Oggi impariamo a fare i ravioli. La sfoglia tonda, ben tirata, si piega a metà tenendo la parte più abbondante di sopra. Poi iniziamo a mettere il ripieno con la sac à poche. Ciascun ripieno deve essere distanziato dall’altro di un dito. Per avere un buon risultato è fondamentale avere una scacchiera precisa. Un consiglio: iniziate sempre da una prima linea orizzontale, dalla quale poi far partire le linee verticali da ciascun capofila. Terminata la farcitura, vaporizzate un po’ d’acqua su tutta la sfoglia.
A questo punto sollevate la parte della copertura e appoggiatela morbida sui ripieni. Dopo, partendo sempre dalla linea orizzontale, fate uscire l’aria. Poi con la spronella tagliate la pasta passando tra i ripieni. Una volta tagliati, potete prenderli con il raschietto e lasciarli sul telaio.

Today we learn how to make “ravioli”. With a round sfoglia, well rolled, folds in half holding the most abundant part above. Then we start putting the stuffing with the sac à poche. Each filling must be spaced from the other by a finger. To have a good result it is essential to have a precise chessboard. An advice: always start from a first horizontal line, from which then start the vertical lines from each leader. After filling, steam a little water over the entire pastry.
At this point raise the part of the cover and place it soft on the fillings. Afterwards, always starting from the horizontal line, let the air out. Then with the spronella cut the pasta passing between the fillings. Once cut, you can take them with the scraper and leave them on the frame.

In September 2013, I attended a week long pasta making class at the Vecchia Scuola Bolognese.
Carla was our principal instructor. She speaks four languages, has a graduate degree in Anthropology and works more than full time at Vecchia Scuola in Bologna because she enjoys it. In this video she rolled a double mix of pasta to a paper thin density in less than six minutes.

'La Vecchia Scuola Bolognese' was born in 1993 because tourists were asking for something about Bologna that they had not see. From there we started professional courses that teach students the profession in three months, and from there they work all around the world in Italian restaurants. We also have courses that last one day, aimed at tourists. In 2007 we had more than 4,000 foreigners.

Pasta is very important in the United States, but this type of pasta, the pasta from La vecchia scuola bolognese and Bologna is very special, not very many restaurants make this kind of pasta.

I own a restaurant in NYC, an Italian restaurant, and I am here to learn how to make fresh pasta with the hope that I can bring the knowledge back to NY, and that my stuff can do this for the restaurant so we don't have to buy fresh pastas made outside from the restaurant anymore because it's very expensive, it's thousands of dollars every months. So we are hoping to be able to do it in house, and may be expand the business with the fresh pasta.

There's a traditional story that says the shape of the tortellino was inspired by the belly of Venus. Mars and Venus were travelling, and they decided to spend a night at an inn. The owner, amazed by the beauty of Venus, spied on her through a key hole. Once he saw the belly of Venus, he was inspired to produce that very same shape with pasta. This is why this kind of pasta has sensual shapes, because of this meeting. Whereas for the tagliatelle, it seems they were inspired by Lucrezia Borgia, who was forced to ride her horse naked and only covered with her hair. From her hair came the idea of tagliatelle.

Oggi impariamo a fare la sbianchitura. In abbondante acqua salata tuffate una piccola quantità di pasta ripiena da sbianchire, in questo caso i tortelloni. Attenzione: mai farlo con i tortellini, unica pasta ripiena che non può essere sbianchita perché tanto sottile da essere immediatamente cotta una volta a galla.
Aspettate fino a quando la pasta non venga a galla. Appena sarà affiorata, prendetela e lasciatela asciugare e raffreddare su una superficie impermeabile.

Today we will learn how to do a procedure called the “sbianchitura” (the whitening). Submerge in a large quantity of boiling salted water a small amount of stuffed pasta to be whitened, in this case tortelloni. Be careful: never do it with tortellini which is the only stuffed pasta that cannot be whitened because it is so thin that as soon as it floats it is already cooked.
Wait until the tortelloni come out to surface. Then take them out and place them on a waterproof surface so they can cool down and dry.
Now the tortelloni are ready and are you ready for a new recipe?

