Hawaiian Fresh Fish Report (New Years 2019)
Finishing off the year with a boat load of fresh fish from our very own F/V Kawaiola. Some beautiful tunas in this load destined for the tables of our chef and restaurant customers.
CAUGHT & RELEASED LARGE TRUMPETFISH!
Decided to use my very light Okuma 7'9 T-40X Steelhead up North Oahu this morning with an equally light-weight Shimano Stradic 3000 CI4 with 8lb Seaguar monofilament line. Gotta go light if you plan on whipping with little to no arm fatigue! After a few small fish caught this large Trumpetfish. I know if you filet this fish it's a tasty fish pan-fried, but i let it go. Came in tail first as it spun around after hitting the Completely Hooked Lure clear w/glitter 2in grub and took off (leader got caught around the fish's body). Early morning nice hit off South Oahu, Hawaii. I found the best time for papio (jacks under 10lbs) are early morning & late evening. Legal size is 10in (forktail to nose). One of the best eating pan fried species in Hawaii. Also eaten raw (sashimi). Puts up a pretty good fight as well.

Spiral Buffet: The Most Amazing Buffet I've Ever Seen! (Manila Day 4)

On Day 4 in Manila, Sofitel Philippine Plaza in Manila invited us to go to their Spiral Sunday brunch / lunch buffet. Since I had already heard about it from others, many of whom said it was the best and grandest buffet in the Philippines, and maybe in Asia, I was pretty excited to have the chance to try it out.
We arrived right as the sunday lunch buffet started, right at 12 noon, and we first met the manager who showed us around the buffet, and explained the philosophy of the buffet. At Spiral Buffet in Manila they have 21 different food ateliers, which is French means artisan workstations - so at the buffet they mean different types of cuisine and stalls. So there are basically 21 different types of cuisine to choose from, French, Indian, Filipino, Thai, and a full cheese room, and fresh cold Japanese section as well. As soon as we sat down, we were poured a glass of champagne to begin with. There are two different prices for the sunday brunch buffet - you can either go with unlimited alcoholic beverages (champagne and wine) or you can go without alcohol. If you’re interested in drinking, the former option is a great option.
I had no clue where to start eating, so I just went with the food that was the closest to our table - the cold Japanese atelier - including a full tuna sitting and waiting to be sliced by the piece. After my plate of sushi and sashimi and caviar, I then had a plate of Filipino food including crocodile adobo and the infamous balut - a fertilized boiled egg - all of which were pretty good. I then had a plate of Indian food, French food, and some Japanese hot food too.
What I really liked about Spiral Buffet at Sofitel Manila is that even though it was so incredibly grand and so extensive, the food was cooked in small batches, so it wouldn’t sit too long before being finished off. This way, the food remained fresh, and hot, and though it was a buffet, the quality was truly top notch. I haven’t been to too many hotel buffets in my life, but this was easily one of the best buffets I’ve ever seen or eaten at.

FISHING FOR MONSTER TRUMPET FISH DAY & NIGHT!
I decided to USE Okuma's Steelhead/Salmon Fishing Rods for night & day fishing in Hawaii. Have a 7'9 with a Shimano Stradic CI4 3000 w/4lb Trilene & 10'9 with a Stradic CI4 4000 w/8lb Trilene. Only thing i can say is these are amazing light-weight rods that can handle fish with ease! Plus i'm getting superb casting distance as well. I highly recommend these models to any serious advanced/beginner angler. Multitude of lengths & power ratings to choose from. I'm using homemade Hawaiian Style flies with Scuba Blues extended soft glow grubs provided by Landon Yamamoto's Completely Hooked Lures(on FB). The choice of using an ultra violet light emitter at night was 2 fold, you don't spook the fish by intense flashes of visible white light & the ultra-violet makes the grub glow brighter & stronger with no visible light flashes to the fish.

