- [Jessie] Nepal is renowned for its challenging treks, stunning views and high peaks. But as you're enjoying the beauty of the country, don't forget there is a culinary culture worth exploring. Dal bhat, rice, lentils and often vegetable curry, is a national dish. And you'll see it everywhere along with momos. During a cooking class in Kathmandu, I learned how to make these South Asian dumplings, chopping cabbage and onion, mincing garlic and ginger, and even making dough from scratch. Momos are stuffed with everything from buffalo to chicken to veggies and beyond, even chocolate. They can be fried or steamed, spicy or mild, and are served with delicious sauces. I may be biased, but these were the best momos I had in Nepal. Another way to explore local food is via a breakfast tour. Along with trying typical breakfast foods most visitors never get to, in hard to find places, you'll see Katmandu as it wakes up, including the Asan Market, open from five to 8:00 a.m. So what did we try? Potatoes with sweet semolina. Fried rice bread with milk tea. And spicy chickpea curry, just to name a few. Between bites, we visited local stupas and temples, and met the locals whose food keep the city delicious. We also learned some local folklore. Near temples, it's common to feed the pigeons to draw them together, then run through the bird crowd. As they fly away, their flapping wings are thought to transfer energy to the people below. Something else that gives me energy? The jeri swari haluwa from Shree Kumari Bakery, which tastes like the Nepali version of funnel cake and offers a sweet ending to a delicious day in Kathmandu.

Dhindo
Ingredients:
Buckwheat flour 300 g
Water 600 ml
Salt to taste
Directions:
1. Heat water
2. Add buck wheat flour slowly into the water by stirring it continuously. Once the flour absorbs all the water add salt and serve hot.

Ghundruk ko achar
Ingredients:
Ghundruk (fermented leafy green vegetable) - 60 g
Garlic flakes - 6 g
Cherry tomato - 5 whole
Mustard oil - 5 ml
Chilli powder - 5 g
Leek - 15 g
Lemon juice - 5 ml
Salt to taste
Direction:
1. Soak gundruk for one hour and stain.
2. Add roasted cherry tomato, garlic flakes, leek, chili powder, lemon juice, mustard oil and salt.
3. Mix all the ingredients together and serve.

Pork Ledo Bedo
Ingredients
Diced pork - 200 g
Mustard oil - 30 ml
Onion slices - 250 g
Ginger / Garlic paste - 15 g
Turmeric - 5 g
Whole garam masala
Chili chopped - 5 g
Tomato paste - 25 g
Wild peppercorn - 4 g
Cumin powder - 5 g
Coriander powder - 5 g
Chili powder - 5 g
Salt to taste
Coriander, chopped - 10 g
Directions:
1. Heat the pan, add oil, whole garam masala, onion, ginger / garlic paste
2. Add diced pork and let it cook for 15 minutes then sprinkle turmeric powder, chili powder, cumin powder, coriander powder and garam masala
3. Cook further for 15 minutes and add tomato paste
4. Now cover with a lid and cook for 15 more minutes.
5. Once well-cooked, add salt, wild peppercorn and coriander to finish.

Khasi Ko Masu
Ingredient
Diced Mutton 200 g
Mustard oil 30 ml
Onion slices 20 g
Ginger Garlic paste 15 g
Turmeric 5 g
Whole garam masala
Chilli chopped 5 g
Tomato paste 25 g
Cumin powder 5 g
Coriander powder 5 g
Chilli powder 5 g
Salt to taste
Coriander chopped 10 g
Directions
1. Heat the pan, add oil, whole garam masala, onion, ginger / garlic paste
2. Add diced mutton and let it cook for 15 minutes then sprinkle turmeric powder, chili powder, cumin powder , coriander powder and garam masala.
3. Cook further for 15 minutes and add tomato paste.
4. Now cover with a lid and cook for 15 more minutes.
5. Once well-cooked, add salt and coriander to finish.

Dal Bhat दालभात is said to be the national traditional dish of Nepal with lentils, rice. Dal Bhat means lentil and rice - so its easy for travelers to get confused- but in Nepal, it also means the entire dish or plate with at least four to seven other dishes!

After years of experience working at an upscale D.C. restaurant, owners Dip Raj and Tuk Gurung brought in the farm-to-table concept and western cuisine influences to Royal Nepal, displaying the exquisite Nepali dishes and serving house-made cocktails and comforting desserts. While not known by many, Nepali cuisine has a lot of influences from its bordering countries, India and China. Chef Rai, who worked at a hotel in downtown DC, is from Kathmandu, Nepal's capital city. The three Nepali friends decided to team up and open Royal Nepal to bring the Nepali flavors and culture to the Alexandria neighborhood.

Dal Bhat (दालभात) - Delicious Nepali Food Meal (Motherly Cooked)
Dal Bhat (दालभात) is one of the most typical Nepali food meals available in Nepal. For more information check out my website:
No matter what area of Nepal you are in, when you're looking for delicious home cooked Nepali food, you'll find dal bhat. The great thing about dal bhat is that it's a delicious meal. Dal means soup, which is usually a lentil soup similar to the Indian version of dal, but a little soupier. Bhat on the other hand is a main staple starch, which normally indicated rice, but if rice is not available, it can mean another form of starch to go with the sides.
A meal of Nepali dal bhat (दालभात) all begins on a big metal plate which is piled high with rice. The dal soup is normally place in a small metal bowl and served on the side. While this is the barebones Nepali food combination, usually more sides are added to make the meal more complete. Dal bhat tarkari (दाल भात तरकारी) for instance, is the rice and dal combination along with a side of seasonal vegetables - often some kind of green vegetable fried up or curried cauliflower. Also, if you like to eat meat, there's often the option of ordering chicken, buffalo, or beef curry to accompany your meal. I personally loved chicken and buffalo curry and also a dish they call chicken chilly.
For this particular Nepali food meal I was just wandering around Kathmandu, actually getting my Thai visa, when I became extremely hungry. Nepali local restaurants are often hidden from the road by curtains which you have to pull back in order to see what's going on. This was why it was sometimes hard to find food in Nepal, because restaurants are often hidden by drapes. But nevertheless, peek your head into a curtain and there's usually something delicious. This small neighborhood restaurant was owned by a motherly lady who had a selection of delicious dishes all prepared when I arrived. I just ordered the dal bhat (दालभात) and when she asked me if I wanted chicken, I couldn't resist. A plate of rice, peas and potatoes curry, chicken curry, and dal was what came with my meal. After downing my first helping, she then brought more more and more food, a bowl of chickpeas that were slightly cold and still quite firm, and a soft boiled egg, which I was extremely excited about.
The egg was soft boiled so the yolk and even some of the white were still soft and perfect to go over my plate of rice. Along with some of the achar chili sauce, a sort of Nepali food salsa, the egg was incredible! Dal bhat makes a wonderful and fulfilling meal when you're in Nepal. It's served fresh, it's for the most part nutritious, and it really satisfies when you're hungry!