La pasta fresca fatta a mano
La sfoglia
* Infarinare la spianatoia, posizionarvi la pasta, appiattirla leggermente e infarinarla.
* Poggiare il mattarello al centro della pasta. Utilizzando solo metà palmo della mano, spingere leggermente in basso e poi, con piccoli colpi, spostarsi dal centro verso l'esterno.
* Girare la pasta e procedere sempre dal centro verso l'esterno.
* Girare la sfoglia sottosopra ogni tanto, in modo che si infarini in maniera uniforme. Controllare anche l'uniformità dello spessore e della forma.
* Arrotolare la sfoglia sul mattarello per tirare meglio il centro.
* Partendo sempre da metà disco, far scorrere il matterello seguendo con le mani il bordo della pasta.
* Alternare questo movimento con l'arrotolamento sul mattarello per tirare bene la sfoglia.
* Se l'impasto o il mattarello o il piano di lavoro dovessero essere umidi, infarinarli.
* La sfoglia sarà pronta quando raggiunge una consistenza molto sottile, tanto da vedere attraverso il cerchio di pasta.

Oggi Alessandra ci svela i segreti del ragù. Prepariamo gli ingredienti: 120 grammi di sedano, 120 grammi di carota e 250 grammi di cipolla, 150 grammi di strutto, 500 grammi di conserva di pomodoro, un bel bicchiere vino rosso, meglio se dei Colli bolognesi, 25 grammi di sale grosso, un litro e mezzo circa di acqua, che verseremo a più riprese.
Occorre un chilo carne di manzo: scegliete la cartella o il collo o, al massimo, il sottospalla.
Per prima cosa pulire e lavare rapidamente in acqua fredda gli odori. Fare un trito fine, sciogliere a fuoco basso lo strutto in un tegame che nella vita, possibilmente, abbia fatto solo ragù!
Ora iniziate a soffriggere gli odori. Inizialmente vedrete affiorare la parte liquida degli odori. Lasciate che evapori completamente a fuoco vivace, sempre mescolando, e lasciate soffriggere fino a doratura.
A questo punto aggiungete la carne, non tutta in una volta, e il sale.
Sempre a fuoco vivace e mescolando, appena cambia colore completamente, bagnare con il vino rosso. Lasciate evaporare sempre a fuoco alto, aggiungete la conserva di pomodoro, diluita con una parte dell’acqua, mescolate, abbassate la fiamma e lasciate cuocere lentamente aggiungendo di tanto in tanto tutta l’acqua che serve per portarlo a fine cottura.
Il ragù deve cuocere almeno due o due ore e mezzo.

Today Alessandra teaches how to make ragù. We prepare the ingredients: 120 grams of celery, 120 grams of carrot and 250 grams of onion, 150 grams of lard, 500 grams of tomato sauce, a glass of red wine, better Colli Bolognesi wine, 25 grams of coarse salt, a about a half liter of water, which we will pour on several occasions.You need a kilo of beef: choose the folder or the neck or, at most, the shoulder bag. Il tortellino è il re della cucina bolognese, racchiude tutto ciò che la nostra terra ha da offrire. E poi con il tortellino a tavola si celebra un vero e proprio trionfo del maiale!
Nella tradizione della nostra famiglia il ripieno è cotto: polpa di maiale cotta con burro, sale e pignoletto e brodo. Rosolata bene la carne, si tritano prosciutto, mortadella, parmigiano di 30/36 mesi e si aggiunge carne e sughino, un uovo e il sale.
il ripieno deve riposare almeno una notte.
Ora tocca alla sfoglia ( Servono tre uova. Tagliate dei quadratini di 3 cm per lato e riempite ciascuno con il ripieno (
Il tortellino si chiude piegando un triangolo che lasci delle belle “orecchie” con una bella pancia di ripieno come il tortellone ( ovvero sulla punta dell’indice sovrapponendo poca pasta e premendo forte.
Attenzione: è una leggenda quella secondo la quale i tortellino si chiudono sul mignolo. E’ più difficile e macchinoso.

Tortellino is the king of Bolognese cuisine. It contains everything that our land has to offer. With the tortellino you celebrate a real triumph of the pig!
In the tradition of our family the stuffing is cooked: pork meat cooked with butter, salt, pignoletto wine and broth. Brown the meat well, mince ham, mortadella, Parmesan cheese for 30/36 months and add meat and “sughino”, an egg and salt.
The filling must rest at least one night.
Now touch the “sfoglia” ( Three eggs are needed. Cut the squares of 3 cm each side and fill each one with the filling (
The tortellino closes by folding a triangle that leaves nice ears with a nice stuffed belly like tortellone ( or on the tip of the index overlapping a little pasta and pressing hard.
Warning: it is a legend that according to which the tortellini are closed on the little finger. It is more difficult and cumbersome.
