From Piazza del Duomo, crossing Pazza delle Erbe on the right side of the church, you can climb towards Rocca di Montestaffoli. Originally a castle of the Lombard Astolfo, later a Dominican Convent, this fortress was built by the Florentines in 1353 when the town submitted to Florence to protect it from possible attacks by Siena or from internal riots that may arise inside the town itself.
The fortress housed soldiers led by a Florentine commander. The fortress has a pentagonal base with a perimeter of approx. 280m, turrets on each corner and passages that linked it to the city walls. It was protected by a front gate and by a drawbridge.
Today only one of the ancient turrets is still safe and open to visitors, and it offers breathtaking views of the historical centre with its unique towers and surrounding countryside. Every year on the third weekend of June the Rocca is the theatre of a tournament called La Giostra dei Bastoni, the pick event of Ferie delle Messi, a local medieval festival.

Il poggio di Montestaffoli era, nell'Alto Medioevo, sede di una rocca posseduta dal vescovo di Volterra, che aveva giurisdizione politica sull'insediamento. Qui era stato istituito un mercato che godeva di una fiorente economia, grazie agli scambi con le città vicine (San Gimignano era infatti all'incrocio tra la via Francigena, sull'asse nord-sud, e la via che congiungeva Pisa con Siena.
La zona di Montestaffoli venne lambita dalle due cerchie murarie, finché nel 1353 i fiorentini, ai quali i sangimignanesi avevano offerto la loro città in cambio di protezione dopo l'epidemia e la carestia del 1348, costruirono l'attuale rocca.
Andata in rovina durante gli anni del Granducato di Toscana, venne restaurata solo nel Novecento, ed oggi, sebbene restino solo le mura e siano persi tutti gli ambienti, è un luogo panoramico dove si godono notevoli viste di San Gimignano e della campagna circostante.
Da alcuni anni viene usata come luogo per rappresentazioni e concerti nella stagione estiva, e recentemente vi sono anche state installate alcune opere d'arte contemporanea.

The walls of San Gimignano are a work of military architecture dating back to the XIII century. The city's first wall dates back to 998 and was located between the hill of Montestaffoli, where there was already a fortress, the market place owned by the bishop of Volterra , and the hill of the Tower with the bishop's castle.
Of this first tracing remain some arches, ancient city gates, which still today are raised in the city fabric. The old route measured 1,108 meters and left at the foot of Montestaffoli and arrived near the church of San Bartolo , next to which the double Arch of the Chancery opens, which once was the southern exit of the castle; then descended along Via Capassi to turn along the current Via Santo Stefano. from here it skirted via degli Innocenti arriving near the Piazza della Cisterna (where the great arch of the Becci, ex-portal) still stands today; finally it went up along Via del Quercecchio, closing near the Montestaffoli.
In the twelfth century, thanks to the flourishing of trade, helped by the passage of the Via Francigena , two villages were formed along the north-south route: that of San Matteo, towards Pisa, and that of San Giovanni, towards Siena, both along a new highway, which were incorporated into the walls with the new layout completed in 1214 .
In 1251 the walls incorporated Montestaffoli, but a few years later, in 1255 , the city was taken by the Guelphs of Florence who ordered the destruction of the walls. Regained independence in 1261 and returned to the Ghibelline supremacy after the battle of Montaperti , the sangimignanesi rebuilt the walls tracing the previous route, but adding for the first time the hill of the Tower to the west, according to the conformation still existing today.
In 1353 the Florentines built the Fortress of Montestaffoli and between the end of XV the iniio of the sixteenth century were erected the five bastions with a circular base of about 13 meters eachom, to update the fortification according to the new needs introduced by the use of Weapons.
The walls are 2,176 meters long and there are five main doors (clockwise from the south):
Porta San Giovanni (on the Via Francigena towards Siena )
Porta Quercecchio (from the simplest forms)
Porta San Matteo (on the Francigena towards Pisa )
Porta San Jacopo
Porta delle Fonti
Excluding the Porta Quercecchio, at each door was located one of the four city districts: Castello di Piazza, San Giovanni and San Matteo. Near the Porta San Giovanni is the large San Francesco Bastion . Between the Quercecchio Gate and the Porta San Matteo, at the highest point of the city, is the Rocca di Montestaffoli , which offers a wide view of the city and of the surrounding countryside.

