Fry jacks are a traditional dish in Belizean cuisine. They are deep fried dough pieces served as a breakfast item, and can be shaped as circles or triangles.
While Fry jacks are not unique to Belize, they are certainly amazing!
Different names are used in various countries different names all over the world including beignets in New Orleans, USA, sopapillas in Mexico and the American southwest, or simply ‘fried dough’.
Preparation begins with flour and other ingredients, typically including baking powder, salt, vegetable oil and water. The mix is then pan-cooked. Preparation involves creating the dough and then allowing it time to proof, or rise. Once the dough has risen, the dough is rolled out and then cut into strips or pieces. After being pan-cooked in oil, they may be topped with ingredients such as jam, beans or cheese.
Directions to make Belizean Fry Jacks: Sift flour, baking powder and salt in a bowl. Add shortening into a flour mix. Add water, a little at a time, to make a soft, but not sticky dough.

Belize’s most famous entrepreneur Marie Sharp has teamed up with the U.S. Embassy in Belize to raise funds for victims of domestic violence. Sharp has crafted a new pepper sauce called Pure Love – and the monies made from the sales of this special pepper sauce will be used to fund the Haven House. This is a safe shelter for battered women and their children where they can get transitional help such as skills and counseling. The new pepper sauce was launched today in Belmopan at the residence of the U.S. Charge d’affaires and News Five was there. Reporter Andrea Polanco tells us more.

Rick recently got to visit the Marie Sharp's Hot Sauce factory in Belize and got a personal tour of the factory led by Marie Sharp herself. Here's a behind-the-scenes video he got of the hot sauce getting bottled. The woman in the red shirt is preparing the bottle necks for the seals by wiping them down. The next woman is putting the seals on the hot sauce bottle necks (look how fast her hands are moving!), and the third woman is tapping the seals to ensure that they're on properly so they'll be properly shrink-wrapped when they go through the machine that seals them on.
