Bayou Lafourche, originally called Chetimachas River is a 106-mile-long (171 km) bayou in southeastern Louisiana, United States, that flows into the Gulf of Mexico. The first settlements of Acadians in southern Louisiana were near Bayou Lafourche and Bayou des Écores, which led to a close association of the bayou with Cajun culture. Today, approximately 300,000 Louisiana residents drink water drawn from the bayou.
The name Lafourche is from the French word for fork, and alludes to the bayou's large outflow of Mississippi River water. It was formerly a Mississippi River outlet, but was dammed at Donaldsonville in 1905. The dam cut off nourishment and replenishment of a huge wetland area of central Louisiana. It changed the formerly flowing bayou into a stagnant ditch.
A project to reconnect Bayou Lafourche to the Mississippi River at Donaldsonville is under design. The plan is to use a control structure to regulate the water discharge. The purpose is to mitigate the accelerated land loss that followed the interruption of the distributary flow, and to improve water quality in the bayou.
The bayou is paralleled by Louisiana Highway 1 on the west, and on the east by Louisiana Highway 308. It flows through parts of Ascension, Assumption, and Lafourche parishes.

In the heart of the French Quarter is an early 19th Century apothecary that has been turned into a museum of early medicines and more. I had no idea this place had so many interesting things to see and learn about.

We also talk about John s newly released book, Besh Big Easy, which focuses on traditional dishes that he believes are disappearing from Louisiana dinner tables. We ll also meet several talented chefs at the Blackpot Festival and Cookoff held annually in Lafayette s Acadian Village. This gathering of south Louisiana musicians and cooks draws in more and more attendees each year with its come one, come all hospitality, and is happening again this October 30 31. We ll hear how community outweighed all the competition at last year s cook off. And stir your appetite for roux, rice, and gumbo with author Stanley Dry. Whether it s cooking for home or feeding a crowd of thousands, we ve got a real taste of the state on this week s Louisiana Eats Leroy s Oyster StewServes 6From Besh Big Easy 1 leek, white part, minced 3 cloves garlic, minced 1 tablespoon olive oil 1 large tomato, chopped 2 green onions, chopped Go To Pan Sauce see below Pinch dried thyme 3 dozen oysters, shucked and liquor reserved for Pan Sauce Tabasco Squeeze of lemon juice Salt and pepper Cook the leeks and garlic in the oil in a large saucepan over medium heat until softened, about three minutes. Add the tomatoes, green onions, oyster pan sauce and thyme, increase the heat to high and bring to a boil. Lower the heat to a simmer, add the oysters and cook just until they become firm and their edges begin to curl. Season with Tabasco, lemon juice, salt and pepper and stir to combine the flavors. Go To Oyster Pan SauceMakes about 3 cups The rich flavor of this stew comes from a simple oyster pan sauce. I make it by heating some olive oil in a skillet with a diced large onion, a minced fennel bulb, 4 minced garlic cloves, a heaping teaspoon each crushed red pepper flakes, thyme, and tarragon and 2 bay leaves. We start the day at Fondren Guitar and Patrick the owner gives me a guitar lesson. He taught me how to play a little bit of the blues!
Next we headed to the Barrelhouse to try some craft beers, cocktails and some delicious southern fusion food like their Tuna Poke Nachos which is a nice twist from Japanese and Southern.
We then headed to Babalu restaurant for dinner. This is a mix of Souther fusion food with Spanish food. I had some delicious table side guacamole and the Baba Burger plus a delicious Mississippi craft beer.
Then I hit up Fondren after 5, a block party that takes place every first Thursday of the month. It starts in March through December. Here they have live blues music, craft beers and some bits.
To end the day I headed to Underground 119 to here a blues band and try some more Mississippi food. From Fried Green Beans with Comeback Sauce to Fried Chicken it was very Southern!

From the height of its popularity in the 19th century to its modern revival, absinthe has a long and storied reputation. On this week s show, we learn all about the formerly illicit elixir and those whose ongoing fascination with the spirit has helped transform the discourse and regulations here in the United States. Before false scientific claims and anti absinthe hysteria lead to it to being banned for almost a century, Pernod Fils was the most celebrated commercial producer of absinthe. We speak with Anne Louise Marquis, former Pernod brand ambassador, about the history of the preferred drink among artists, writers, and bohemians. Then, we turn to Ted Breaux, environmental chemist turned absinthe distiller from New Orleans, who explains his pivotal role in the legalization of absinthe in the United States by challenging misconceptions with scientific evidence and a dogged perseverance. Next, we visit Atelier Vie, a New Orleans based distillery that is reviving the absinthe tradition for a new generation of cocktailians. Distiller Jedd Haas puts his modern spin on original absinthe recipes with Toulouse Red, a botanically infused crimson colored absinthe. We also have a conversation with Ray and B.J. Bordelon, whose extensive collection of absinthe antiques and accouterments is on display at the Southern Food and Beverage Museum.
