COOKING THAI FOOD AT A FARM IN CHIANG MAI, THAILAND
We love eating Thai food so we decided we'd try our hand at learning how to cook our favorite Thai dishes at an organic Thai cooking school just outside of Chiang Mai, Thailand located in the scenic and peaceful Thai countryside. We learned how to make Thai green and yellow curry paste; Thai cashew nut and vegetable stir fry; Thai spring rolls; Tom Yum soup with shrimp; Thai coconut curry, Pad Thai and Thai Mango Sticky Rice.

You know we love to eat, so today we've signed up for a cooking course where we're going to learn how to make some of our favorite Thai dishes. Right now we're at the local market, so we're just going to be walking around picking out some of the ingredients we'll need today for the class. Let's have a look.
Judging from the amount of cooking videos we make you'd probably think that we're constantly in the kitchen and that we always like to cook. That couldn't be further from the truth. Most of the time when we're on the road we eat out, so this is actually kind of an excuse to get into the kitchen and cook and to actually try and make food because normally we don't do that.
We have now arrived at the Thai Farm Cooking School. We drove about seventeen kilometers outside of Chiang Mai and it is a completely different world out here. We're just surrounded by nature and an organic farm. We're actually going to be picking a lot of vegetables from here.
We had a choice between doing the cooking course in the city or going out to the countryside and I think we've made the right decision.
Now clean rice already.
Please come inside. I would like you to pick by yourself the whole leaf basil.
I'm making my Yellow curry paste. Pound, pound, pound! Harder! Faster! Stronger!
So Sam is lagging a little behind right? Come on. Master Chef here - look at that. Perfection. No, I really am lagging behind, I better hustle up.
I'm making a yellow curry today. This is mine. This is what I created and Sam went for the green curry, so this is his. And I'd like to point out I don't think he did a very good job. Oh, that just fell in there. What is this? Whatever. Total chunks. You get an F!
Alright, oh! It's boiling! It is not supposed to boil.
We're making the Tom Yum soup. Mine is going to have shrimp and I've got my coconut milk here, so I'm going to be adding some ingredients - mushrooms, onions.
I'm ready to try fine creation. This is my Tom Yum with shrimp. Let's see. I made mine really sweet. I think maybe I put in to much sugar but it is kind of nice and creamy because I used coconut as a base. You need to add more salt or fish sauce then. Mine does need more salt. How is yours?
You look like a farmer drinking soup. I'm keeping this hat I swear. I'm quite happy with mine. I put quite a bit of salt in it and I also put fish sauce.
I'm making my Yellow curry now. I'm just stirring the coconut milk. I put in the curry paste I made earlier.
I was wrong about this dish. It is not a stir fried rice. It is just a vegetable stir-fry. It's really good. I made one with chicken and string beans and mushrooms and here is my yellow curry with potatoes and pumpkin. Is it good? Uh-huh.
We saved the very best for last. Here we have our favorite Thai dessert - Mango Sticky Rice - and it has some deep fried Mung Bean on top. It is crispy. This is going to be good. Alright, let's check out that first bite. It is nice and coconut-y and it is amazing.
So overall that was a really cool experience learning how to cook Thai food. I made five different dishes. I'm beyond full. Like I feel like I'm ready to hibernate now.
So this was 1100 Baht. It was like lunch and dinner and the thing I really liked about this particular school was that it was out in the countryside where we were able to get outside of the city and away from the pollution and whatnot and just have a really cool organic cooking experience:

Quick & Easy Congee | Jok | Rice Porridge - Thai Breakfast Recipe - โจ๊กหมูสับ แบบง่าย
One of the most classic breakfast dishes you can find in Thailand is congee or jok. Congee is originally Chinese, but the Thai version has its own unique style namely we use jasmine rice for more aromatic porridge, and we always add tender, delicious pork meatballs.
This version I'm showing you uses leftover rice, and is super quick and easy and cooks in 15 minutes!
For the traditional long cooking method for congee, see this video:

Shrimp Paste Fried Rice Recipe ข้าวคลุกกะปิ - Hot Thai Kitchen
If I were to have one last meal, this would be a serious contender for that meal. Shrimp paste maybe an acquired taste right out of the jar, but mixed with the sweet pork and fresh veggies and lime, it's an incredible combination!

Thai Golden Cups (Kra-Thong-Thong) is one of the easiest appetizers I have made and very popular not only back in Thailand but popular as an entrée with Thai restaurants throughout the world.
Once an appetizer only for royalty and the well to do it now populates many markets and street stalls throughout not just Thailand but much of South East Asia where the different regions have their own twist on the delicious filled fried pastry.
Today Warattaya Smith creates a beautiful appetiser, Thai Golden Cups (Kra thong thong)

Finger Dining & Royal Thai Cuisine in Bangkok - Ruen Mallika
In this video I visit a friend's restaurant, and a very unique dining experience in Bangkok! Ruen Mallika, located in Sukhumvit Soi 22, is a Thai restaurant that serves royal Thai cuisine with elaborately decorated food fit for royals! What's more is you can even rent a Thai outfit and order from the finger dining menu to get the full experience. The building is actually an old traditional Thai wooden house that is over 200 years old!
This isn't some gimmicky, touristy stuff though. The food is legitimately delicious and well executed. This restaurant is recommended by the Michelin Guide, and its sister restaurant (the regular, non-royal version of this place) has been my family's regular place for years. The price is reasonable, it's not cheap but definitely not super expensive, about standard for this class of restaurant in Bangkok. The portion sizes are generous (which is not the case for many BBK restaurants) so I think it's a good deal.

