Russell Market, Bangalore, built in 1972,has still got the old world charm. Russell is the biggest market for fresh meat and fish in Bangalore. It’s also a great local market where one can get a variety of fruits, vegetables, spices, flowers and garlands.
The market has got the best garlands in the city at very low rates, which attracts affluent customers. Even the Bollywood veteran actor, Dilip Kumar bought his wedding garlands from this market.
The market also offers a large variety of rare vegetables like Chayote, a vegetable that came from Latin America to South India. Chayote is known as Chow Chow in South India and is the main ingredient of all the south Indian kitchens.

Chef Vicky Ratnani introduces an exotic recipe of Stir Fry Chow Chow. Chow Chow, used as the main ingredient is infused with other fruits and vegetables. The ingredients used are:
Oil
Mustard Seeds
Curry Leaves
Green Chillies
Red Chilly Powder
Cabbage
Carrots
Chow Chow
Lemon Juice
Coriander
Salt
Garam Masala
Pear
Green Spring Onions
METHOD:
1. Put oil in a pan and add mustard seeds, curry leaves, green chillies and red chilly powder to it and stir.
2. Now, add sliced cabbage, carrots and chow chow.
3. Mix the ingredients well. Add lemon juice, coriander, salt and a pinch of garam masala.
4. Thereafter, add sliced pear and green spring onions.
5. Transfer the ingredients into a bowl.
6. 'Stir Fry Chow Chow' is ready to serve.
COOKING TIME: 20-25 Minutes

Vicky Ratnani gives some tips to buy fresh leafy vegetables. Make sure there are no holes in the leaves. If there are holes, it means the leaves have been infested by pests. The market also offers red spinach which is called as 'Lal Math' in Maharashtra and 'Chuka' which is a sour leafy green.
Vicky Ratnani recommends sweet potato for kids as it is a natural source of vitamins, iron and carbohydrates. Sweet potato is easy to cook. One can steam or boil it to gain its nutritional value. Dates (known as khajoor in Hindi) from all over the world are also available here.
One can find every kind of fish and shellfish in Russell Market, be it Silver Pomfret, Calcutta Bhetki or Sardine.
Vicky Ratnani tells us how to buy good and fresh crabs. Its shell should be nice and hard, crabs with soft shells are not fresh.
Another recipe by Chef Vicky Ratnani is 'Lamb Stew'. The recipe is a sweet fusion of lamb and dry fruits. The ingredients are:

METHOD:
1. Heat oil in a pan and add cardamom, black cardamom, star anise, cinnamon sticks, maze and bay leaf. Cook the spices until they stop crackling.
2. Add chopped onions and cook till it turns brown. Then add garlic, ginger and lamb to the ingredients and mix properly.
3. Now, add red chilly, turmeric, cumin, coriander and garam masala powder. Add some water and mix well.
4. Add chopped tomatoes, salt, date and apricots. Leave it to cook for 15 minutes.
5. Now add salt, pepper, cream, yogurt, lemon juice and chopped coriander.
6. Cook the lamb for few minutes on low flame.
7. Then add some apricots, dates, tomato and coriander.
8. Put the lamb stew in a bowl and garnish it with mint.
9. 'Lamb Stew' is ready to eat.

I love Saturdays since I go shopping for fish at the Russell Market with my wife, almost every Saturday morning. This weekend it was special since both my children are out of home on a 3 days retreat conducted by Scripture Union. Hence, Ratna and myself spent a relaxed morning today :)

METHOD:
1. In a wok, dry roast peanuts, channa dal, sesame seeds and dried grated coconut. Pour them into another bowl.
2. Add oil, dried red chillies and curry leaves into a wok and mix well. Then add salt, tamarind and jaggery.
3. Now transfer the ingredients into the other bowl and blend them.
4. Pour the blended chutney into a serving dish.
Recipe for Cucumber Fritters:
INGREDIENTS:
Cucumber
Onions
Ginger
Coriander
Curry Leaves
Roasted Rawa
Rice Flour
Salt
Turmeric Powder
Red Chilly Powder
Water
Oil
METHOD:
1. Grate a cucumber, sprinkle salt and leave it for 30 minutes. After 30 minutes, squeeze out the water from the mixture.
2. Add chopped onion, ginger and coriander and curry leaves to it. Mix the ingredients well.
3. Now add roasted rawa, rice flour, salt, turmeric and red chilly powder, water and oil. Mix them well and make small doughs to fry.
4. Now fry the fritters into a wok with hot oil.
5. Put the cucumber fritters into a serving dish with peanut chutney.
Cucumber Fritters with Peanut Chutney is ready to eat.
