RECIPE FOR GAENG PHED PED YANG (Thai Grilled Duck Curry)
INGREDIENTS
- Thai basil – 4 leaves and 1 branch tip (for garnish)
- 1/2 cup of Thai eggplants (Thai green aubergines), chopped
- 1/2 cup of Thai pea eggplants, whole
- 1/2 cup of chopped pineapple
- 1/2 cup of chopped cherry tomatoes
- 1 kaffir lime leaf, quartered
- 1 inch of chili pepper, sliced
- 1 duck breast, grilled and sliced
- 350 ml coconut milk, reserve 1 tspn for garnish
- 1 tbspn red curry paste
- 1 tspn palm sugar
- 1/2 tspn white sugar
- 1/2 tspn salt
- 1 tspn stock powder
- 200 ml water
METHOD
1. Pour the coconut milk into a wok or saucepan and simmer for 2 minutes, stirring constantly, until the coconut oil begins to separate out and it becomes fragrant.
2. Add the curry paste, stir in until dissolved and simmer for 2 more minutes.
3. Add 100 ml of water, stir in and simmer for 1 more minute.
4. Add the Thai eggplant and stir for 1 minute.
5. Add the Thai pea eggplant and stir for 1 more minute.
6. Add palm sugar and stir till dissolved.
7. Add the pineapple and mix in.
8. Add the salt, white sugar and stock powder and mix in.
9. Add the cherry tomatoes and mix in.
10. Add the kaffir lime, 100 ml of water, mix in and simmer for 3 minutes.
11. Add the duck breast and mix in.
12. Add the basil leaves and mix in.
13. Serve into a bowl and top with 1 tspn of coconut milk, chili pepper and tip of Thai basil branch.
14. Serve with steamed rice and enjoy.
Din Daeng Noi is about 15 minutes from Ao Nang and 20 minutes to Krabi Town.

Recipe for Pla Kapong Thot Nam Pla (Fried Barramundi with Fish Sauce)
Ingredients for the fish:
1 butterflied barramundi
1.75 Tbsp fish sauce
1.5 tsp palm sugar
2 Tbsp chopped coriander leaves
Oil for frying.
1. Heat the oil over a medium heat until the oil sizzles when the fish is placed in.
2. Fry the fish for 7 minutes on one side.
3. Turn the fish over and cook for 5 minutes on the other side, until golden and crispy.
4. Remove the fish and drain.
5. While the fish is cooking heat the fish sauce in a saucepan over a low heat.
6. When the fish sauce is hot add the palm sugar and mix to dissolve.
7. Drizzle a little of the palm sugar/fish sauce mix over the plate.
8. Place the fish on the plate and drizzle the remaining sauce mix over the fish.
9. Sprinkle the chopped coriander over the fish.
Ingredients for the sauce:
2 Slices of sour mango (Cut into matchsticks)
1 Red and 1 green chili (Sliced)
3 Thai red onions (Sliced)
2 Tbsp fried peanuts
2 Tbsp lime juice
1 Tbsp fish sauce
1 Tbsp boiled water (cooled)
½ tsp white sugar
1. Mix the lime juice, fish sauce, water and white sugar.
2. Add more of any of the ingredients to just flavor to taste.
3. Add the mango, chili, onions and peanuts and mix through.
4. Serve with the fish.
Din Daeng Noi is about 15 minutes from Ao Nang and 20 minutes to Krabi Town.

Amazing Red Lotus Lake in Thailand
Lotus Flower Lake is a marvelous natural surprise in Thailand’s northeast which is so popular for rice farming region and is about 45km south east from the Udon Thani ring road, at Lake Nong Han on the banks of Ban Diam, in the Kumphawadpi Reserve.
