Tajik cuisine is a traditional cuisine of Tajikistan, and has much in common with Russian, Afghan, and Uzbek cuisines. Plov (pilaf) (Tajik: палав, Uzbek: palov), also called osh (Tajik: ош), is the national dish in Tajikistan, as in other countries in the region. Green tea is the national drink.
Palav or osh, generically known as plov (pilaf), is a rice dish made with shredded yellow turnip or carrot, and pieces of meat, all fried together in vegetable oil or mutton fat in a special qazan (a wok-shaped cauldron) over an open flame. The meat is cubed, the carrots are chopped finely into long strips, and the rice is colored yellow or orange by the frying carrots and the oil. The dish is eaten communally from a single large plate placed at the center of the table, often in with one's hands in the traditional way.
Another traditional dish that is still eaten with hands from a communal plate is qurutob,whose name describes the preparation method: qurut (Tajik: қурут, dried balls of salty cheese) is dissolved in water (Tajik: об, ob) and the liquid is poured over strips of а thin flaky flatbread (patyr or fatir, Tajik: фатир, or more accurately фатир равғанӣ, fatir ravghani, i.e., fatir made with butter or tallow for flakiness). Before serving the dish is topped with onions fried in oil until golden and other fried vegetables. No meat is added. Qurotob is considered the national dish.
Meals are almost always served with non (Tajik: нон), flatbread found throughout Central Asia. If a Tajik has food but not non, he will say he is out of food. If non is dropped on the ground, people will put it up on a high ledge for beggars or birds. Legend holds that one is not supposed to put non upside down because this will bring bad luck. The same holds true if anything is put on top of the non, unless it is another piece of non.
Traditional Tajik soups include mainly meat and vegetable soups (such as shurbo and piti), and meat soups with noodles (such as laghmon and ugro). Other dishes shared regionally, either as fast food or as an appetizer, include manti (steamed meat dumplings), tushbera (pelmeni), sambusa (a triangular pastry with either a meat and onion stuffing or a pumpkin and onion stuffing, baked in a tandoor oven), and belyash (pl. belyashi, Tajik: беляши, deep-fried cakes made of yeast dough and filled with minced meat, similar to pirozhki).

Panjakent also or Penjikent, is a city in the Sughd province of Tajikistan on the Zeravshan River, with a population of 33,000 (2000 census). It was once an ancient town in Sogdiana. The ruins of the old town are on the outskirts of the modern city. The Sarazm Important Bird Area lies downstream of the city on the tugay-vegetated floodplain of the river. Ancient Panjekent was a small but flourishing town of the Soghdians in pre-Islamic Central Asia. It was known as Panchekanth.It means five towns (villages) in Sanskrit. The ethnic and territorial name Soghd/Soghdian or Sughd/Sughdian was mentioned in history as early as the Iranian Achaemenid Dynasty (6th century BC). The Achaemenids founded several city-states, as well as cities along the ancient Silk road and in the Zarafshan valley. The name Penjikent is derived from panj (five) and kant (settlements), meaning five settlements. Rudaki, the founder of Persian-Tajik literature called Adam of poets, was born in Panjakent.

Tajikistan is a mountainous, landlocked country in Central Asia with an area of 143,100 km2 (55,300 sq mi) and an estimated population of 8.7 million people as of 2016. It is bordered by Afghanistan to the south, Uzbekistan to the west, Kyrgyzstan to the north, and China to the east. The traditional homelands of the Tajik people include present-day Tajikistan as well as parts of Afghanistan and Uzbekistan.
Geography
Tajikistan is landlocked, and is the smallest nation in Central Asia by area. It lies mostly between latitudes 36° and 41° N, and longitudes 67° and 75° E. It is covered by mountains of the Pamir range, and more than fifty percent of the country is over 3,000 metres (9,800 ft) above sea level. The only major areas of lower land are in the north (part of the Fergana Valley), and in the southern Kofarnihon and Vakhsh river valleys, which form the Amu Darya. Dushanbe is located on the southern slopes above the Kofarnihon valley. The Amu Darya and Panj rivers mark the border with Afghanistan, and the glaciers in Tajikistan's mountains are the major source of runoff for the Aral Sea. Tajikistan has a population of 8,734,951 (2016 est.) of which 70% are under the age of 30 and 35% are between the ages of 14 and 30. Tajiks who speak Tajik (a dialect of Persian) are the main ethnic group, although there are sizeable minorities of Uzbeks and Russians, whose numbers are declining due to emigration.The Pamiris of Badakhshan, a small population of Yaghnobi people, and a sizeable minority of Ismailis are all considered to belong to the larger group of Tajiks. All citizens of Tajikistan are called Tajikistanis.
In 1989, ethnic Russians in Tajikistan made up 7.6% of the population, but they are now less than 0.5%, after the civil war spurred Russian emigration.[88] The ethnic German population of Tajikistan has also declined due to emigration: having topped at 38,853 in 1979, it has almost vanished since the collapse of the Soviet Union.