An independent republic in the Middle Ages, San Gimignano was dominated by two powerful, continually feuding families, the Ardinghelli (Guelf) and the Salvucci (Ghibelline). In 1352, its finances exhausted, the city placed itself under Florence.
San Gimignano is rich in Gothic architecture and is one of the best-preserved Italian medieval towns, with city walls, gates, and 14 of its famous old towers remaining intact. These towers, characteristic of San Gimignano, once numbered 72; they were built by leading families vying with each other for prestige. Most of the towers fell because of insecure foundations. The town’s most notable monuments are the Palazzo del Popolo (1288–1323), containing the civic museum and picture gallery; the Collegiata (the former cathedral, consecrated in 1148), decorated with numerous frescoes; and the church of Sant’Agostino (1280–98), containing frescoes by Benozzo Gozzoli depicting scenes from the life of St. Augustine. The historic town centre was designated a UNESCO World Heritage site in 1990. San Gimignano is an important tourist centre and is noted for its wines. Pop. (2011) mun., 7,677.

La Rocca è il Centro comunale di documentazione e degustazione del vino Vernaccia di San Gimignano e dei prodotti locali. Il centro è stato realizzato dal Consorzio della Denominazione San Gimignano, il quale riunisce tutti i produttori del vino Vernaccia di San Gimignano DOCG, prima Denominazione di Origine italiana nel 1966, e si propone di tutelare e valorizzare la produzione vitivinicola del territorio.
Le etichette in degustazione cambiano continuamente dato che sono oltre duecento i vini di tutti i produttori del territorio. Le degustazioni sono programmate con l’assistenza di esperti sommelier, i quali possono fornire ai visitatori sia nozioni di base per coloro che si avvicinano per la prima volta ai vini del territorio, che informazioni approfondite per i più esperti. E’ possibile organizzare, anche su prenotazione, dei seminari durante i quali vengono fornite tutte le informazioni sui vini del territorio e vengono proposti alcuni abbinamenti con prodotti locali.

SAN GIMIGNANO
The castle of San Gimignano is very ancient, but the full development of the town was at the end of the Dark ages, when the main buildings and towers of the town were builded.
The towers of San Gimignano are unique in the World. Nowadays we can admire just 13 of the ancient 72 towers, that where the symbol of the power of the richest families of the town.
San Gimignano was a sort of Manhattan of the middle age.
San Gimignano from 1990 is one of the UNESCO World Heritage Sites.
If you walk the wall of the castle you can watch one of the most impressive landscapes of the Tuscan hills and valleys.
In Sant'Agostino square, there is the Church (with the same name), in romanesque-style with some gothic elements. The Church was builded in 1298.
On the same square there is one of the oldest church of San Gimignano, the Church of S.Pietro in Forliano, that was builded in XII century.
If you across the S.Jacopo Gate, you can find the Church of S.Girolamo, that was builded in 1337.
Close to the gate, there is the romanesque-style church of S.Jacopo of Templars. It seems that it was builded by the templar knights that came back from the I crusade
After the gate of S.Jacopo, there is the gate Delle Fonti.
This gate was the ancient access to the public fountains for the whole population. This gata was builded in XIV century, to cover the ancient stone fountain builded by Lombards in IX century.
With a few steps walk you can find the big buiilding of San Domenico and then the Church of San Lorenzo in Ponte, that was builded in 1240 and it's in romanesque-style
Inside the narrow streets of the town you can find the House of Santa Fina, a very young saint, who is celebrated yearly, on march, the 12th
Piazza della Cisterna was the ancient seat of the main shops, workshops and taverns. In the middle of the square there is the ancient octagonal well of the city. Tourists usually say that San Gimignano is a sort of time machine that bring the people in the middle age.
Piazza del Duomo, Dome square, is close to Piazza della Cisterna and it's the seat of several towers. The dome is in romanesque-style too, and it was builded in 1000 AC. Beside it there is a museum of Holy Art, and next the present palace of the municipality, that was builded in 1298.
From the museum it's possible to visit the highest tower of the town. The landscape is outstanding from the top of the tower.
Few steps far from the Dome there is the Rocca di Montestaffoli, originally it was a castle and then a convent. It host a little tower, a small outpost of the external wall of the town that let people to watch a 360° landscape of all the valley of the Elsa river.
For our usual journeys of the taste, we'd like to underline two typical high-quality products of San Gimignano.
The first one is the white wine called la Vernaccia. It's was the first italian mark guaranteeing the quality of a wine.
La Vernaccia has a fresh dry taste, a golden colour, and a remarkable delicate smell.
The second typical product of San Gimignano is the saffron.
San Gimignano has the right climate conditions to growing the saffron plant and San Gimignano's one is estemeed as a top quality saffron.
