Absence of a good wine shop for fine vintage wine has caused considerable inconvenience to the affluent community which is forced to drive down to Manila to purchase their wines.
All that has now changed when Yats opens one of the largest wine shops in the Philippines inside Pampanga Clark Freeport Zone next to Angeles City. The wine shop is called Clark Wine Center and it is located near the main entrance of Clark Philippines.
This wine shop of Yats Wine Cellars started off in Clark Freeport, Pampanga, an easy 90-minute drive along the North Expressway from Metro Manila. Rare vintage wines can be found in the cellars of the fine-dining YATS Restaurant and Wine Lounge situated inside Clark's Mimosa Leisure Estate, just before the Casino. Yats also operates the Clark Wine Center -- an independent two-storey wine shop located on the main road of Pampanga Clark Freeport.
Public wine tastings are held from time to time in Clark and sometimes in Manila. Tickets range from p500 to p1500 for these themed events that are professionally run --no wine merchants sponsorship, pushy salesmen or tacky banners to ruin the evening. Each ticket contains a certain number of stubs that can be redeemed for a tasting pour of a wine among those on a line-up which often contains wines that are quite old and expensive. This makes YATS Wine Tasting events the most cost-effective venue to explore new options and expand our knowledge of wine through first-hand encounters.
Wine Seminars have been conducted in the past and may be offered from time to time. These seminars deal with intermediate to advanced subject matters that are aimed at providing useful and practical knowledge for the wine enthusiasts. Topics are focused and treatment, in depth. Beaune France including the Hospices de Beaune in Burgundy France. We visit Beaune - The Capital of Burgundy Wine Country including the Hospices de Beaune (Hôtel-Dieu de Beaune). During our classic Burgundy cruise aboard hotel barge L'Impressionniste we cross the premier cru vineyards into Beaune, capital of Burgundy wine country with a history going back over 2,000 years. We absorb the fascinating 15th century Hotel Dieu Hospice and visit a local winery's cellars to sample some fine local wines.
The capital of the Burgundy wine country, Beaune is one of the best preserved medieval cities in the region. Until the 14th century, Beaune was the residence of the Ducs de Bourgogne. In 1477 it was annexed by Louis XI. First a Gallic sanctuary and then a Roman town, Beaune is now a mecca for wine lovers. This thriving town is surrounded by ramparts and has a labyrinth of caves (wine cellars). During its three-day festival and wine auction in November, free wine-tastings draw huge crowds, many of whom arrive thirsty and leave tipsy. The Hôtel-Dieu, a charity hospital funded by the sale of wines produced on lands donated by its benefactors, was, until 1971, a working hospital. It had been constructed originally to provide free care for men who had fought in the Hundred Years' War. Today, the Musée de l'Hôtel-Dieu displays Flemish-Burgundian art. Its Grand Salle, 165 feet long, has its original furniture.
Burgundy
Burgundy boasts some of the world's finest wines with around 60,000 acres of sunlit vines and arguably the prettiest canals in France. The Burgundy Canal winds its way in smooth curves through the heart of renowned wine growing areas such as Chablis, Côte de Beaune and Côte de Nuits, or rises steeply through a flight of locks that appear like staircases.
The Nivernais Canal meanders alongside the picturesque River Yonne, through a largely undiscovered region near the Morvan Hills, passing sleepy villages and Charolais cattle grazing in the lush pastures. This is the original home of hotel barging with its hand-swung bridges and old logging sites, and where time seems to have stood still for centuries.
The landscape around the Burgundy Canal is one of rolling hills eroded over the centuries and covered in forests of oak, maple and pine and where spring, summer and autumn each leave a unique signature. Medieval towns are surrounded by unspoilt countryside and the wonderful markets have stalls brimming with fresh local products cultivated on the fertile plains.
This is a region with a vast variety of cheeses, in all shapes, sizes and colours, strong in character or mild and fresh and all can be enjoyed with full-bodied red Burgundies, or perhaps with lighter white Chablis wines. Burgundy's gastronomic tradition is certainly rich and diverse and a sedate cruise on a hotel barge along one of its delightful waterways will allow you to indulge in good food and wine, two of the real pleasures in life.
What is hotel barging?
Despite the growing popularity of cruising, especiallly on large river vessels, hotel barging is still a little known niche concept. Most hotel barges started life as cargo vessels but have since been painstakingly converted to offer luxury boutique accommodation for small groups of up to 20 passengers.
This is cruising, but in a very different style to ships plying the big rivers or oceans. The pace is slow, with a 6 day cruise covering maybe just 50 miles along a rural canal. Passengers can walk or bike the towpaths as their floating hotel glides gently along. Burgundy Wine Tasting the Edge Bar + Steak Four Seasons on Brickell
Burgundy is one of the world's greatest wine producing regions and when it comes to the French concept of terroir, Burgundy is the greatest example of this concept of sense of place or where the wine comes from. Terroir is the place where the wine comes from and all of its special characteristics that the aspect of the vineyard site, type of soils that are present and weather conditions that exist where the vineyard resides.
