Tempoyak: fermented durian paste
I'm going to make a BIG statement: Tempoyak, and dishes made with it, could be the best of all Malaysian food, if not the world.
So in order to make tempoyak, the durian flesh is removed from the seed, salted, and left to rest in room temperatures for anywhere from a few days to a few months, depending on taste preference, preservation, and how sour you like it.
Ever since I heard about tempoyak many years ago, it was a dream of mine to take a trip to Malaysia to feast upon tempoyak, both the raw fermented version, and cooked into a variety of different dishes. Central Malaysia and the East coast are havens of tempoyak, and I was thrilled to have a chance to finally go.
TEMERLOH, MALAYSIA
Temerloh is in Central Pahang, Malaysia, and we met up with Sufian from Padu Beb ( a local Malaysian food lover and vlogger. He was so much fun to hang out with, and he loved Malaysian food and tempoyak!
Restaurant 1: Gobang Maju Patin Tempoyak
First restaurant we tried was Gobang Maju Patin Tempoyak probably the most famous of all the restaurants in Temerloh that’s dedicated to serving ikan patin tempoyak - which is a silver catfish prepared into a fermented durian tempoyak curry. Along with the regular version, we also ordered “super pedas” - the extra super spicy version. It was a life-changing meal and experience, the tempoyak has a very fruity taste, and I think the durian smell was actually stronger than the taste. It did have a slightly cheese culture taste, and blended down with chilies and turmeric it was phenomenal.
Fermented durian sambal - We also tried their sambal tempoyak, the fermented durian paste dip, mixed with chilies. The best veggies and dip I’ve ever had in my life.
Petai jeruk (pickled stinky bean) - Finally, we couldn’t resist some pickled stink beans.
Restaurant 2: Selera Patin Bangau
Since we were in Temerloh, Malaysia, we decided to try a second tempoyak catfish curry restaurant just down the road.
I loved the atmosphere here, so laid back, a local Malaysian food spot, in someone's backyard. Again, it was a similar situation, the tempoyak as the main event, but other Malaysian foods to eat as well.
Their ikan patin tempoyak (fermented durian curry with silver catfish) was outstanding, spicy, full of vibrant flavor, and again, fruity from the durian paste - but almost mango tasting.
Total price - 67 MRY ($16.44)
It was an incredible day of eating tempoyak, and it will forever be one of my favorite things to eat in Malaysia, and the entire world.

Musang King Durian: The BEST Durian In The World!

Compared to other foods I ate in Singapore, durian is a little bit different… it’s the only all natural, uncooked, and unprepared, right off the tree delicacy I had. The reason I had to include durian on my must eat list of foods is not only because it’s the King of Fruit and such an amazing natural creation, but also because I’m a bit addicted to durian and I can’t resist any opportunity to eat it.
Combat Durian - Known as Combat Durian because they want you to “come back,” or rather after eating one of their durians you’ll want to come back immediately - or just sleep for a little while and wake up and eat another durian. I showed up in the mid-afternoon, and the durian was all on display and ready to be sold. One of the varieties of durian that Combat is most well known for is Musang King, which in Chinese is called Mao Shan Wang, and in English is called Cat Mountain King. The type of durian is originally from Malaysia, and even the durians sold at Combat are grown in Malaysia on the private farm of the owner of the shop.
Ying and I chose a nice almost 2 kilo durian, which cost me a total of $32 SGD, which is very expensive for a fruit, but after eating it, I can tell you it was definitely worth every dollar. After choosing our fruit and cutting it up, we took a seat at one of the red tables and began to feast.
The lumps of the Musang King durian were very yellow, like butter, and had a waxy shiny skin on each piece. The fruit was perfectly ripe, and it was one of the creamiest things I’ve ever had in my life - like whipped cream, sweet like honey, and with a tinge of a bitterness to contrast it all. It was indeed probably the best durian I’ve ever had in my life. Ying and I sat there in almost near silence, apart from lots of groaning, and finishing off our Mao Shan Wang. The final bite was a little bitter sweet, knowing it was the end, but knowing that I had just consumed one of the best durians I had ever eaten in my life.

How to get there: The closest MRT station in Novena, and I walked from there in about 15 minutes. But alternatively you can jump on bus #154.
