From the Pacific to your plate: Honolulu Fish Company relies on UPS to transport fresh fish from Hawaii to the mainland
Honolulu Fish Company, one of the top sashimi distributors in the world, relies on UPS to transport fresh fish from Hawaii to restaurants across the U.S.
Each morning, its buyers go to the Honolulu Fish Auction, the only fresh tuna auction in the U.S., to buy the crème-de-la-crème of the day’s catch.
“The highest-grade fish are for eating raw and that’s what we specialize in. That’s what chefs know us for,” Honolulu Fish Company President & CEO Wayne Samiere said. “Out of 500 fish, we’ll pick between 12 and 15 that match our quality standards.”
After purchasing the fish, the sales team contacts chefs from restaurants, hotels and resorts in all 50 states to sell them that day’s catch.
“Our customers are artists who need great and fresh ingredients,” Samiere said.
“That’s where UPS comes in,” UPS Business Development Senior Account Manager Deidree Soong added.
“We rely on UPS’s tracking capabilities and reliability. With UPS, we can actually get fish from Hawaii to a restaurant faster than a human being can get there,” Samiere said. “If we unload fish from a boat on Monday morning, it will be on the dinner table Tuesday night at a restaurant in the furthest part of the U.S., like New York City or Florida.”
According to Soong, Honolulu Fish Company sends their fresh seafood via UPS Next Day Air and UPS Next Day Air Saver from Hawaii to the mainland. She said West Coast packages arrive and are sorted through Ontario, California, and the majority of the East Coast packages connect through Ontario to UPS Worldport in Louisville. “We have a customized process set up with Worldport to refrigerate our shipments in the event of an unforeseen delay. Honolulu Fish Company also utilizes UPS Proactive Response Intercept Service for same-day second delivery attempts,” she said.
Processing and packaging the catch of the day
After the auction, the fish are brought to the processing facility where the skin is rinsed to kill bacteria before they are chilled and rendered to a chef-ready portion.
Then each fillet is vacuum-sealed in a bag with an absorbent pad to keep the fish as dry as possible during its journey.
Next, the chef-ready fillet is packaged with three pounds of gel ice to one pound of fish. “A 3-to-1 ratio maintains freshness and seals the cold in,” Samiere said.
The fillets are then placed into a unique heat-resistant box that has won awards for its innovative design.
The box, wrapped with a branded holographic foil laminated paper, “bounces away heat and locks in cold.”
“The holographic paper bounces away 95 percent of the heat that hits the box. Within this system we can hold the temperature of that fish for 48 hours. The fish goes in at 34 degrees and reaches the customer at 32 degrees. It gets colder as it travels,” Samiere said.
He said a huge amount of work goes into each package. “When you see one of Honolulu Fish’s holographic boxes, know there is something extraordinary inside.”
‘Something extraordinary’ delivered to Louisville
A few times a week, a UPS package car pulls up to Louisville’s Bistro 1860. Within a few minutes, the UPS driver delivers one of those holographic boxes.
Bistro 1860 serves French-American fusion cuisine. The restaurant’s Executive Chef Michael Crouch, a longtime customer of Honolulu Fish, wants only the freshest ingredients.
“Honolulu Fish brings the best of the best. Getting the seafood that quickly after it comes off the boat makes a big difference to me and my customers,” Crouch said.
Crouch said because Worldport is in Louisville he knows that in 24 hours or less, the fish will be in his kitchen. “A lot of customers are starting to realize the reason Louisville is a great seafood town is because of UPS,” he said.

Every New Year there is a spike in theprice of Yellow Fin tuna. The price often triples at the bottom levels, causing prices to reach $30/lb or more during the days leading up to New Year. This year there was an added twist, as boats have catch quotas to stay under, this was their last chance to put those catches on the 2009 quota, otherwise it would have been applied to 2010. This movie was made at the Honolulu Fish Auction house on the morning of 12/30/09 and in the stores later that day. After the 1st of January, prices will return to normal almost immediately.