When it comes to Burgundy there are only two grape varietals that are grown here, Chardonnay for the whites and Pinot Noir for the reds. This makes it rather simple to figure out the varietal composition of the wines and to focus on the terroir of each different cru or vineyard site. There are three levels of wines in Burgundy with Grand Cru making up the top 1% of the wines produced here. Many of the grand cru sites in Burgundy have been recognized as superior terroirs for close to 1000 years. Premier Cru is next down the quality ladder from Grand Cru and there are only 10% of the wines in Burgundy designated as Premier Cru vineyard sites. The next level down is village wine which the rest of the wines of Burgundy are considered to be village level.
There are 25 Grand Cru vineyard sites for reds and 5 Grand Cru sites for the white wines in the Cotes d'or. We have not yet considered Chablis, which has 8 grand cru vineyards of its own or Beaujolaise to the south which is considered traditionally to be a part of Burgundy but the red varietal here is not Pinot Noir but rather Beaujoliase Gamay, which grows better in the granite soils of this region. We have still not even mentioned the Macon or Cote Chalonnaise so there are always exceptions to the rule and Burgundy is a rather large wine producing region.
Tonight we will just be focusing on the top area called the Cotes D'or which contains the Cotes de Beaune where the great whites (all five Grand Crus for white are located here) and the Cotes de Nuits (24 of the 25 grand Crus for red are located here).

Summer Chablis Offering
It is summertime year round here in South Florida but when things really get how there is nothing better to cool you off than a nice Chablis.
For years many of the self proclaimed American wine aficionados thought that Chablis was a light insipid wine meant for quaffing and if it cost more than four dollars a glass in a restaurant you had the impression that the suave waiter was hustling you. Well, that may not have been true for everyone, the French are still hung up on the fact that the United States has never respected certain namesakes that remain sacred and describe a style, type, and genre of a region's wine. Our country's wine industry has raised our noses to the French and said Boo Hoo.
Chablis is the northernmost region of the Burgundy appellation. The wines coming from this region are 95% white and most of that is Chardonnay. The wines have crisp, racy acidity, and very lean and sometimes tart fruit. Crisp and lean in style rather than big and fat like the wines of the Côte d'Or, the wines of the northern most region in Burgundy are unique and stylistically diverse enough to be mistaken for a sauvignon blanc. The Grand Cru and Premier Cru terroir here is limestoney-chalk, they have more in common with Champagne than the clayey soil of the Cote d'Beaune. The only grape permitted here is Chardonnay, locally known as Beaunois. It must have a minimum alcohol content of 10%, from a yield of 50hl/ha, about 4 tons per acre. The village wines are not keepers, they should be consumed within the first few years, the Premier and Grand Crus, however, can be some of the longest lived wines of this varietal from anywhere in the world.
The Chablis region covers four different appellations -- Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. Despite the world renown recognition of the Chablis name, the post-war lack of workforce, a weak demand and some poor vintages culminated with the disastrous frost of 1956, when the locals were skiing down the what is now the Grand Cru of Les Clos in February. The region was facing extinction. Replanting began on the finer slopes and has continued to expand rapidly during the last two decades. Although further expansion is possible, the true quality of Chablis comes as much from limestoney chalk soil known as Kimmeridgian after the Dorset village of Kimmeridge, as from the Chardonnay grape. One school of thought is in favor of expansion, maintaining that the world-wide demand for Chablis is inexhaustible; the other argues that true Chablis is from that chalky soil and that expansion outside the geographical region should be resisted. A run of good, productive vintages in the 1980's have served to enhance the quality image of Chablis again as we slowly begin to forget the jug wines labeled Chablis from large California producers who should remain nameless. Today the best wines of the region of Chablis are starting to make it back into the cellars of wine collectors. The last four vintages, 2009, 2010, 2011 and 2012 have been very good excellent. This success has given both the expansionists and the purists further weight to their cause.
For my taste the best vintage among these four is 2010 and most of these wines are now gone from the marketplace but we managed to come across a few things like this premier cru wine from Lupe Cholet for $31.50/bottle this is one of the best values we have ever had in the store from Chablis!!

Video / Movie Clip recorded in December 2015, at the 10th Anniversary Beaune Boogie & Blues Festival, taking place in Beaune, the wine capital of Burgundy in the Côte d'Or department in eastern France.
Lively Aftershow Party/Jam Session at L'Oreginal Bar. Walking through the mist at 2.30AMin the morning I find the Bar and head in to hear Jean-Pierre Bertrand and Nikek Mokar at the piano. Later Axel Zwingenberger can be seen playing one of my favourite pieces of Boogie Music : his version of Mecca Flat Blues.
