France: Refugee chefs give schools a taste of something new
While Normandy hosted the prestigious Bayeux war reporting awards festival last month, students in the region were getting a different outlook on world conflict, with a close-up experience with refugees. UNHCR, in concert with the NGO Food Sweet Food and the Calvados department, brought refugees into middle school classrooms and canteens, giving teens a moving encounter with people forced to flee persecution. Macaron Taste Test in Paris
When I think of French desserts one of the first things that comes to mind is macaron. These tiny delectable French delicacies come in an assortment of sizes and flavors. We ended up picking up a package from a small French bakery on our way to a lakeside picnic. The package consisted of 16 macarons (4 each of pistachio, strawberry, almond and coffee) coming in at a rather pricey thirteen Euros. Not surprisingly, we've seen much more expensive packages; however, we usually don't shell out that kind of money for a store-bought dessert. Come just as as we sample each flavor.

Eating Macaron Taste Test in Paris Video Transcript:
So another day in Paris calls for another little Parisian treat. Today we have a box full of Macaron. And if you spend any time on Instagram you've probably noticed that when your friends travel to France they are posting pictures of these sweet little treats because they just look so cute really.
So we got ourselves a box from a little pâtisserie and we're going to be sampling them. And it looks like we've got four different flavors of this one. Let's zoom in. And I can't wait to dig in.
So what exactly are in these bad boy macaroon? Okay, so I'm not much of a baker but I did read up on these. And they are made with egg whites, icing sugar, regular sugar and then some almond powder. And they also use a little bit of food coloring to give them different colours. So as you can see here we've got four different variations with four different flavors.
Well, let's not waste any time. Time for the taste test. So the problem I have is deciding which one to try first. I think maybe I'll try the green one. You know what, it is probably civilized to like nibble on these but I'm going one bite. One shot.
Can you guess the flavor? Just wait. Is that pistachio? Who knows? Maybe. I'm pretty sure it is. And wow are those ever sweet. So tasty and really fluffy and as you're biting in to it surprisingly I wouldn't say crunchy but it has a bit of a crispy exterior.
Alright, so I'm going with the pink one. Look at you just taking nibbles. All civilized over there. Have a look. So that is like a strawberry jam inside. And we have a little visitor.
Hey, puppy. Hi, puppy. Oh, what do you see? Hahahahaha.
No!
Now that has to be the funniest. That is not even. Is that a photo or video bomb? Dog bomb! That dog was trying to steal my food. Dog bomb.
Alright, so where were we? Well, I ate the strawberry before the dog took it away. So let's try another one. Let's go with this one.
What is this? It must be vanilla, no?
Coconut?
Almond. Almond? Seriously? That is almond, yeah.
Show a close-up of that. It has a nice little jam in the middle.
As you can see the biscuit part is really fluffy. It does have a crispy exterior but it is super moist inside.
Alright, last but not least I think we have maybe a brown chocolate one here.
That's not chocolate. Can you guess what it is? Coffee? Ah, bingo, coffee.
That has a really strong coffee flavor. I think that is actually my favorite one.
So macarons are not exactly the cheapest dessert you can have. We've seen them over 20 Euro before. The pack we picked up which was 16 cost 13 Euros. And we've already ate half the box so we've had a bit of an expensive dessert but that is okay. We'll take the rest home and have it later.

Following the success of the thirdGoût de France / Good France event last year, it will be held again all over the world to celebrate French Gastronomy. Good France /Goût de France will hold its fourth chapter worldwide on March 21, 2018, with the hope that the event becomes an annual celebration of French food globally each spring.
Good France, which is organized at the initiative of Chef Alain Ducasse and the Ministry of Foreign Affairs and International Development, highlights the art of French living and its local produce.

Croissant Recipe – Make 3 days ahead. Yield: 14 ea x 2.8 ounces (80/85g) Croissant
Dough
1.2 lb. (500g) all-purpose flour
0.5 ounce (15g) instant yeast or 1 ounce (30g) fresh yeast
2 tsp (12g) salt
1/4 cup (50g) sugar
1.1 cups (250g) water, 54ºF (12ºC) on Summer time 84ºF (28ºC) on Winter time
100g butter, room temp.
Butter for Tourage
250g butter*, room temp
Make a 6x6-inch (15x15cm) butter slab using parchment paper or ziploc bag; chill.
*Use the best butter available such as Kerrygold.
Method
Mix all ingredients together on low speed until combine. Increase speed to medium (2nd) and mix until dough will pull away from the sides of the bowl; scraping sides of the bowl as it goes. It should take 8 minutes. Transfer dough in a oiled plastic container, cover with a wet towel or oiled plastic wrap and let rise in a warm area. When the dough has almost tripled in size, turn out onto a lighlty floured work surface or none, punch down the dough – shape into a tight ovale form, flaten and freeze 20 min on each side uncovered – keep refrigerated. Meanwhile, leave butter slab out at room temp for 15 to 30 min; it should be at the same consistency as the dough; firm but supple.
Folding Process / Lamination (Tourage) Give one double turn + one single.
Double turn (Tour Double):
Roll out dough into a ≈6x15 inch (14x35cm) rectangle. Place butter slab in the center and fold the sides over to enclose the butter (do not overlap dough). Seal and roll out into a long and narrow strip ≈6x27-inch (15x70cm) keeping all edges as straight as possible. Begin rolling from the center of the dough towards the edges, and not from one side of the dough all the way to the other side. This technique helps to keep the dough at an even thickness. Always brush out any excess flour before folding.
The left edge is folded in to meet the last third on the other side, then the right third is folded in then close like a book. Flaten; wrap up and refrigerate 30 min or more to rest.
Single Turn (Tour Simple):
Roll out dough (seams set from noon to 6) into a 6x27-inch (15x70cm) strip and fold like a business letter fold (if the dough resist chill it to rest 15 min more). Wrap up and let rest 30 min or more. Roll dough (seams set from noon to 6) into twice its size, cut laminated dough (paton) in half and refrigerate for 10 min. Roll out one half at the time into a 7-inch (18cm) x0.16-inch (4mm) thick rectangle – cut out 7 croissant or 8 chocolate croissant. Repeat with remaining dough. Arrange croissants onto a baking tray and brush with egg-wash – freeze one night (it strengthen the gluten). Space out frozen croissants into 2 trays and let thaw overnight in the refrigerator. Tent thawed croissants with plastic wrap and let proof in a 77/84ºF (25/29ºC) area for about 2 hours or 6 hours at room temp ≈ 68ºF (20ºC). Egg wash a second time and bake.
If using a conventional oven:
Preheat oven to 400ºF (200ºC) and bake croissants and pains au chocolat for 18 to 20 minutes. Remove from baking tray and transfer to a cooling rack.
If using a convection oven:
Preheat oven to 375ºF (190ºC) and bake for 15 to 18 minutes.