MARRIAGE IN TAJIKISTAN
In rural areas, marriage and wedding tend to follow traditional customs. Many marriage are arranged and traditional wedding ceremonies and celebrations are held. Couples usually move in with the groom’s family until they get a house of their own. In urban areas, more Soviet-Russian style marriage and wedding customs are present. Couples often marry in a civil and have more say in their choice of a partner.
Bennigsen and Wimbush wrote in 1986: Traditional customs such as the kalym (bride-price), the early marriage of girls, the levirate and sororate, preferences of marriage between cousins, sexual segregation, aksakalism (local rule by 'white beards') and even polygamy are observed by Tajiks more generally than by any other Muslim nationality of Central Asia.
According to Everyculture.com: “Building a family through a marriage sanctified by a religious ceremony is considered one of the most sacred aspects of life. It is also a way to develop a social structure with the blessings and support of the community. Often a matchmaker is involved in choosing a bride. A daughter will move to the home of her husband's family, and her parents want to be sure that she will be provided for. They pay close attention to the groom's education and lifestyle, and the economic situation of his family. “Children may be promised in infancy, or a daughter may marry the son of her uncle. A marriage between the children of brothers is considered economically disadvantageous. Although illegal, polygyny has become common. These marriages are not officially recorded but may account for 20 percent of all marriages. After age 23, a young woman is considered unmarketable for marriage except as a second wife. Divorce is rare, and a first wife usually does not leave when her husband takes a second wife. Marriage to a non-Muslim is frowned upon.” Tajiks intermarry more with Uzbeks and other Muslim groups than they do with Russians. In the past, the Tajiks in China seldom intermarried with other ethnic groups. Such marriages, if any, were confined to those with Uygurs and Kirgizs. Marriages were completely decided by the parents. Except for siblings, people could marry anyone regardless of seniority and kinship. Therefore marriages between cousins were very common. Usually the husband should be older than his wife. Among Tajik people, witnessing the whole course of their children’s marriage is a sacred duty for parents. Getting divorce, leaving the wife or the husband is shameful. Therefore, most of the Tajik couples are single-minded each other and remain a devoted couple to the end of their lives.

Dushanbe-Tajikistan
Dushanbe is the capital and largest city of Tajikistan. Dushanbe means Monday in the Tajik language. It was named this way because it grew from a village that originally had a popular market on Mondays. As of 2016, Dushanbe had a population of 810,700.
Historically a small village, Dushanbe was made the capital of the Tajik Autonomous Soviet Socialist Republic in 1924. Until 1929, the city was known in Russian as Dyushambe (Russian: Дюшамбе, Dyushambe), and from 1929 to 1961 as Stalinabad (Tajik: Сталинобод, Stalinobod) which was named after Joseph Stalin.
Situated at the confluence of two rivers, Varzob and Kofarnihon, Dushanbe is the capital of Tajikistan. Although archaeological remnants dating to the 5th century BC have been discovered in the area, there is little to suggest that Dushanbe was more than a small village until the early 20th century.
The first written mention of the village of Dushanbe occurred in 1676. It was at the crossroads, where a large bazaar occurred on Mondays, hence the name Dushanbe-Bazar (Tajik: Душанбе Бозор, Dushanbe Bozor) from Dushanbe, which means Monday in the Persian language, literally – the second day (du) after Saturday.In the village, there were more than 500 households and a population of about 8,000 people.
