Topfen Palatschinken – Die besten Rezepte Österreichs – Urlaub in Österreich
Die österreichische Küche ist vielseitig und hat für jeden etwas zu bieten. Egal ob das klassische Wienerschnitzel, Käsespätzle füt Vegetarier oder die Sachertorte als Nachtisch. Für die Topfen Palatschinken benötigen sie:
• 50 g Mehl
• 1/2 dl Milch
• 1/2 dl Vollrahm
• 3 Bio-Eier
• 50 g Nussbutter
• Abrieb 1/2 Zitrone und 1/2 Orange
• 10 g Zucker
• 1/2 Vanilleschote
• 1 Prise Salz
• 175 g Butter
• 6 Eigelb
• 100 g Kristallzucker
• 80 g Vanillepuddingpulver
• 300 g Sauerrahm
• Mark 1/2 Vanilleschote
• 700 g Topfen
• 6 Eiweiß
• 75 g Puderzucker
Zubereitung:
Palatschinkenteig
Mehl, ½ dl Milch, Vollrahm, Eier und Nussbutter miteinander vermischen. Den Abrieb von ½ Zitrone und einer ½ Orange sowie Zucker, das Mark der Vanilleschote und Salz dazugeben. Nach und nach 1½ dl Milch unterrühren. Teig durch ein Sieb giessen, ruhen lassen. In einer leicht gefetteten Pfanne, die hauchdünnen Palatschinken beidseitig goldgelb ausbacken.
Topfenmasse
Butter, Eigelb, Kristallzucker, Vanillepuddingpulver, Sauerrahm, Salz, den Abrieb von ½ Zitrone und das Mark ½ Vanilleschote sehr schaumig rühren. 700 g Topfen (Quark) unter die Butter/Ei-Masse rühren. 6 Eiweiß mit 75 g Puderzucker zu Schnee schlagen und unter die Topfenmasse heben.
Für den Guss
Eigelb, Eier, Zucker und Vollrahm zusammenmixen.
Die ausgebackenen Palatschinken mit der Topfenmasse füllen und eingerollt in eine feuerfeste, mit Butter ausgestrichene Form geben. Mit dem süßen Guss übergießen und vorsichtig mit Alufolie bedecken. Bei mittlerer Hitze im vorgeheizten Backofen bei 160 Grad 20 min backen. Mit Puderzucker bestäuben.

Yes. As Mel Brook's once said, It's good to be King. But, if you can't be King, what's wrong with being a Prince in the Seventeenth Century? Obviously nothing as proved by Hellbrunn Palace built as a summer pleasure palace by Salzburg's Prince Archbishop Markus Sittikus von Hohenems.
After a fun tour of the trick fountains (Wasserspiele), Steve and I entered the Palace to tour the ornate rooms using an audio headset included in the entrance price of 10.50 Euro per adult.
Only an Archbishop was allowed to have the best and rarest of everything (including the ugliest dwarf); epitomized by his collections and separated into separate rooms, e.g., Flora, fish, curious oddities, etc. Only 10 actual rooms are open to the public but what...a...place!

Karlskirche (St. Charles's Church) is a baroque church located on the south side of Karlsplatz in Vienna, Austria. Widely considered the most outstanding baroque church in Vienna, as well as one of the city's greatest buildings, Karlskirche is dedicated to Saint Charles Borromeo, one of the great counter-reformers of the sixteenth century.
