Meet Mr. Meat! Dario Cecchini, also known as The Butcher. Cecchini is famous for his butchery and theatrics in his own right, but he is also renowned for mentoring Star Chef Mario Batali as well as Batali's father.
Founder and host of Wine Oh TV Monique Soltani has announced an upcoming video series based on her recent trip to Italy. Soltani was part of a group of wine experts and bloggers who were invited to attend the Chianti Classico Experience. The Chianti Classico Experience is 10 days of wine and food events, seminars, tastings, excursions, and games to get acquainted with Chianti Classico producers and their beautiful territory!
During the five-day adventure, Soltani toured many villages, wineries, and restaurants to report on a series of festivals in the Chianti Classico wine region. The new video series will cover Soltani's visits to many events located in the scenic, rolling hills of rural Tuscany.
Soltani attended wine tasting events and festivals, and visited restaurants in the villages of Radda, San Leonino, and Greve in Chianti, among others. Viewers of the video series will experience the unique flavors of the wine, food, and culture of one of the most beautiful regions of Italy, as well as learn about the many producers of Chianti Classico wines. Soltani's Chianti Classico experience included a visit to the new Antinori Winery in Chianti Classico, getting up-close and personal with the Mazzei Family at Castello di Fonterutoli, and dining with Mr. Meat himself, Dario Cecchini, also known as The Butcher. Cecchini is famous for his butchery and theatrics in his own right, but he is also renowned for mentoring Star Chef Mario Batali as well as Batali's father.
Chianti Classico and Chianti are, in fact, two very different wines. Chianti Classico wines are made almost exclusively from grapes of the Sangiovese variety and must be produced using certain methods within the Chianti Classico DOCG, or legally-controlled geographic area of production. If more than 10 percent of a wine includes anything besides Sangiovese grapes, it may not be called Chianti Classico. Chianti Classico can be easily spotted by the iconic Black Rooster on every bottle, which is the trademark of the Chianti Classico DOCG.

Chianti Classico Media Trip: Panzano in Chianti, w/ Fontodi & Dario Cecchini - #ChantiClass12
In May of 2012, I had the great fortune to visit the Chianti Classico DOCG region of Tuscany, Italy. I attended courtesy of the Consorzio Vino Chianti Classico, as organized by Balzac Communications. We spent a week in that glorious, ancient and hilly wine region. Our stay was timed partially to attend the grand festival Chianti Classico è, as well as to taste our way through many a balanced, vibrant Chianti Classico wine paired with its local cuisine.
In this video, I have collected a few different clips that are all centered around the tiny village of Panzano in Chianti. Here we see top-down and bottom-up pans of the local area's Golden Shell, considered the most beautiful winegrowing region in all of the greater Chianti DOCG. We visit the small cattle ranch on the estate of Giovanni Manchetti, Azienda Agricola Fontodi. He introduces us to a few of his stoic Chianina Oxen. Finally, we end up at Officina della Bisteca, the upstairs restaurant of the world-famous butcher Dario Cecchini, which is situated above his Antica Macelleria Cecchini. Dario is seen introducing our tremendous 8 course beef meal, sourced primarily from Giovanni's Fontodi ranch.

Fidel Gastro Travel | Italy | Belforte | Antico Macelleria Cecchini | Episode 11
In this episode of Fidel Gastro Travel Matt visits one of the most interesting places in the entire world, Italy.
Italy is located in Europe in the heart of the Mediterranean Sea. A sea which you can clearly see Matt both boating and swimming in. The area surrounding the coastline is nothing short of breathtaking. Italy shares open land borders with many other countries including Australia, Switzerland, France, Slovenia, San Marino and even Vatican City. Italy is also home to more than 60 million people and maintains a temperate seasonal and Mediterranean climate.
In addition to being stunningly gorgeous Italy is home to some of the tastiest food you can find anywhere. Matt samples a wide variety of dishes as he travels, many of which are, as expected, pasta based. One of his first stops is at Belforte in Vernazza where he has what appears to be seafood pasta. Much like all of the restaurants he visits on his trip to Italy Belforta is well known throughout the area for it's delicious food.
His next stop is at Antico Macelleria Cecchini, which is, according to the website, a butcher shop with a kitchen. In the video you can see the staff preparing his meal and cutting the meat for it right then and there. The owner of the restaurant, Dario Cecchini, is an eighth generation butcher. The family business has been passed down from father to son for generation after generation. His beef and pork aren’t of any specific breed and are raised in Catalonia, Spain, by people that he has been working with for over 20 years. Matt has some fantastic looking food and then moves on to his next food adventure.
During the course of this video Matt continues to consume many delectable looking meals from wide array of restaurants. Each restaurant that Matt has selected to eat at was handpicked by him as a place he absolutely had to have a meal at if he was visiting Italy. After seeing footage of the coastline, the beautiful weather, and the amazing looking food it's not a mystery at all that Matt chose Italy for his next travel destination.

There is no fast food, no oversize billboards for advertisements, and no traffic jams.
Instead, visitors can enjoy traditional delicacies, wine, music, art and most importantly - tranquility.
STORYLINE:
Lorenzo Falorni revives lost Tuscan delicacies.
A butcher by trade, he is continuing a family business that has been passed down from generation to generation.
His shop does not sell mass produced products but food crafted with love and care.
Some of Falorni's recipes are almost 200 years old.
But these days many Italian butchers import easily accessible meats from the Netherlands and Denmark.
But in the town of Greve this is frowned upon.
Here shopkeepers are working according to the principles of a slow city.
That means that food is locally grown and cooked slowly and with care.
For Falorni this means raising his own pigs, which he will slaughter and sell the meat in his shop.
So instead of locals buying imported ham, they are getting something grown locally.
