Ingredients:
For Boondi Batter:
2/3 cup Besan (Gram Flour)
Water, as required
For Sugar Syrup:
1 cup Sugar
1/2 cup Water
1 teaspoon Orange Food Colour
1 teaspoon Cardamom Seeds
Method:
In a small bowl add Besan & water. Stir it well so that no lumps form & keep it aside.
Heat ghee in a pan for deep frying the boondi's
In another deep pan add sugar & water to make the sugar syrup. Heat it till the sugar gets dissolved and turn into a liquid. Lower the flame and keep the syrup hot.
Next, take a 'Boondi Jhaara' & place it on top of the heated ghee. Add the besan mixture on the jhaara and tap it so that small boondi's are formed and fall into the ghee. Fry these boondi's well till they turn crisp.
In the sugar syrup, add some orange food colour and mix well.
Take the boondi's from the ghee, strain it & add it into the sugar syrup.
The boondi's should be soaked in the syrup for a good 2-3 hours.
After 3 hours, mix the boondi's once again & add cardamom seeds in it and mix well.
Scoop out a bit of the mixture and mold them into the shape of a small ball.
Do this with the entire mixture. Boondi Ladoo is ready.

Thekua Recipe । ठेकुआ । Khajur Recipe । Bihari Thekua, Khajuria
Thekua Recipe also called Khajur, Khajuria, Thikari or khamoni
Ingredients
Wheat flour – 2 cups (300 grams)
Jaggery - ¾ cup (150 grams)
Raw coconut - ½ cup (50 grams) (grated)
Oil – to fry thekua
Ghee – 2 tbsp
Green cardamom – 5 or ½ tsp powder
Directions
Getting ready:
Peel green cardamom and crush its seeds into fine powder using mortar pestle.Take water in a vessel followed by jaggery. Place it on flame and cook the jaggery until it dissolves completely. After a while, when jaggery dissolves, then turn off the flame and strain the syrup through a sieve in a bowl to remove impurities.Add ghee into the jaggery syrup and mix well. Let it cool down slightly. Take wheat flour in a big mixing bowl and add green cardamom powder and coconut into it. Add jaggery syrup in small portions and knead stiff dough. Dough is ready. Take a thekua mould to make thekua. Pinch some dough and roll it into cylindrical peda. Place it on the mould and and press it gently with the palm to make long shaped thekua. Make a round peda of some dough, place it on the mould and press it with the palm to make round thekua. Place them on a plate and likewise make the rest of the thekua from the remaining dough.Place a wok on flame and pour enough oil into it to deep fry the thekua. When oil becomes medium hot, gently slide 6-7 or as many thekua as possible into it. Keep the flame medium.
Once the thekua gets fried from beneath, flip their sides and fry them until they get golden brown from both the sides. Thekua are fried aptly, drain out them on kitchen paper towel placed over a plate. Fry the rest of the thekua as well. Thekua are now ready.Serve these crusty and tempting thekua along with piping hot cup of tea or coffee or have them as it is. When they cools down completely, store them in an air-tight container and relish eating for about a month.
Suggestions
You can add cashews, raisins, dates or other dry fruits into thekua.
If you don't have mould then use sieve, plastic basket, grater or anything else to make design on the thekua.

Home Made Modaks - Rice Modak without mould
Ingredients
Rice flour (चावल का आटा ) - 1.25 cup (200 gms )
Fresh coconut (ताजा नारियल ) - 1.5 cup (grated )
Jaggery ( गुड़) - 1 cup (200 gms ) ( crumbled)
Almonds (बादाम ) - 10 to 12
Cashews (काजू ) - 10 to 12
Ghee (घी ) - 2 tbsp
Green Cardamom (इलाइची ) - 6 to 7
Raisins (किशमिश ) - 1 tbsp
Salt (नमक ) - 1 pinch (or to taste)
Direction :
Getting Ready:
1. Take 10 to 12 almonds and cashews each and chop them. Also take 6 to 7 cardamoms and peel and grind to make powder.
Making:
2. Take 1.5 cup water in a vessel.Turn on flame and heat it. Add 2 tsp ghee and let the water boil.Add 1 pinch salt to it.Cover and let it boil.
3.Once the water has boiled then Reduce the flame, add 1.25 cup fine rice flour to it. Mix it well. Turn off flame. Cover and keep it aside for 5 minutes.
4. For stuffing, heat a pan,add 1 tsp ghee to it. Let the ghee heat up, then add 1 cup crumbled jaggery to it. Then add 1.5 cup grated coconut. Cook on low flame.
5. When jaggery and coconut blend well then add chopped cashews , almonds, cardamom powder, add 1 tbsp raisins too. Mix all ingredients well.Stuffing is ready.Turn off the flame. Place the stuffing out in a plate.
6. Dough is puffed up and ready.Place in a thali , press with spoon then mash with hands when cool. Grease hands with ghee and knead it for 6 to 7 minutes.
7. Grease hands with ghee, Break small lemon sized lumps then give shape of peda. Grease hands with ghee, give a bowl like shape, to place the stuffing. Press with thumb and fingers and give bowl like shape.Stuff with add 1 to 1.5 tsp stuffing in it.
8. For making pleats in modak, grease hands with ghee and pinch and make pleats, press stuffing, slightly join the pleats and make a pointed top on it. Give the base a round shape. Prepare all the modaks likewise.
9. To steam the modaks , take a deep vessel to place the colander,add 2 cup water to it, turn on flame and let it boil.Meanwhile grease colander with ghee,then place the modaks in the colander. Place the colander over the vessel, cover the colander and steam for 12 minutes on high flame.
10. When modaks are ready place the colander over jali stand. When modaks cool down take them out flom the colander and place in a plate.
Serving:
11. Mouth drooling Modaks are ready to be relished.You can make them on this Ganesh Chaturthi. Every family member and guest will relish eating it.
