SUNCHANG, South Korea, Oct. 20 (Yonhap) -- Jang, or traditional fermented soybean paste, is a classical condiment in everyday Korean meals. For ancient Koreans, however, jang was never just an ingredient.
According to the agricultural archive jeungbo sanlimgyeongjae compiled in 1766, Koreans believed jang was the commander of all flavors, meant to be made in harmony with the astronomical order. The archive states, Even with the finest vegetables and meat, a household cannot make a tasty dish without decent jang.

The historical emphasis on slow-cooked, homemade jang has decreased with the rise of mass-produced jang products. Yet, the people of Sunchang have observed the heritage of jang by launching an annual celebration of the Sunchang Fermented Soybean Product Festival.
Hosted by Sunchang County, 364 kilometers south of Seoul, the cultural festival brought together locals and visitors from home and overseas to explore the world of Korean jang. This year's festival ran Oct. 13 to 16 in the Sunchang Traditional Gochujang Folk Village, west of downtown Sunchang. This village, built in the Joseon period (1392-1910) style, has the world's largest cave storage for the sauce.

지난 5월 5일 장류의 고장, 순창에서 새 도약의 장이 펼쳐졌습니다. 4일간 고추장 민속마을 일대를 뜨겁게 달군 순창세계소스박람회. 보는 재미, 먹는 재미가 가득한 그 열띤 현장으로 초대합니다. 강천산의 맑은 물이 아낌없이 흘러 닿는다는 순창군 백산리. 오늘은 구수한 매주내음 대신 알싸한 갖가지 향이 온 동네를 가득 채웠습니다. 부수마다 문전성시죠. 신기한 소스를 구경하는 재미부터 직접 맛보고 장보는 즐거움 까지 눈과 입이 쉴 새가 없습니다. 안녕하세요. 지금 이게 든 게 눈길이 가더라고요, 단순히 간장, 고추장, 된장이 아니라 청양고추와 멸치와 다시마를 갈아서 만든 프리미엄 소스입니다. 바로 먹어도 되는 거죠? 바로 드셔도 됩니다. 너무 맛있죠? 진짜 맛있다. 멸치가 들어간 것 같아요. 바다향이 나면서 멸치가 씹히면서 매콤한 청양고추가 들어가니까 그냥 밥에 슥삭슥삭 비벼 먹고 싶어요. 국내 기업관에 자리한 스물여섯 기업이 선보이는 제품들. 전통 장에 새로운 맛을 더한 노력 끝에 어느 것 하나 평범하지 않은데요. 새로운 맛에 호기심으로 먹고 그 감칠맛에 한 번 더 먹고 인심 좋은 잔칫날 분위기 속 입맛에 꼭 맞는 맛을 찾아 탐방하는 즐거움이 있습니다. 세월의 흐름을 따라서 묵직하고 깊이 있게 익어온 우리의 전통 장. 이제는 변화의 흐름에 발 맞춰 세대와 경계의 문을 두드리는 느긋한 여유까지 깃들어 갑니다.

백산성은 조선 고종 31년(1894) 3월, 동학농민군이 집결하여 전영을 재정비하고, 혁명의 불길을 당겼던 곳이다. 전북 부안 백산 봉기에서 농민군의 편제가 갖춰져 본격적인 혁명군의 진용을 이룬다. 앉으면 죽산, 일어서면 백산이란 신화가 여기서 시작되었다고 한다.
