It’s another sunny day during my journey along the west coast of lower Salento and my route takes me to the beautiful city of Gallipoli.
A few steps away from the enchanting blue expanse, I go to discover the taste of this bright and placid sea at the “La Giudecca” restaurant, which takes its name from the promenade it overlooks.

The country house is our venue for your Italian cooking holiday. It lies just below the hilltop village of Fara Sabina and is situated in the Olive groves, Vines and Orchards. It was built by the Benedictine Monks from nearby Farfa abbey on top of pre-existing Roman ruins in the early middle ages. The building had served as the first line of defence for one of Europe's most powerful abbeys.
It has been transformed into what we see today, a fine restored country house with a lovely restaurant where people travel from miles around to taste its freshly prepared local produce .
Its also the venue for our first cooking lesson with Angelina and Lina.

L'Olivone, the oldest olive tree in Sabina
We are here at Canneto where there is one of the oldest olive trees in Sabina, an ancient tree more than two thousand years old. It isn't the only ancient olive tree in the area -- there is another at Palombara Sabina, but all of Sabina is full of ancient groves
