Bendigo - Food & Wine Fossicking Part 1
Hayley Davis is part of a passionate group of central Victorian foodies bringing the Bendigo Community Farmers' Market into the city's cultural heart each month. She says here you'll meet the growers, makers and bakers first hand and gain a real understanding of where your food comes from. And in this case, it's all local.
Sonia Anthony, of Masons of Bendigo, likewise embraces a rich food bowl of producers -- much of what you'll find on the Masons' menu is sourced locally -- think micro herbs, free range pork, apple cider and silky goats' cheese. Masons shares a precinct with the amazing Bendigo Wholefoods. As this fresh food store's owner Darren Murphy says, you won't find anything like it anywhere else...

Gold Fever - The Incredible Journey
When gold was discovered in Ballarat in 1851, it seemed that overnight the workers of Australia had gone AWOL – farms, building sites, ships, police barracks, government offices, shearing sheds – all were deserted.
Australian and human history is entwined with the desire for gold, but perhaps we should focus on a different kind of treasure. Did you know that your heart will always be where your treasure is? Watch our Gold Fever program here to learn more.

Limestone Track Vineyard: Cellar Door & Winery Tour
Please Share :)
Commissioned video for Limestone Track Vineyard. The vineyard was established in 1989 by John and Judy Burford and family. It is situated amongst picturesque rolling hills just off the Midland Highway north of Mt Franklin between Daylesford and Castlemaine. First plantings were Cabernet Sauvignon in 1989, then plantings of Shiraz in 1990 and 1991. Further plantings of Merlot, Tempranillo and Chardonnay were added in later years.
All the fruit from the vines is handpicked at the desired sugar levels and using traditional wine making methods we consider the wines can truly be classified as hand crafted. The care given to our vines all year round and the adoption of organic vineyard practices combined with the attention to detail during the wine making process, ensures that for all wines every drop will be enjoyed.
The small tasting room boasts breathtaking views to Mount Tarrengower and adjacent views of the upper Loddon state forest. Visitors are made welcome to enjoy an intimate tasting of our wines and a brief history of the vineyard and the surrounding area.

SUMMARY
=======
Head cheese or brawn is a cold cut that originated in Europe. A version pickled with vinegar is known as souse. Head cheese is not a dairy cheese, but a terrine or meat jelly made with flesh from the head of a calf or pig, or less commonly a sheep or cow, and often set in aspic. The parts of the head used vary, but the brain, eyes, and ears are usually removed. The tongue, and sometimes the feet and heart, may be included. It can also be made from trimmings from pork and veal, adding gelatin to the stock as a binder.
Head cheese may be flavored with onion, black pepper, allspice, bay leaf, salt, and vinegar. It is usually eaten cold or at room temperature.
Historically, meat jellies were made of the cleaned (all organs removed) head of the animal, which was simmered to produce stock, a peasant food made since the Middle Ages. When cooled, the stock congeals because of the natural gelatin found in the skull. The aspic may need additional gelatin, or more often, reduction, to set properly.