Wild King Salmon
This shiny scaled swimmer with the pink interior is popularly consumed for its high fat and flavor content, not to mention the Wild Kind species is among the largest of its kind. The price per pound at the Wild Alaskan Salmon & Seafood company weighs in at $22 dollars.
Ahi, Yellowfin tuna
The most expensive shipment of this variety of tuna comes from the Honolulu Fish Company at an impressive $162 dollars per three pounds.
The Pacific Swordfish
While fresh catch is only brought in from August through October, the hearty Pacific swordfish is made available throughout the entire year. Due to its meaty nature, foodies prefer the cooking style to be grilled and prepared in the style of a kabob. The price of Pacific swordfish goes up to $62 dollars for only 24 ounces.
Coffin Bay King Oyster
As the name implies, these Australian Coffin Bay oysters really are king of the ocean. Selling at $100 dollars each, this money-making mollusk has been the recent target for the world’s best restaurants. Coffin Bay King grows for six years and produces ten times the extra meat inside their pearly white exteriors.
Puffer fish
Only one drop of poison from the powerful puffer fish will deem a diner dead instantaneously. Due to FDA regulations, there are fewer than fifty dining establishments authorized in Japan to serve the exclusive puffer fish. One fish goes for about $280 dollars, and prices for a portion range from twelve dollars to two hundred, dependent on whether diners are seeking a super-small snack or the full experience.
Bay Eel
The Bay eel, also known as the American eel, came from Chesapeake Bay in the United states. While the price per pound for this fish reached upwards of $5,000 Hong Kong dollars, the U.S. government has deemed eel populations and the commercial industry worth twelve million dollars in 2017.
Almas caviar
Caviar doesn’t have to be a luxury of the rich and famous, or maybe it does. The Caviar House & Prunier is the only eatery in the world offering Almas Caviar to the exquisite likes of its clientele. These elegant eggs are served and sold in a tin made of 24 karat gold! The price of these fancy fish eggs— $25,162 dollars.
Aquarium fish
Some of these beauties can cost up to $400,000 dollars. And fish collectors and enthusiasts consider the splurge worth every penny. For example, the Platinum Arowana is a dull-looking submarine of a fish lacking the ability to smile. Yet this 400k phenomena is considered the most rare and expensive fish in the world. The freshwater polka dot stingray looks exactly as it sounds— and this spotted sea beauty can sell at an upward of $100,000 dollars. The Masked Angelfish looks a bit like Zorro and has an iridescent white figure with a deep purple masked face and tailfin. The mysterious marine creature sells for $20,000 dollars and is associated with the captivating corral reefs nestled among the Hawaiian Islands. The 10,000-dollar Blade fin fish is as cute as it is tiny— making the find all the more worth it. Extremely hard to seize due to their size as well as speedy swimming, this Caribbean catch likes very deep waters, also adding to the rarity of one’s aquarium addition. If one were looking for a much more affordable fish friend, alas, in its angelic form—the Clarion Angelfish: prized at a measly $2,500 dollars.
The Legend of the White Koi Carp
Speculated however is that she is mind-blowingly wealthy and an avid follower of the Koi community. Ms. Yingying has now been awarded the opportunity to breed the award-winning S Legend, which will produce about 500,00 eggs, with only 5,000 becoming marketable quality. S Legend is a 101-centimeter-long white Koi Carp from the highly regarded Kohaku variety.
Kiyoshi Kimura: The Tuna King
In 2013, Japanese sushi tycoon Kiyoshi Kimura caught the record for the most expensive tuna ever purchased, and this new year of 2019, he doubled that. Kimura dished out an astonishing $3.1 Million Dollars for a giant tuna— deeming this silver swimmer the world’s most expensive. The bluefin tuna, an endangered species, was purchased by the gutsy guru at Tokyo’s new fish market this new year. Weighing in at 612 pounds, Kimura claims it was worth every penny. Normally, a fish of this size and caliber would auction off at around $60,000 dollars, however, today’s record is solely based on status. At $8,000 dollars per kilo, the tuna sold there was eight times the price of silver, making the world’s biggest fish market a popular tour attraction.
Japanese Food Tour of Osaka - TUNA BELLY (Otoro) That Will Melt-In-Your-Mouth!
Day 3 in Osaka was all about the tuna belly!
0:19 Osaka Castle - One of the most famous places to visit in Osaka is the Osaka Castle. The castle is within a giant park. We started the day off with a trip to the castle, and though we didn’t go inside, we walked around the park, and enjoyed the great views from the outside. It’s well worth a visit when you visit Osaka.
2:57 Camp Curry - After a long morning, we were really hungry, so we did a quick search and found an interesting restaurant right in Umeda Station called Camp Curry. The restaurant specialized in Japanese curry style dishes, all of which were fully camping themed and in style. The curry was a bit on the mild side, but it did taste pretty good because we were so hungry. Overall, not the best Japanese curry, but good for a quick meal when you’re in Umeda in Osaka.
5:57 Tuna Restaurant (Chayamamchi Maguroya (梅田芝田一丁目まぐろや - After walking around Umeda and Osaka Station and doing some shopping at a camera store, we then headed to the northern part of Umeda station where Dwight knew about a izakaya style Japanese restaurant / bar that specialized in tuna. When we arrived the place was almost completely empty, but by the time we left, it was packed out and people were waiting for tables. We started off with some oden and some tuna belly (toro). The tuna belly was one of the most amazing pieces of fish I’ve ever had in my life. It literally just melted completely into my mouth - it started to liquefy without me even chewing it. We hung out at Chayamamchi Maguroya (梅田芝田一丁目まぐろや) for a few hours, and thoroughly enjoyed the atmosphere and especially that melt in your mouth tuna belly!
That was it for Day 3 in Osaka, another delicious day of Japanese food. The highlight of my day was by all means that tuna belly!
