerpiece of the lingering morning meal where dim sum is eaten; it is the unifying flavor that complements all dim sum dishes and the meal itself is called yum cha 饮茶, which is Cantonese for drink tea. When someone invites you to go and eat dim sum, they will say 吃饮茶, meaning eat drink tea.
My favorite teahouse in Hong Kong is a bustling little spot in Sham Shui Po, an area known mostly for its cheap electronics. Their food is outstanding but the thing that keeps me coming back is their remarkable house pu er. I've never had a finer pu er in any restaurant; it is rich, clean, and robust, without any of the muddy or medicinal flavors that can contaminate low quality or poorly-aged tea. It is suitable for gong fu cha but is most in its element brewed casually, in a large vessel, to be enjoyed with a meal with friends.
