Don't worry we will be drinking Cabernet Sauvignon on this night and this is one of the most exciting wineries to come along in quite a few years from Napa. The Palmaz family is dedicated to making great wines and their state of the art winery is proof. We have been sending people to visit for the last few years and have made many fans of Palmaz wines. Most of the tours are conducted by a member of the Palmaz family and there are few structures like this one anywhere in the world. A sixteen story winery built into the side of a mountain, this place is something out of a James Bond movie.
Tonight we have one of the extended members of the Palmaz winery in town, the sales and marketing department for Palmaz winery, Shawn Lutwak. Shawn has been by to see me with every vintage of this wine and he is the reason so many of our wine drinking people know about this up and coming star of Napa Valley. Shawn has brought some very special wines with him from the winery for this occasion and if you love Napa Valley Cabernet Sauvignon this is an event you do not want to miss.
This is a pre-poured seated event so we are limited to 15 tasters this evening. Wine Watch Catering's Toni Lampasone will be making a few small courses to accompany the tasting wines. The fee for this event is $65+ tax, for reservations call 954-523-9463 or just respond to this e-mail.

Wine Review: Napa Valley Meritage | Italics Winegrowers #NoDumpBucket
888 282-1353 Alright, it is Friday! And if it's Friday, it must be #nodumpbucket. Now, I look pretty casual today because I have my Florida shirt on. Last week it was Texas because of Harvey. This week it's Florida because of Erma. Next week I do not want to be wearing a Louisiana shirt or a Georgia shirt. This is in honor of all the folks where Erma is crashing down on them very very quickly. I have family, friends down there. I would like you all to take every caution you can.
Let's talk about what we are tasting. It is Cabernet! There are so many Cabernets right now on the site at cellarangels.com. You cannot go wrong. This is the first time we've ever featured Italics. First of all, an incredibly cool bottle. It's etched. It is called Fifteen. Now, it is a 2010 but its call Fifteen because they've used all fifteen sub-appellations in Napa Valley. Unheard of. Very, very cool. The folks at Italics know what they are doing with wine. They have Steve Reynolds as the Winemaker, from Reynolds Family Wine. Steve has been in the business a long time and a descendant of a father who is a serious collector and a serious wine person, so Steve grew up in it naturally. But he's also a managing partner at Italics.
This is a southern Coombsville AVA located winery. The Angel Bonus Offer is a private cave tour with case purchase.
Specifics on the wine: 799 cases. Since they are blending 15 appellations, they are big believers in luxury boutique wine. Luxury Bordeaux-style wine. 66% Cabernet Sauvignon, 27% Merlot, 6% Cab Franc. A hint, 1% Petite Verdot. First I need you to see this color. Dark, beautiful, beautiful almost violet. Deep dark violet. Bright red rim, which defies its age. It has seven years of age. Gorgeous. Not bright cherry but dark cherry. Good tannins. Not gripping tannings, but soft. You can taste them. Long finish. I'm going to have to have another sip of this. It also has dark ripe plum. Alright, that's ridiculous. Hints of vanilla. Hints of cocoa. And also a hint of cedar. The vanilla from the oak but not overpowering. If you've ever walked into a humidor and you walk in and get the gorgeous tobacco smell, a little bit of that. Or if you open up a cigar box with a cedar inlay, also a little bit of that.
Let's talk about why I'm wearing this shirt. Because it is hurricane relief at Cellar Angels the entire month of September. Thought we were only going to have one hurricane. Turns out we have two, and hurricane season is just beginning. Hurricane relief is amazing and here's what's happening. Michael Dell, worth more than Cellar Angels, but we are catching him. He's already pledged $36 billion dollars. J.J. Watt, football player, his Go Fund Me campaign is off the charts, he's at $27 million dollars. He was trying to raise $200,000. J.J. We have automatic data collection in the vineyard to help analyse both the sugar levels and the hydration levels of the plants themselves. And then in the winery we have automatic sensors for temperature and bricks in the fermenters to help us think about what direction the fermentation should go real time.

Rather than spending a few hours a day collecting data, you can actually come straight in, look at wines, taste wines, think about them and see the information. So more of your time is spent in the creative art of winemaking rather than in just sort of the rote work of winemaking.

So I have a set point of 28 that you can see right here. The tank is trying to achieve that temperature and currently it is at 37.4 degrees and it's actively cooling.

So what happens is clients will tell me they want their tank temperature set at a certain point through fermentation to maintain a certain temperature while the yeast is really active in the fermentation, and it's building up lots of heat and they want to maintain a certain degree of temperature, so that you get extraction from the skins but you don't kill the yeast by having the temperature spike too high.

Winemaking is, at the same time that it's a very science-based and sort of mechanical process there's also a great deal of artistry that goes into it. You know something as subjective as taste, it's really up to the individual winemaker, the individual artist at that point what they want their end product to be like and to try to do things that effect change to get to that place, the best they think they can.

You know I think much more of it has to do with tasting, with knowing what I want, with how fruit and then wine actually tastes. And so for instance I love this place because I do have great control over these really small details using the technologies they have. But it's in doing that that I can really, hopefully, coax out the flavours and essences that I want of the wine.
