Hey guys! This is a 4 day luxury brisbane to byron road trip I did with a couple of bloggers along with the Accor hotels group to experience fine food and accommodation. I hope you like this video. Food Adventure Byron Bay Australia
Stuffed Squash cooked in the forest on a Sunny day.

Ingredients (2 portions)
1 medium-sized squash
10 sun dried apricots
1/2 cup rice (preferred cooked a bit)
1 chopped onion
3 tablespoons pumpkin/ sunflower/pine tree seeds
2 Mushrooms
A handful of parsley
1 carrot
Salt
black pepper
Lemon
Olive oil
Thini
Preparation:
Cut all the squash along its length, shredding its contents by leaving the sides an inch thick and the content kept aside.
Chop the onions, mushrooms, parsley, carrot, apricot and garlic.
Fry the chopped onions in olive oil until the onion becomes transparent. Add all chopped vegetables and shredded squash. steam until they get soften a bit.
Add the rice and the seeds. Spice with salt and pepper by taste.
Fill the two halves with the filling and squeeze a lemon on top. Add a glass of water (if the the rice is not cooked). If it does three tablespoons is enough.
Xconnect them to each other. Wrap in three layers of aluminum foil and place in the fire for an hour. Take it out. Open the wrapping and top it with Tehini and Presley.

We headed off to Australia for Christmas! We have been to Byron Bay twice before, so this was our third time there and it's such a beautiful part of Australia. Laid back culture, surf life and beautiful beaches, what more could you ask for. We met up with some friends there and Hannah's God Brother Ben who's just an absolute legend. Was different being away from our families for the holidays, but we spent last year with both our families, so we thought we'd do this year seeing the other side of the world.
