There are few cities in the world that can compare to Jerusalem in terms of ancient history and religious significance. It’s one of the most fascinating cities in the world, and it’s a city that I’ve wanted to visit my entire life. Finally, along with my friend David ( and Rafram, we explored Jerusalem to discover the food treasures the city has to offer - and let me tell you, you’ll find some incredibly delicious food in Jerusalem!
We started off the Jerusalem food tour by first walking around East Jerusalem and starting with the best plate of hummus I’ve ever had. We then toured around Old Jerusalem, and enjoyed some incredible Palestinian food kebabs cooked by an incredible man who cooked with serious love and passion. Another highlight in Jerusalem was the mutabak, a thin pastry stuffed with cheese and baked.
After eating our way through Old Jerusalem, we then headed into West Jerusalem and went to lunch at an Israeli Jewish restaurant serving a mix of amazing dishes. The food was home-cooked in style, and absolutely sensation. A few more snacks and sightseeing throughout the afternoon, and that brought us all the way to dinner where David had made reservations to eat at one of the hottest restaurants in Jerusalem, Machneyuda Restaurant. It was quite an experience, and an amazing meal and lively atmosphere to wrap up this ultimate Jerusalem food tour.
Here’s all the food and places included in this Palestinian food and Israeli food tour of Jerusalem:

It was a lot of food in a single day, but it was one of the greatest food and learning days that I’ve ever had in my life. The generosity of the people we connected with, paired with the food, was truly a memorable experience in Jerusalem.
Thank you again to David ( and Rafram for showing me some of the best food in Jerusalem!

In Chef Tali Friedman's Studio cooking school we took turns as sous chefs and learned the basics of some delicious local dishes—all the while downing shots of arak (a grape drink made with fresh fennel seeds) and Israeli wine. Martha Stewart was here in December 2011.

Institute for International Culinary Arts in Northern Israel
For many years, Israel has been recognized the world over as the “Start-Up Nation,” with more hi-tech companies per capita than anywhere else in the world. While economically and commercially Israel has grown thanks to the hi-tech boom—largely concentrated in the country’s center—physically, it remains relatively small, offering significantly lower wages for residents living in Israel’s north. However, a 21st century start-up revolution is quickly taking root, promising to transform one of the most essential and basic industries on the planet: Food.
Agricultural and food technology challenges the way we grow, cultivate, cook, and consume our food, helping alleviate health issues such as diabetes, food allergies, obesity, and even hunger. Nearly 40% of Food-Tech start-ups around the world are located in Israel, and are an integral part of a massive socioeconomic change in Israel’s Upper Galilee region.
As part of the change in this picturesque but remote region, Jewish National Fund-USA (JNF-USA) has partnered with ii2020, an Israeli NGO, to focus on bringing food technology and innovation, business accelerators and incubators, and a world-class Institute of Culinary Arts to the Upper Eastern Galilee.

Machane Yehuda Market
The Machane Yehuda Market or shuk is the largest market in Jerusalem with over 250 vendors selling everything from fruit and vegetables to specialty foods, and clothing to Judaica. The market is the main traditional marketplace of Jerusalem and is an experience that must be part of any visit to Jerusalem, filled with fascinating sounds, sights, and smells.

Spices – the smells of the Machane Yehuda Market by ForestForTrees, on Flickr
The Machane Yehuda Market is set between Aggripas and Jaffa Streets, with two main aisles and then many further small walkways once inside. It is a maze and myriad of sights, sounds, and smells, an intense sensory experience and memorable life experience! Just a ten-minute walk from the center of Jerusalem, the market is a fascinating place to stroll whether you are interested just in observing the magnificent sculpted displays of spices, mouthwatering array of foods, and stunning energy of the place, or if you want to get involved in real-market buying, negotiating and tasting!
The market is open Sunday to Friday and closed on Shabbat (Saturday) and is particularly busy on Thursdays and Friday mornings with shoppers preparing for the Sabbath. On our Jerusalem Day Tour, you will get a taste for all the market has to offer. If you are particularly interested, it is possible to take a walking tour followed by a cookery class every week

My favorite kitchen equipment:
Jerusalem bagel
4 cups (500g) all-purpose flour
1 tbsp active dry yeast
1 tbsp salt
3 tbsp sugar
1½ cups (360 ml) warm water
3 tbsp olive oil
1.25 cups (187g) sesame seeds
Zaatar
Method:
1. Put flour, yeast and sugar in the bowl of a stand mixer. Mix and add salt and water.
2. With dough hook attachment knead the dough for 6-7 minutes, until smooth and elastic. Place in an oiled bowl. Cover bowl with plastic wrap or a damp kitchen towel, let rise until doubled, about 45 minutes.
3. When the dough has risen, punch it down and turn it out onto a lightly floured countertop. Divide into 6 equal pieces. Shape each piece into a ball. Dig your thumbs into the center to create a hole and stretch the dough outward to create an oval ring.
4. Dip the bagels in cold water then dip coat with sesame seeds. Place the bagels on a try lined with parchments paper. Cover and let rest for 20 minutes.
5. Preheat oven to 190C (375F).
6. Bake for 15-20 minutes. Until golden brown.
• Serve with extra virgin olive oil and zaatar.
