Kyoto Insider Sake Experience
When visiting another country, it's important not to just sample the Instagram highlights that you see on blogs and on social media. You should truly immerse yourself in the culture and fill yourself with as much knowledge as you can. The Kyoto Sake experience did just that - we learned about sake starting from the very water in which it is brewed. We learned about rice grains and all the types of sake that exist in Kyoto and the world. And at the end of the tour, we even had a tasting in which we were given the opportunity to truly dial in which type of sake is the most delicious for our specific taste buds. It is an experience I highly recommend for anyone visiting Kyoto.

Mitsuo Nakatani is a mochi master, and to watch him do his work is a genuine thrill. Travel alongside Richie Hawtin as he explores Japan discovering the different unique approaches to brewing the perfect sake and infusing himself in the heart of Japanese culture in an effort to bring an authentic taste of Japan beyond its borders, and beyond the walls of ENTER.Ibiza.
THE STORY
RICHIE HAWTIN announces plans to launch his boutique Japanese Sake collection ENTER.Sake in Europe and the USA, beginning with an exclusive launch at New York’s celebrated restaurant TAO Downtown.
Hawtin first launched ENTER.Sake in 2012 at ENTER. in Ibiza. What started as a wish to share his passion for Sake and Japanese culture with friends after twenty years of travelling, working, and tasting sake in Japan, led to the launch of Ibiza’s first true sake bar experience, the creation of Hawtin’s own boutique ENTER.Sake collection and one of the most-anticipated pre-parties on the island.
This summer ENTER.Sake makes its US debut, with an exclusive launch at New York restaurant TAO Downtown, the first time ever that Hawtin’s Sake and Shochu brand, created with the Matsumoto Sake Brewery in Kyoto, will be available outside of Ibiza.
ENTER.Sake arrives at TAO Downtown with two variants:
ENTER.Black by Richie Hawtin for TAO Downtown
Matsumoto (Shihari Junmai) Kyoto. Balanced, lifted and zippy, medium dry.
ENTER.Gold by Richie Hawtin for TAO Downtown
Matsumoto (Junmai Daiginjo) Kyoto. Edgy, refined, complex.
These ENTER.Sake options have been personally selected by Hawtin for TAO Downtown, following his extensive trips to breweries throughout Japan. They mark the first in a whole line of sake and shochu that ENTER.Sake plans to release in USA and Europe, with the hope of introducing people around the world to the taste, culture and history of Japanese Sake.
Hawtin, himself a trained Sake professional, will host an exclusive invite-only evening at the restaurant on Friday 26 September, to celebrate the launch of ENTER.Sake at TAO Downtown.
“This is a proud moment for me as our ENTER.Sake project evolves with our first project outside of Ibiza with the introduction of the ENTER.Matsumoto Sake selection at the new TAO Downtown restaurant in New York. Sake has been an integral part of the success of the ENTER.Ibiza events and with Jason Strauss’s & Naoh Tepperberg's similar love of Japanese Food, Sake & Electronic music, this partnership makes perfect sense. The new TAO restaurant is the right place for ENTER.Sake first steps into North America market and helps continue our combined commitment to bring the best quality Japanese Sake to a wider audience. With ENTER.Matsumoto we bring the the heritage of the Matsumoto brewery and culture of Kyoto one step closer to the rest of the world. A delicious and exciting new chapter to the developing ENTER.Sake story.” -Richie Hawtin

Locals of Kyoto love the liquor.
Japanese traditional culture is still vibrant in Ancient Kyoto. The historical areas attracts visitors from all over the world. There is a liquor born in Kyoto loved by locals for a half a century. The liquor’s name is impressive. You will never forget the name…
「Bakudan」
Bakudan means Bomb when translated to English. It should become an unforgettable taste, once you try it…The liquor is called「Aka(Red)」. The red liquor reflects it’s name properly...Its flavor is a bit tarty, as well as, fruity, like grape juice.Generally, it’s mixed with fizzy soda.Because it definitely matches with a variety of dishes.
「I want everyone in the world to taste this flavor that I love」
Sun Moon Co., Ltd. CEO, Hiroaki Kurumada has had dream for a long period. This liquor drunk by adults is close to him. It was developed and manufactured up in a local town.As a matter of course, when he became an adult, his love for this liquor is the same as the locals. His living away from Kyoto after he graduated from university made him realize that this liquor is only in Kyoto. The urge to spread this liquor beyond Kyoto came over him. This liquor must be loved by people from overseas as well as Japanese people…Sweet red wine, loved and known all over the world The popular distilled spirit, Shochu, made traditionally, consists of potato and wheat as raw materials. Combining western and Japanese style…
Finally 「Kyoto red liquor ”Bakudan”」has been completed. Not only with fizzy soda, but there are also a variety of ways to enjoy drinking it.Mr, Kurumada’s vision is that people will drink this liquor, and enjoy talking and dreaming together.Who wants to become a connoisseur of Kyoto with the brilliant red liquor?

Nara Street Food Guide w/ Extra Mochi
STREET FOOD! We’re back for more in one of Japan’s most traditional cities, Nara.
What was once Japan’s capitol is now a place loaded with delicious street food for humans and deer alike. So, what’s Nara got to offer? I hope you're hungry!
★ YAKI IMO / Grilled Sweet Potato / 200 yen per 100g
★ YOMOGI MOCHI / green mowort mochi filled with azuki beans, slightly bitter, slightly sweet / 130 yen each
★ KAKI NO HA SUSHI / sushi wrapped in permission leaves 1000 to 15000 yen for 8 to 12
★ DORAYAKI / pancakes filled with azuki red bean paste / 600 yen for a large one
★ DEER RICE CRACKCERS / shika senbei that they love to eat / 150 yen per pack
★ SHIKA NO FUN (Deer Poop) / chocolate covered peanuts or soy beans / 350 yen per bag
★ SOFT SERVED ICE CREAM / 350 yen each
Probably the most famous street food is mochi prepared by Nakatanido, a hundred meters behind the Kintetsu Nara Station. The mochi making performace where Nakatani-san opens the shop window and pounds the mochi at lightning speed takes place a few times a day.
Stop by and ask about performance times because you don’t want to miss it. It’s served right after and it’s absolutely the best mochi in Kansai. I went at 11:30am.
Note that the deer are wild animals and although they’re mostly friendly, they will bite, charge and bump tourists. Please be careful especially with children.
Nara is an easy train ride from Osaka or Kyoto and worth a day trip or longer if you like hiking and trekking around nature to see temples and shrines. Perfect when the weather is clear.
