Welcome back to Scotland! Today we wanted to learn more about why Scottish whisky is so well known, so we head to Dewars Aberfeldy for a distillery tour and tasting with chocolate pairings and what a day!
Whisky from Scotland is world renowned and we can understand why now. The distillery tour was eye opening to see how meticulous the process is and the love that goes into every bottle. We're honestly not big spirit drinkers but Dewars definitely positioned their distillery tour and whisky tasting to us in a way that was much more approachable - with chocolate! It's crazy how much the chocolate changes the profile of the whisky and now we're both a lot more open to whisky.
Having all the notes listed in front of us helped with the tasting as well, to an untrained drinker (us both haha) we really feel like our eyes are open to whisky now and will be looking for the Scottish magic around the world.

As our time in Scotland comes to an end we can't help but feel so impressed, blessed and in love with this country! Fife in particular has blown us away with it's beautiful seaside villages, huge list of things to do and so much going one - not something always associated with the UK.
St Andrews is so much more than just the home of golf - it's got a very special presence and some incredible tales about it's church, cathedral and St Rules Tower as well.
Scotland has definitely been kind to us with the weather, we've had 95% sun during our time in Fife! That's far from normal, but any chance to explore St Andrews in the sunshine is a win in our books. New Dalmunach Whisky Distillery in Speyside
The new Chivas Brothers Dalmunach Distillery in Speyside officially opened this week.
The new Dalmunach Distillery takes its name from a nearby pool in the River Spey on whose banks the new facility sits. Situated on the site of the former Imperial Distillery which was mothballed in 1998, Dalmunach has been built using the latest innovations and environmental expertise such as heat recovery technology. It is the most energy efficient distillery within Chivas Brothers’ portfolio, with a 20% efficiency improvement over traditional distilleries. Chivas Brothers recently won The Sustainability Award at The Drinks Business Green Awards with Dalmunach praised for its design efficiency.
Dalmunach is capable of producing up to 10 million litres per year, which places it amongst the top six producing Scotch whisky distilleries by my calculations. Much of the Speyside style spirit which it will produce will no doubt find its way into the Chivas Brothers portfolio of blended whisky brands, which includes Chivas Regal, Ballantine’s and Royal Salute, but I am sure we will see a Dalmunach single malt at sometime in the future but that wont be for a good few years.
Chivas tells me that element of the distillery design, including the unique still shapes, has been geared to producing the very highest quality Speyside malt whisky with a rich, fruity character, a vital ingredient to the highest quality blended Scotch whiskies.

One of our favourite days in Scotland! Today we're at Highland Safaris Aberfeldy to feed red deer and cruise on Loch Tay. Then we see some Highland Cows, how Scottish can we...⬇ More Below ✈
While this is sadly one of our last days in Scotland and Perthshire as a whole, it's definitely one of the most random and fun days we've had! Highland Safaris in Aberfeldy is showing us an incredible time in this vlog, we hope you love it as much as we did/do. Feeding red deer, boat cruise on Loch Tay, meeting some horses and highland cows all in one video! Is it THE best day? OK that's hard to pick in such an epic country but it sure was a stand out.
We start off with a boat cruise on Loch Tay with Loch Tay Safaris. Loch Tay is really a uniquely shaped loch and has the deepest spot in Perthshire right next to the tallest mountain - very cool to see.
Off to the main Highland Safaris Aberfeldy centre and we're feeding red deer! Seeing the red deer so close and learning more about them was absolutely incredible. Highland Safaris has all sorts of other activities on site we wish we could have checked out, worth a look for sure.
Thinking the day was over at this point, but we checked into the Old Manse of Blair and were offered the chance to go up the road and see some highland cows - you'd have to be crazy to say no to that. Highland cows are the best, as Stace mentions, they look so emo with their fringes ????

WINTER WARMERS WITH A FESTIVE FLAVOUR FROM BARS ACROSS THE UK
Mulled wine, warm spiced cider or a hot toddy have long been a British staple during the long winter months.
Whiskey expert Ross Dennis at Dewar's Aberfeldy Distillery explains that in fact the hot toddy dates back to Scotland in the 1800s.
The first mention of what we now think of as a hot toddy comes about in the 1780s. We think the name hot toddy comes from the Todian Well….an ancient water source in Edinburgh.
The traditional recipe mixes honey and hot water with a shot of whiskey and a squeeze of lemon and a cinnamon stick and orange slice to finish.
In the 18th century it would have been a very common thing to mix whiskeys with other ingredients to make it more palatable. They didn't have the same cask management that we have today so they wanted it to be easier to drink. Dennis continues.
Whilst the traditional hot toddy is still popular today, many cocktail bars now offer their own seasonal winter warmer.
Here are five examples from London's cocktail scene plus plenty of tips for the home mixologist.
If you're looking for a nostalgic Christmas glow, rewind to the seventies at kitsch seasonal pop-up 'Miracle' transported from New York to the Henrietta Hotel in Covent Garden.
Surrounded by garish festive cheer, you can enjoy a 'Bad Santa' served in a winking Santa mug.
So it's based on rum, bar manager Nico Brulin explains. There's a bit of Arak, which is kind of like variation of sugar cane. We do a date infused oat milk and spiced vanilla syrup and also some black chai tea. So it's like totally Christmas vibes, all the flavors you can find in one drink.
He adds, that the smell of the spices will have you 'feeling like a kid again'.
If you're after an all-together more sophisticated tipple, head to the atmospheric art deco basement bar, Manetta's Bar at Flemings Mayfair. Established as a hotel in the 19th century, the bar became a glamorous hangout for arts and literary figures in the thirties.
Bar manager Pasquale Ferrillo makes an upmarket and extravagant version of the 'Wassail,' traditionally a hot mulled cider drunk at Christmastime in Medieval England to ensure a good harvest the following year.
I use cinnamon, fresh ginger, cloves. They bring, in my opinion, some nice Christmas atmosphere, you know, and some sweetness to the cocktail. Plus, of course, we use apple juice as well…And we serve it in combination with cognac.
Award winning Soho cocktail bar Swift is serving a mulled wine with a difference this season with its Warm Winter Bishop. Mulled wine was created by the Romans in the 2nd century, who then spread it across much of Europe. This modern take adds an extra blast of flavour.
We thought we'd do a bit more of a richer, more alcohol full one with bourbon, chestnut, orange and red wine. We added a little bit of chocolate as well, senior bartender Sam Ameye explains.
He uses a Malbec red wine and feels the addition of a bourbon whiskey works well to enhance the flavors.
It's that kind of spirit that, because it has such rich caramel grainy flavors, works really well with it being heated, it with nutty. And, you know, we use Chestnut in it, so it works pretty well with that. Yeah. So, we decided to go with it.
The top is garnished with marshmallows, pistachios and coconut to enhance the flavors that you find inside the drink.
