Day Five of our Trip to Burgundy (Cheeeeeese!)
Day 5
Today we went to Brochon where cheese is made in a traditional way with non-pasteurized cows milk, giving it the 'real' French taste, appreciated around the world by cheese lovers.
Right after this we went to a cozy red wine cellar in Gevrey Chambertinn where the owner showed us how to make quality Pinot Noir on a small scale for private regional customers.
Before returning to Beaune, our tour guide took us to tiny restaurant in the hills of Cote de Nuits where hams are roasted over fire, making the establishment smell divine.

Wild Berries, Raspberries, Clove
Moderate colour here medium intense ruby-red, with a certain evolution. Very elegant nose. Still appearing youthful, but it exudes quite delicate aromas of fine spices. There are some mineral notes, then some earthy hints of liquorice root, ginger. Above all, there is really delicious red fruit, such as; raspberry, wild berries. Quite discreet oak in the background. Wonderful flavour intensity here. It is a bit more than medium weight, but there is a lot of layers going on. With fine spiciness, with clove and ginger. Beautiful red fruit, wild berries, raspberries. Well integrated oak. Quite good tannic grip. It still appears youthful, but fine tannins and ripe tannins. I am really attracted by this already now, even though this is certainly an example of something that will develop a lot in a good cellar, much more complexity and roundness. But it really has a good length, excellent purity of fruit. So I am already attracted by it, but I would like to keep it for a few more years.
