What you can expect
You will be picked up from your hotel and head to Hua Hin's bustling 100 Year Old Chat Chai Market in the city centre. Take in the unique and colourful scene of the market while choosing the right ingredients to be used later.
Once that is done, you will head off to the cooking school via a Songthaew – a Thai pickup truck style taxi with seats in the back. After the 5-10 minute journey, enjoy a refreshing lemongrass tea when you've reached the cooking school. While sipping on the tea, you will also learn how to make coconut cream and milk by hand.
You will then set up to prepare and cook your first dish of the day! Watch a demonstration of the dish cooked by your instructor. You'll have your turn to cook and taste the dish as well. Once you are satisfied with your dish, sit down and enjoy the dish while it is hot and fresh. You will then also be able to take down notes in your recipe booklet while discussing the dish with your classmates around the dining table.
You will then cook 2 other main dishes - each time following the same process of demonstration and taste. To finish and freshen your palette, you will also learn to make a Thai dessert. You will receive a certificate at the end of this class.
Once you've cooked the 4 dishes and filled your tummies to the brim, you will be transported back to your hotel or to the Clocktower in Hua Hin town center if you are staying outside of Hua Hin town - full and satisfied.

Our introduction to Thai Cuisine at Thai Cooking Course Hua Hin
Since we have arrived in Thailand Michelle Evans MacLachlan and I have been impressed with the food. It is wonderful to smell, exciting to look at and most importantly it is delicious. Thai food has such a unique balance of sweet flavors with sour plus a little salty and a lot spicy as well. So we decided to take a class here to learn how to make several dishes. We made Gaeng Penang Gai, Spicy North East Style Pork Shoulders Salad, Stir Fried Chicken with Holy Basil and for desert Thub Tim Krob (Red Rubies). I don’t know if Pamela Laksana aunt needs another cook in the kitchen, but let’s just say I earned an official certificate today!
Stir Fried Crab with Yellow Curry | Phu Pad Pong Garee | ปูผัดผงกะหรี่ | Hua Hin
Today we will cook one of our favourites.. Stir Fried Crab in Yellow Curry (Phu Pad Pong Garee - ปูผัดผงกะหรี่ ). If you haven’t cooked this one before it might seem quite complicated. But it’s actually pretty simple. This one done well is an excellent dish with a little bit of wow factor. The mild curry flavor compliments the crab superbly. Eating can get a little messy but crab lovers will be used to this :)
Ingredients
2 Crab (we used medium size Blue Swimmer Crabs)
2 Eggs
1 Onion (med/lrg brown onion)
1 tbsp Garlic (bruise/crush with the side of a knife)
2 Red Peppers (large non-spicy type)
1 cup Thai/Asian Celery (this type of celery is thinner stemmed + more leafy)
5 tbsp Cooking Oil (3 for crab + 2 for stir fry)
Sauce
2 tsp Yellow Curry Powder
2 tbsp Oyster Sauce
1 tbsp Light Soy Sauce
1 tbsp Chili Paste (same as used for Tom Yum)
½ cup Unsweetened Condensed Milk
*mix everything together really well

Fried Rice with Shrimp (Khao Pad Goong) ข้าวผัดกุ้ง | Thai Cooking Hua Hin
Today we will show you how to cook Thai Fried Rice. This simple but tasty dish is quick and easy to prepare. And if, like us, you have some challenges getting your kids to eat vegetables this could be a good one to try. The veggies are chopped really small and the rice is very flavourful so a bit easier to deal with for picky eating kids.
INGREDIENTS:
1. Prawn / Shrimp - or any meat or more veg - (150g)
2. Egg - (1)
3. Chopped Garlic - (1 heaped tbsp)
4. Carrot - chopped small - (3 tbsp)
5. Corn Kernels - (3 tbsp)
6. Spring Onion - (2 tbsp)
7. Soy Sauce - (2 tbsp)
8. Oyster Sauce - (1 tbsp)
9. Sugar - (1 tsp)
10. Steamed Rice - (2 cups)
11. Vegetable Oil - (2 tbsp)
**In the video we use Golden Mountain brand soy sauce, Maekrua oyster sauce and soybean oil. These would be commonly used for this dish in Thailand (but we have no commercial arrangement with them).

How to cut pineapple Thai style
Here is a short demonstration showing how you can cut a pineapple. Removing the skin first and then cutting out the remaining bits.

Hua Hin Chef’s Table : 6th Episode at the Vana Nava Sky 27th Floor of the Holiday Inn Hua Hin and it certainly did not disappoint.
This is truly a magical location with a cocktail bar and magnificent dining room plus 360° panoramic views of Hua Hin. Chef Kanyaphat Srijareon showcased her specially-designed menu of Thai Fusion, with four courses matched with either wine or cocktails. This was all about combining Thai favours with great local produce and international cooking techniques.
Amuse Bouche of Tortellini Foie Gras Kaprow; this little mouth tempter was redolent of Thai Holy Basil with the sauce of Foi Gras.
Soup: Tom Kha Pla & Kai; a coconut soup served in a coconut shell with King Mackerel and Smoked Fish Roe.
Trio of appetizers. Hua Hin Pork Belly with a Prachuap Khiri Khan Pineapple Salsa; Hor Mok, a Thai Curry Custard with locally-sourced Scallops and Pran Buri Squid stuffed with Coconut Rice.
Mains: Grilled Wagyu Beef served with a Pa-Nang Risotto or Gaeng Puu Cha Plu Krob, a Crispy Crab Ball with a traditional Red Curry Foam, Vermicelli and a Squid Ink Sago Cracker.
Dessert; a delicate mousse cake of pineapples sourced from local growers in Prachuap Khiri Khan and a syrup was flamed and pour onto the cake at the table.
