For this season of Fall / Winter 2013-2014 Chef Alfonso Corona will teach these classes again, with menus full of tradition and authentic Mexican flavors that you, family and friends can cook at home.
In this new series of Mexican cooking classes 2013-2014 , MONDAY is the day to learn to cook rich and varied Mexican dishes with the team of El Arrayán. Local residents and foreign visitors can meet and prepare some of our most delicious Mexican dishes such as: Chile en Nogada, Mole Poblano , Cochinita Pibil , tamales and of course a pre-Hispanic dish as Pozole .
To please our foodies and amateur chefs more cooking classes will be offered starting this fall and once a month one cooking class with breakfast and visit tosuppliers will be available.

Today we visit two of the most famous Indigenous communities in Chiapas—San Juan Chamula and Zinacantán.
San Juan Chamula is most famous for its church in the center of town, where families gather to practice their fascinating ancient rituals which involve the sacrificing of chickens and drinking coca cola. The community has very strict rules about not taking photos or videos inside the church—and there are some terrible rumors about tourists that took that risk! San Juan Chamula also has very strict guidelines outside of the church. Only people native and born to Chamula are allowed to live in the community. Men can have up to five wives. State and federal police are not allowed in the city whatsoever—Chamula is self governing and has its own police system.
In the second half of today’s video, we visit the town of Zinacantan, which is a stark contrast to San Juan Chamula. Both women and men wear brightly colored floral clothing and are very friendly and welcoming to outsiders. The main sources of the economy here are flowers—mainly roses—and also textiles. We had the opportunity to try on the traditional attire and even attend a traditional wedding! Finally, we end our day with some delicious home cooked bean and cheese tacos in the most cozy little kitchen.

Casa Vizcarra's location, on a narrow cobblestone neighborhood street, is only a few short blocks from the more lively boardwalk, nightclubs and great people watching.
Casa Vizcarra is in a real Mexican neighborhood complete with local culture and soul, with street music, vendors selling fresh shrimp, and kids yelling and playing soccer in the streets. Ramiro chops coconuts on the curb, a donkey brays from across the river, and roosters crow in the morning. Ours is a narrow, quaint cobblestone street, with no noisy city buses and great neighbors.

Pozole, as common these days in Mexican restaurants as tacos, has a long history in Meso-America. Originally a ceremonious dish prepared with the body parts of sacrificial victims and shared among the citizens to celebrate a military victory, it was served to Spanish missionaries who loved it and wanted it popularized. They dictated that pork be substituted for human flesh (apparently the two share common flavors) and Pozole never looked back.
It is composed of a complex and perky meat-broth redolent of slow-cooked, extra plump hominy-grits (elote) and a variety of tender morsels of pork (including tongue, my favorite). It is topped with finely shredded cabbage and lettuce, as well as onion, sliced cucumber and radish, with tostadas and the ubiquitous salsa and lime on the side.
I became attracted to Pozole in Oaxaca where I spent some winters in the seventies. They serve it late at night out of street stalls to somewhat-sober-up the drunks before they go home. Slurping right along with the best of them, I was treated to a taste that seemed to bespeak the aromas of this very fragrant country. I became a big fan.
In Vallarta, I chanced on a wonderful version that is served idiosyncratically inside chef Teresa’s home between two and six p.m.; but only on Saturdays. Talk about something you need to schedule. And get to: Teresa’s is on a side street of Palo Seco, not particularly a barrio with which many ex-pats are familiar (some fifteen minutes from downtown, and taxis know where it is).
If you make it there, you’ll get as authentic a family-dining experience as there is (except that you get to pay at the end). You’ll share the dining table with others, and you’ll chat with Teresa and her daughter-in-law Anna as they concoct some magic in their open kitchen. They offer a variety of local tortilla-based specialties, and of course the soup, a big steaming pot of which reigns over everything.
The meal-size pozole is 70 pesos. The memory, priceless.

Eco Travel - Compost and Recycling Facility At A Jungle Eco Park in Mexico

In this eco-travel video, Shawna Coronado goes to Mexico to visit a world class composting and recycling facility which is located at the Xel-Ha eco-park on the Mayan Riviera coast in the Yucatan Peninsula.
Saitra Perez-Cabrera, the Xel-Ha recycling and composting facility manager, gives a detailed review of the recycling and composting process. Xel-Ha feeds up to 11,000 people per day and its kitchen system features a fantastic organic recycling program whereby all the food waste is recycled and composted, even the meats and bones. You can see this demonstrated in the video. All paper, plastic, and metal is recycled on the property and we visit the recycling and compost system with Saitra, who is a biologist who runs the recycling and composting program.

Here are some of my favorite spots in Puerto Vallarta:
For a beautiful (more touristy) beach side dinner head to La Palapa. Great food, good vibes and an unbeatable view!
For something super kid friendly and very lively (and not so touristy) check out PiPi's. They have exceptional service, big portions of yummy food and live entertainment.
Cafe Des Artistes is romantic and beautiful, but not-so kid friendly.
Be sure to walk around the Art's district and pop into some of the cool galleries.
The Botanical Gardens were such a treat! After the photo shoot with my dad and exploring the grounds we had lunch in their restaurant that overlooks the jungle. The weather was a bit overcast that day and it totally added to the calm, serene vibe. I highly recommend! It's a 30 minute bus ride from Puerto Vallarta.
If you are traveling to Puerto Vallarta with little kids, be sure to go for a walk on the Malecon and see all the unique street performers and definitely rent one of those little remote control cars for a few minutes! Your toddler will be in heaven!
For an unique, lux, private, non touristy stay, check out Hotel Conchas Chinas. You can reserve a room from the hotel or rent from an owner. Many of the places are listed on AirBnB.