Caramelized Thai Basil Mushroom | Appetizer | Fine Food
Fine Food is a food channel that aims at making fine food approachable to food lovers who love to cook and entertain.
Often the thought of cooking a restaurant quality dish terrifies food lovers. Fine Food makes it easy for its viewers to cook such restaurant quality dishes with simple step by step instructions.
We welcome you to come experience the joy of fine cooking, eating and entertaining with us.
The above recipe is a first in the appetizer series . It's a simple modern thai one bite dish made using easily available ingredients and is plated in soup spoons adding an elegant and refined touch .
The recipe has 3 components :
1. The caramelized mushroom
2. The chilli peanut crumble
3. The curried aioli
The mushrooms need to be marinated in a refrigerator for the flavour to set in .
The chilli peanut crumb can be made ahead and cling wrapped.
An aioli is basically fragrant mayonnaise . Here we flavour it with thai red curry paste and kaffir lime leaves to give it flavour depth and kick. This too can be made ahead and cling wrapped and refrigerated for later use.
When cooking the mushrooms in quantity cook in batches as crowded mushrooms release water and they lose their flavour.
Finally we use kaffir lime leaf slivers to garnish , giving it a strong contrasting character.
So what are you guys waiting for ? Go ahead and make this stylish dish and charm your family and friends and don't forget to like and subscribe this video as well!
Good luck !

Bangkok Street Food: Crispy Rice Salad (ยำแหนมข้าวทอด) - The Lady Selling, NO GOOD!

In this Thai street food in Bangkok video, I went over to Sriyan Market (ตลาดศรีย่าน), one of my favorite local market areas on Bangkok, and tried a legendary version of crispy rice salad with soured pork, called yam naem khao tod in Thai (ยำแหนมข้าวทอด). But before that stall opened, next to this Thai street food stall is a stall selling amazing haw mok (ห่อหมก), Thai fish custard.
Mae Boon Ma Haw Mok Pla Chon (แม่บุญมา ห่อหมกปลาช่อน)
Let’s start with the Thai fish custard (ห่อหมก). This is one of the Thai dishes that can be really good, or not too good if it’s made taking shortcuts and using lesser quality ingredients. But this was an amazing version. The Thai street food cart is called Mae Boon Ma Haw Mok Pla Chon (แม่บุญมา ห่อหมกปลาช่อน), and it’s a family run stall that specializes in mainly fish custard made with snakehead fish and noni leaves (bai yaw ใบยอ).
Normally you would eat haw mok (ห่อหมก) along with rice, and at this street food stall in Bangkok they mainly just did takeaway to eat at home. But since I had a spoon with me already, I decided to eat it right there on spot. It was absolutely insanely delicious. The typical recipe of haw mok (ห่อหมก) a red curry paste that is stirred by hand with coconut cream and duck eggs until it turns to a foamy paste. Then it’s steamed in a banana leaf cup or packet with the fish and noni leaves. This was one of the better versions of haw mok (ห่อหมก) I’ve had in a long time.

P’Aor Yam Nam Khao Tod (ร้านพี่อ้อ ยำแหนม-ข้าวทอด)
Next up for the yam naem khao tod (ยำแหนมข้าวทอด) and this is the Bangkok street food stall that I really came to eat at. The opening times are a little tricky (you can read more about it on the blog: but we arrived in the early afternoon, to get what many people say is the best time. Yam naem khao tod (ยำแหนมข้าวทอด) is a Thai mixed salad dish of deep fried crispy rice balls with soured pork, and crispies, which is mixed up with lime juice, fish sauce, and chilies.
This is one of the street food stalls that as soon as they open up, there’s immediately somehow a lineup of customers waiting. My wife and I ordered, and luckily I brought a plate from home along with a spoon — most people ordered takeaway to eat at home, as there are no tables there to eat.
Yam naem khao tod (ยำแหนมข้าวทอด) is not a Thai dish or snack I eat very often, but this version was delicious. It was refreshing, and ironically, though it includes quite a bit of pig skin, it was light, and didn’t have an oiliness to it.
If you want some amazing yam naem khao tod (ยำแหนมข้าวทอด), this is a Thai street food stall in Bangkok that you should check out.

THAI FOOD FESTIVAL in Bangkok! (Amazing Thai Taste Festival) - Hot Thai Kitchen
The Amazing Thai Taste Festival is a fantastic stop for foodies if you happen to be in Bangkok around this time! The festival has booths from all sorts of vendors: street food, restaurants, even a cooking school! And it has a stage with live cooking demo and performances (which was incredibly LOUD hence me yelling my way through this place! Sorry about that...).
It was actually not as big as I expected, which isn't a bad thing, because it means that you CAN realistically see everything in one evening. There are some seats and tables for eating there as well, but not much. It's hot though, so be prepared!
WANT TO GO NEXT YEAR? I think this is the first time they organized this festival so hopefully there will be a next year! This year (2017) it took place at the Makkasan Airport Link station around mid June. Location may change next year so definitely look it up! You can check out the Tourism Authority of Thailand website and Facebook page for more info on festivals like this.

How to Make Rice Crackers & Rice Cakes ข้าวตัง - Hot Thai Kitchen!
Making your own rice crackers isn't as hard as you might think! There are many types of rice crackers, but the basic idea is the same regardless of what kind you make: Start with cooked rice, then you shape it, dry it, and puff it in high heat. In this video I show you 2 examples of this process, one that is thin and crispy like rice crackers, and the other one thicker and puffier more like rice cakes.
Their neutral flavour means you can then use it for whatever dip you like, it's a great gluten-free option to go with your favourite dips!
