Tour of the Guy Absinthe Distillery in Pontarlier France
Established in 1880 the Guy Distillery started Making Absinthe in 1880. In 1915 Absinthe production was banned in France and the Maison Guy repurposed their stills for production of brandy and Anise based spirits. When the ban was lifted ten years ago they started producing absinthe again using the same stills from the late 1800s.
Paul takes us on a tour of the distillery where you can see these 100 year old stills in producing Francious Guy Absinthe - the most award winning Absinthe on the market today.

The Making of L'Artisanale absinthe, Pontarlier, France April 2006
In the spring of 2006, six friends and a couple of strangers met in Paris and traveled by train to Pontarlier, near the Swiss border. The goal was to make an exceptional absinthe using the old methods of distillation and coloring.
The project was a success!
I was lucky enough to be invited along to document the process. I assembled this short slide show with the help of Dave Hezlep who scored the soundtrack.

Beaucoup de public, ce premier week-end d'Octobre pour rencontrer la Fée Verte lors de la 16ème édition des Absinthiades à Pontarlier.
Un large programme était prévu cette année encore, avec notamment le marché des collectionneurs et le concours de dégustation ouvert aux professionnels, aux VIP et aux amateurs, sans oublier les remises de médailles et les visites de distilleries.

A dose of Emile Pernot Vieux Pontarlier using a vintage Perrenod Spike Brouilleur and a Sand-molded Reservoir Glass. The Spike Brouilleur creates a fabulous glass of Absinthe - the louche is much different but the fragrance of the beverage with the absence of agitation, that is present with a standard dripper, is incredible. This glass was enjoyed with the featured Casa Fuente cigar. Original Music Composed, Performed and Produced by The Absinthe Twins.

The tasting room, to open in late winter, will be host to events such as murder-mystery parties, breakout rooms, and live jazz.
If our tasting room is funded, we will then use additional funds to scale production and distribute our products across the United States and into select foreign markets through storefront and online retail outlets.
Part of our scaling involves the adoption of water-saving technology so that our production can scale with increasing sustainability.
If all of these fundraising goals are all met, we can hire a CTO (Chief Technology Officer) to manage and develop our worthless crypto tokens in order to give them value and utility. If you contributed to the startup and are a token-holder, this could mean increased value for you. If you are not a token holder, but drink booze, this is still good for you because the development of a blockchain-based token in the distilling industry will decrease friction within the supply chain, and will result in a lower price for you, the end customer. If fundraising is successful, you and Bryce Distillery will be at the forefront of this movement in the distilled spirits industry.
We use only whole, raw herbs for our absinthe production, many of which are grown with love in local Missoula gardens.
Our small location and limited budget does not afford us the ability to create our own neutral spirits, at least not yet. We are, however, excited to be partnering with Dry Hills Distillery in Bozeman, Montana, who uses all Montana-grown grain to make neutral spirits for us.
Once production ramps up, we will use our connections with in-state orchards and vineyards to create fruit spirits that will be used as the base for future batches of absinthe and more.
With our combined experience in absinthe production from the United States, France, and Switzerland, our two distillers support the tradition, history, and craft of absinthe. Bryce Distillery promotes the enjoyment and appreciation of the fine spirit and the thoughtful, creative atmosphere that it brings to any occasion.
